CAPPUCCINO PANNA COTTA WITH CHOCOLATE SAUCE

Panna cotta is essentially milk-flavored Jell-O. My version tastes like a coffee milk shake! YUM! It's super cinchy to make but very impressive and a perfect DO-AHEAD. You can make this one day and serve it the next-it's almost unfair how easy it IS for the wow factor you get. Dress it up with a little chocolate Sauce, and voila, it's fancy!

2 tablespoons light corn syrup
FOR THE PANNA COTTA:
4 sheets of gelatin*
3 cups heavy cream
¾ cup sugar
2 tablespoons instant espresso powder
½ vanilla bean
½ cup chocolate-covered espresso beans, for garnish
FOR THE CHOCOLATE SAUCE:
4 ounces semisweet chocolate chips
¼ cup heavy cream
2 tablespoons unsalted butter

Steps:

  • FOR THE PANNA COTTA
  • 1.In a small bowl of cool water, submerge the gelatin sheets to soften. They will go from stiff to soft, kind of like the texture of a giant contact lens. Feel one-it's SO cool!
  • 2.In a small saucepan, combine the cream, sugar, and espresso powder. Split the vanilla bean lengthwise down one side, open it up, and scrape out the seeds with a paring knife. Add the seeds and the hull to the pan. Whisk to combine everything.
  • 3.Bring the cream mixture to a boil and then immediately turn off the heat. Remove the softened gelatin sheets from the water and squeeze out the excess water. Add the gelatin sheets to the pan and whisk to combine.
  • 4.Immediately ladle the cream mixture into four 6-ounce ramekins and refrigerate for 2 to 3 hours or
  • overnight.
  • FOR THE CHOCOLATE SAUCE
  • 1.Fill a small saucepan with 1 inch of water and bring it to a boil (BTB).
  • 2.In a medium heatproof bowl, combine the chocolate chips, heavy cream, butter and corn syrup. place the bowl on top of the pan of water (this is a double-boiler setup). Reduce the heat to a simmer. Stir until the chocolate has melted and all the ingredients are combined. Remove and use immediately or store in a warm place until ready to use.
  • TO UNMOLD THE PANNA COTTA
  • 1.Fill a small saucepan with 1 inch of water and bring to a boil, then turn off the heat. Run a paring knife around the outside edge of the panna cotta to loosen it. Set each ramekin in the saucepan for 10 seconds. Place a small serving plate on top of each ramekin and flip it over to unmold the panna cotta. If it doesn't release, put the ramekin in the water for a few seconds more and try again.
  • 2.To serve, ladle a couple tablespoons of the chocolate sauce around the panna cotta and sprinkle with a few chocolate-covered espresso beans.

2 1/2 teaspoons unflavored gelatin
3 cups heavy cream
1 1/2 cups sugar
1/2 teaspoon pure vanilla extract
3 tablespoons bourbon
15 ripe figs, cut in half lengthwise, stems removed

Steps:

  • Fill a large bowl with ice and water, and set aside.
  • Place 3 tablespoons water in a small bowl. Sprinkle gelatin over water, and let soften for 10 minutes.
  • Place heavy cream and 1/2 cup sugar in a medium saucepan over medium heat. Bring to a simmer. Add gelatin mixture, and stir until gelatin and sugar are completely dissolved, 1 to 2 minutes. Transfer to 1-quart measuring cup.
  • Place measuring cup in the ice bath, and whisk cream mixture until cool, 6 to 7 minutes. Add vanilla extract. Pour mixture into six 6-ounce ramekins or glasses. Chill until set, about 1 hour and 50 minutes.
  • While contents of the ramekins set, make the caramel: Spread remaining cup sugar evenly in the bottom of a heavy skillet, and place over medium-high heat. Let sugar melt without stirring, until the bottom layer is completely melted and the edges begin to brown, 2 to 3 minutes. Tilt and swirl the pan to distribute the sugar evenly. Stir with a wooden spoon until all sugar is melted and dark amber. Stir in 1/2 cup warm water and bourbon. Stir until combined, and remove from heat to cool to room temperature.
  • To unmold panna cotta, dip ramekins in warm water. Run a paring knife around edges of panna cotta to break seal, and invert each ramekin onto a dessert plate. Dessert will slowly slide out. Garnish with figs and caramel. Serve. You can keep panna cotta, covered in plastic wrap, in the refrigerator for up to three days. It should be eaten quite cold; remove it from the refrigerator just before serving. At times of the year when figs are out of season, drizzle the custard with chocolate sauce, or top it with fresh berries.

