Number Of Ingredients 7

2 2/3 cups flour
1/4 cup sugar
2 tablespoons baking powder
1 teaspoon salt
2 eggs
2 1/2 cups milk
1/3 cup vegetable oil or 1/3 cup canola oil

Steps:

  • Combine flour, sugar, baking powder and salt.
  • In another bowl combine eggs, milk and oil, whisk.
  • Stir wet ingredients into dry, just until mixed, batter will be slightly lumpy.
  • You can also added spices if you would like, I have used cinnamon and it was wonderful, or try pumpkin or apple pie spice for a real treat!
  • The secret to these pancakes is to preheat your pan on a medium to low setting, this allows them to cook slower and rise higher.
  • Pour 1/2 cup of batter at a time and flip when bubbles appear across top of pancake.
  • Cook on other side until golden brown.
  • Top with favorite toppings and enjoy!

Pancake Batter Fried Chicken Recipe by Tasty image

Categories     Dinner

Time 30m

Yield 4 servings

Number Of Ingredients 15

1 ½ lb chicken breast, cut into 2-inch (5 cm) pieces
2 teaspoons kosher salt, divided
1 teaspoon freshly ground black pepper, divided
2 cups dry pancake mix
⅛ teaspoon cayenne
1 teaspoon paprika
1 teaspoon garlic powder
1 cup buttermilk
½ cup water
4 cups vegetable oil, for frying
1 cup dijon mustard
¾ cup maple syrup
2 tablespoons vegetable oil
½ teaspoon kosher salt
½ teaspoon black pepper

Steps:

  • In a medium bowl, season the chicken with 1 teaspoon of salt and ½ teaspoon of black pepper. Set aside while you make the batter.
  • In a large bowl, whisk together the pancake mix, remaining teaspoon of salt, remaining ½ teaspoon pepper, the cayenne, paprika, and garlic powder. Add the buttermilk and ⅓ of the water and whisk to incorporate. Add the remaining water, ⅓ at a time, and whisk until no lumps remain.
  • Add the chicken to the batter and toss to coat completely.
  • Heat the vegetable oil in a large, heavy-bottomed pot over medium-high heat until it reaches 350°F (180°C). Set a wire rack inside a baking sheet and place nearby.
  • Working 4-5 pieces at a time, fry the battered chicken in the hot oil for 2-3 minutes, or until golden brown and the internal temperature reaches 165°F (75°C). Remove from the oil and let drain on the wire rack while you repeat with the remaining chicken.
  • Make the dipping sauce: In a small bowl, whisk together the Dijon, pancake syrup, vegetable oil, salt, and pepper until well combined.
  • Serve the chicken bites warm with the sauce alongside for dipping.
  • Enjoy!

BEST EVER PANCAKE/WAFFLE BATTER

Best Ever Pancake/Waffle Batter image

This recipe is from my aunt and it is truly the best pancake/waffle batter that I've had. If using salted butter, cut the salt. For other variations, add grated apple with cinnamon, a mashed banana, blueberries, pecans or walnuts, chocolate chips, pumpkin, or whatever your imagination comes up with. May use flavored yogurt in place of plain yogurt.

GREAT-GRANDMOTHER'S PANCAKE/WAFFLE BATTER

Great-Grandmother's Pancake/Waffle Batter image

Handed down in my family for generations. It's meant to be refrigerated overnight. However, if you must have your pancakes *now*, measure the baking powder in slightly rounded teaspoons instead of leveled off. Let the batter sit on the counter at room temp until it starts bubbling, to be sure that the necessary chemical reaction is taking place. It's very easy to 'draw' simple shapes as you pour the batter. Children adore hearts, stars, their initials, etc. Addendum 4/21/09: I will tell you quite honestly that I've been rather shocked by the recent spate of negative reviews. Frankly, I'm lost. All I can figure out is that those who hated them must have been eating them plain. And in that case, I can understand why they disliked them. These pancakes are meant to be smothered in butter and saturated with syrup. Should you choose to eat them 'naked', all bets are off. :)

Time 10m

Yield 3-4 serving(s)

Number Of Ingredients 6

1 cup all-purpose flour
1 teaspoon salt
3 teaspoons baking powder
1 cup milk
1 egg
2 tablespoons vegetable oil

Steps:

  • Mix dry ingredients well.
  • Add wet ingredients one at a time, in order listed, stirring well after each addition.
  • Mixture will probably still be a little lumpy-- as long as flour is fully incorporated, this is not a problem.
  • Cover batter and refrigerate overnight.
  • Preheat ungreased electric skillet or griddle to 400 degrees.
  • Spoon pancake batter into skillet.
  • (We like them'silver dollar' size-- about 2 tablespoons of batter).
  • Cook until bubbles on the top disappear and bottom is nicely-browned and can be lifted easily with a spatula (approximately 3 minutes).
  • Flip, and cook on other side until done.
  • The batter is also wonderful for waffles-- just follow manufacturer's instructions regarding the setting to use, the volume your waffle iron will hold, etc.
  • Serve hot, with butter and syrup (or sugar, or powdered sugar, or molasses, or sorghum, or fruit or whatever turns your tastebuds on).

