BACON CHEDDAR BISQUICK® PANCAKE BITES
Serve these super-easy-to-make bite-sized bacon cheddar pancake bites with syrup or a dusting of powdered sugar.

- Heat oven to 350°F. Lightly spray 16 to 18 mini muffin cups with cooking spray.
- In large bowl, stir together Bisquick® mix, milk, maple syrup and egg. Add bacon and cheese; stir just until combined. A few lumps may remain.
- Pour batter evenly into mini muffin cups, filling nearly to the top of each cup.
- Bake 10 to 15 minutes or until tops are light golden brown and spring back when lightly touched. Cool in pan 5 minutes. Remove from muffin cups to serving plates.

- Whisk the pancake mix, egg, milk and cinnamon together in a medium bowl until just combined (some small lumps are okay). Use a rubber spatula to fold in the banana and chocolate chips until evenly dispersed.
- Divide the batter evenly among the egg bite mold cups (each cup will be about 3/4 full; a small spoon works best). Cover tightly with aluminum foil, then place on the rack.
- Add 1 1/2 cups water to the Instant Pot, then carefully lower the rack using the handles into the pot. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure-cook on high for 7 minutes (see Cook's Note).
- After the pressure-cook cycle is complete, let the pressure release naturally for 3 minutes, then follow the manufacturer's guide for quick release of the remaining pressure. Being careful of any remaining steam, unlock and remove the lid. Carefully remove the tray and let stand 5 minutes before popping the pancake bites out of the mold. Run a small offset spatula around the edge of the mold if there is any sticking. Serve with maple syrup for dipping.

BLUEBERRY PANCAKE BITES
Steps:
- Preheat the oven to 375 degrees F. Spray a doughnut hole pan liberally with nonstick spray.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. In a second bowl, whisk the butter, vanilla and egg until smooth; then whisk in the 1/2 cup milk and the lemon zest until combined. Add the wet ingredients to the dry, and mix until a batter just comes together. Cover and let sit at room temperature for 15 minutes.
- Fill the molds of the prepared doughnut hole pan two-thirds of the way with batter, then press a few blueberries into each. Bake until lightly golden brown, about 10 minutes. Flip and bake another 3 to 4 minutes.
- Mix together 1/2 cup of the confectioners' sugar and the remaining 1 to 2 teaspoons milk to make a glaze. Toss some of the pancake bites in the remaining confectioners' sugar.
- Serve drizzled with the glaze, or serve with warm maple syrup for dipping.

- 1. Cook sausage til done in frying pan, breaking up into small pieces as you go. Remove with slotted spoon to a papertowel-lined plate. Make batter. Batter: In medium bowl, whisk egg til frothy. Whisk in milk, vanilla and oil. In small bowl, whisk well the dry ingredients to mix. Dump the dry ingredients into the wet ingredients and stir all til just moistened but still a little lumpy.