The classic Italian panna cotta - cooked cream - is a pure white custard set with gelatin instead of eggs or starch. It can be prepared up to 2 days in advance, in individual ramekins or a larger mold. In season, it is lovely served with a compote of figs and berries. At other times of year, use other fruits or a simple fruit coulis. Alternatively, a caramel sauce or a bittersweet chocolate sauce drizzled over the panna cotta can be quite nice. Wait until just before serving to unmold.

2 cups/475 milliliters half-and-half
1/4 cup/50 grams granulated sugar
2 wide strips lemon peel (from 1 lemon)
1/4 teaspoon fine sea salt
1/4 teaspoon almond extract
2 1/4 teaspoons powdered gelatin (1 package)
1 cup/145 grams blueberries
1 cup/140 grams blackberries
1/2 cup/60 grams raspberries
12 ripe figs, halved
1/4 cup/50 grams granulated sugar
1/4 cup/60 milliliters kirsch or Calvados, or use water

Steps:

  • In a small saucepan, heat the half-and-half over medium-low until it just begins to simmer. Turn off heat. Add sugar, stir to dissolve, then add lemon peel, salt and almond extract, and let steep while you prepare the rest of the recipe.
  • Meanwhile, put gelatin in a small bowl and add 3 tablespoons cold water. Let dissolve, mashing with a spoon to prevent lumps, about 5 minutes. Add to the half-and-half mixture, and whisk well to incorporate.
  • Using a fine-meshed sieve, strain into a measuring cup with a spout. Pour mixture into 4 (4-ounce) ramekins, tea cups or wine glasses. Cover with plastic wrap and refrigerate until firm, about 2 hours. (It is a good idea to make the panna cotta several hours ahead or up to 2 days in advance.)
  • Heat oven to 400 degrees. Make the compote: In a small, wide skillet, a gratin dish, or a pie pan, arrange the berries, then the figs cut-side-up. Sprinkle with the granulated sugar and the kirsch or Calvados. Roast, uncovered until juicy, with most of the liquid evaporated, about 40 minutes. Let cool to room temperature.
  • To serve panna cotta, run a knife around edge of the ramekins, then invert them over a soup plate or dessert dish. Shake gently to unmold. Surround panna cotta with fruit and roasting juices. (Alternatively, serve in the ramekin or wine glass with fruit on top.)

4 ounces heavy cream
10 ounces milk
1/2 cup sugar
1 vanilla bean, split in half lengthwise, scrape inside
2/3 cup fresh ricotta, recipe follows
2 1/2 gelatin leaves or 1 1/4 teaspoons gelatin powder, bloomed in a bowl of tap water
1/2 cup heavy cream, whipped
2 tablespoons minced Sweet Preserved Lemons, recipe follows
1 pound assorted fresh berries
2 cups Fresh Raspberry Puree, recipe follows
6 cups whole milk
6 ounces yogurt
6 ounces heavy cream
Pinch of salt
10 lemons, preferably Meyers, halved crosswise, juice and pith removed
Water, for blanching
1 pound sugar
2 baskets raspberries
1/2 cup sugar
Lemon juice, to taste

Steps:

  • In a saucepan, combine the heavy cream, milk, sugar, and vanilla bean. Bring to a boil. Turn off heat and whisk in ricotta. Strain into a bowl over ice.
  • Drain the gelatin and slowly whisk into the cooling mixture. Allow to cool to room temperature. Slowly fold in the whipped cream. Lastly, fold in the minced Sweet Preserved Lemons.
  • Arrange 1/4 cup of mixed berries in the bottom of a chilled martini glass. Repeat the process to 7 more glasses. Divide the cream evenly among the 8 glasses. Smooth the top and allow to chill at least 1 hour.
  • Pour about 2 ounces of the Fresh Raspberry Puree or enough to cover the surface of the panna cotta. Chill at least 1 hour to allow to set completely. Serve chilled.
  • In a pot, whisk together all above ingredients. Over medium heat, slowly bring the mixture to a boil. Once the mixture comes to a boil, turn off heat, stir once and allow to set for 2 minutes.
  • Line a colander with a double thickness of cheesecloth. Slowly pour the mixture into it and let it drain for about 15 minutes, or until the cheese is thick. Transfer fresh ricotta into a non-reactive container. Keep refrigerated until needed.
  • Yield: 1 1/2 cups
  • Bring a pot of water to a boil. Blanch the cleaned lemon halves for 1 minute. Drain. Repeat the process 2 more times, making sure that you use fresh water each time. After the final blanching, drain the peels.
  • In a saucepan, bring sugar and water to a boil and cook for 5 minutes. Add the blanched peels and cook for 5 minutes. Turn off heat and transfer to a covered container. Allow to cool in the refrigerator. This will keep for months in the refrigerator. Use as needed.
  • Yield: 2 pounds
  • Combine all the ingredients in a saucepan. Bring to a boil, and reduce until thickened. Strain. Use as needed.
  • Yield: 2 cups