OAT PANCAKE/ WAFFLE BATTER

Oat Pancake/ Waffle Batter image

This is a variation from a Bob's Red Mill recipe. Very hearty and healthy. I like serving these with berry sauce instead of maple syrup. My small children (under 3 years) also enjoy eating the pancakes cold as a snack.

SOURDOUGH PANCAKE OR WAFFLE BATTER

Sourdough Pancake or Waffle Batter image

If you have a sourdough starter, you will need to feed it to keep it alive. Many recipes call for doing so after discarding a cup or so of the starter you have, so as to maintain its equilibrium and prevent it from growing too large. This recipe takes advantage of that excess starter, using it as the base of a pancake or waffle batter that ferments overnight and yields a remarkably flavorful breakfast the next day, with minimal effort.

Provided by Sam Sifton

Categories     breakfast, pancakes, main course

Time 15m

Yield 4 servings

Number Of Ingredients 9

1 cup/240 grams sourdough starter "unfed"
1 cup/224 grams buttermilk
1 cup/120 grams all-purpose flour
1 tablespoon/about 13 grams light brown sugar
1 large egg
1/4 cup melted unsalted butter or neutral oil
1/2 teaspoon vanilla extract
1/2 teaspoon/3 grams kosher salt
1 teaspoon/6 grams baking soda

Steps:

  • Put the sourdough starter in a large bowl and add the buttermilk, flour and sugar, then stir to combine. Cover the bowl and allow it to rest overnight at room temperature.
  • When you are ready to cook, whisk the egg, melted butter or oil and the vanilla extract together in a small bowl, then add the rested sponge. Add the salt and the baking soda to the batter and mix to combine.
  • Pour some of the batter onto a preheated greased waffle iron and cook until the waffle is brown and crisp, then repeat. Or use a small ladle to create pancakes on a preheated oiled pan or griddle, flipping them when they are well browned on the bottom. Serve immediately.

ENGLISH PANCAKE BATTER

English Pancake Batter image

English pancakes are thinner than American style ones, in fact I think they are almost crepes. The traditional topping in the UK is fresh lemon juice and sugar or jam but you can also fill them with something savoury.

Provided by Sackville

Categories     Breakfast

Time 40m

Yield 8 large pancakes

Number Of Ingredients 7

50 g butter
180 g flour
2 eggs
275 ml milk
150 ml water
salt
oil, for greasing

Steps:

  • Melt a knob of butter in a pan, then leave to cool down.
  • Meanwhile, place the flour in a bowl.
  • Break the eggs into the bowl and pour in the milk.
  • Mix until it turns into a smooth batter.
  • Stir in the now cooled melted butter and leave to stand for about half an hour.
  • This lets the starch expand and makes the finished pancake lighter.
  • When you're ready to cook the pancakes, melt a little more of the butter along with a bit of oil in a frying pan.
  • A non-stick pan is the best.
  • When it is quite hot pour 1/4 cup batter into the pan.
  • Swirl it until it covers the pan and you have a thin, even layer that should set almost immediately.
  • After about a minute it should be ready to flip.
  • Cook for 30 seconds on the other side and then tip onto a plate.
  • Repeat until you have used up all the batter.

BASIC PANCAKE BATTER

Basic Pancake Batter image

Provided by Food Network

Time 25m

Yield 3 to 4 servings

Number Of Ingredients 8

1 1/2 cups flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1 egg
About 1 cup milk
3 tablespoons butter, melted and cooled, plus extra for cooking
Softened butter, for serving
Maple syrup, room temperature, for serving

Steps:

  • Heat a griddle or skillet until hot. Sift together flour, salt and baking powder. Whisk together egg, milk and butter. Add egg mixture to the flour and stir just to moisten -- the batter will be lumpy, do not overmix. If too dry, add a few more spoonfuls of milk. Lower heat to medium-high and lightly brush griddle with butter. Spoon in the batter, by 1/4 cupfuls, spreading to 4-inch rounds. Cook until edges are dry and little bubbles appear on the surface, about 2 minutes. Flip pancakes and cook second side just until lightly browned. Transfer pancakes as they are made to warm plates and serve immediately, with butter and syrup.;