CHOCOLATE HAZELNUT PANNA COTTA

4 sheets gelatin
1 quart heavy cream
1 (13-ounce) jar chocolate hazelnut spread (recommended: Nutella)
Chopped roasted hazelnuts, for garnish
Grated semisweet chocolate, for garnish

Steps:

  • Put the gelatin sheets into a bowl of cold water and let them soak while you heat the cream.
  • Combine the heavy cream and chocolate hazelnut spread in a medium saucepan and put it over medium-high heat. Bring it to a boil and then remove it from the heat. Squeeze the excess water out of the gelatin and add it to the warm cream. Stir well to make sure the gelatin is dissolved. Pour the mixture into small bowls and refrigerate, covered, overnight or at least 4 hours.
  • When you are ready to serve, garnish with the chopped hazelnuts and grated chocolate. Sweet!

VANILLA-ALMOND PANNA COTTA

1 cup almond milk, divided
1 (1/4-ounce) package unflavored gelatin
1 1/2 cups heavy cream
1/2 cup sugar
1/2 teaspoon plus 1/4 teaspoon almond extract
1 teaspoon vanilla extract
1/4 cup chocolate fudge syrup, for garnish

Steps:

  • Pour 1/3 cup almond milk into a small bowl and stir in gelatin; set aside.
  • In a medium saucepan, stir together heavy cream, remaining almond milk, and sugar. Bring to boil over medium heat, watching carefully as the cream will quickly rise to the top of the pan.
  • Pour gelatin and almond milk into cream mixture and stir until gelatin is completely dissolved. Add 1/2 teaspoon almond extract and vanilla extract and cook for 1 minute, stirring constantly. Remove from heat and pour into 6 (4-ounce) individual ramekins.
  • Leave ramekins uncovered at room temperature to cool. When cool, cover with plastic wrap and refrigerate for at least 4 hours (can be left overnight.)
  • To remove, run a knife around the sides of each ramekin and invert over a serving plate.
  • In a small bowl, combine 1/4 cup chocolate fudge syrup with 1/4 teaspoon almond extract. Drizzle over the top of the panna cottas to decorate top, as desired.

PROSCIUTTO ROASTED FIGS

4 ounces Manchego or blue cheese
20 slices prosciutto, halved lengthwise
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Make a small slit in the side of each fig and stuff a raisin-size piece of cheese in the opening.
  • Wrap a piece of prosciutto around each to enclose like a little cocoon. Stand the figs on a sheet pan. Bake for 12 to 15 minutes so the prosciutto melts slightly and forms a skin around the figs. Season with lots of ground black pepper. These are terrific hot or at room temperature

  • In a small saucepan combine the cream and 1 cup sugar. Slit the vanilla bean lengthwise and scrape the seeds. Add the seeds and the hull of the vanilla bean to the saucepan. Whisk to combine. Bring the mixture to a boil and turn off immediately. Remove the softened gelatin sheets from the cool water and whisk into the hot cream mixture. Remove and discard the vanilla bean. Pour immediately into serving dishes and refrigerate for 2 to 3 hours or overnight.
  • Preheat the oven to 350 degrees F. Toss the figs together with the remaining sugar and balsamic. Let macerate for about 15 minutes. Roast in the preheated oven for 15 minutes or until the figs are soft and the sugar and balsamic have started to caramelize on the figs.
  • Top the panna cotta with the roasted figs.

1 tablespoon balsamic vinegar
1/2 teaspoon citric acid (sold in health food stores).

Steps:

  • Stir together all the ingredients in a heavy-bottomed pot and bring to a simmer over medium heat (it will immediately thicken and then thin out).
  • Divide mixture among 10 four-ounce ramekins. Cool, then cover tightly with plastic wrap and chill for at least 1 hour or until ready to serve, up to 3 days.
