1 pound potatoes, skins on and diced into 1/2-inch cubes
2 tablespoons olive oil
2 teaspoons minced garlic
Handful of rosemary sprigs, leaves removed and left whole, approx. 2 tablespoons
1/8 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • Blanch the potatoes. Heat the oil in a large skillet, add potatoes and salt and stir over medium heat. Cook uncovered for about 20 minutes, stirring occasionally, until potatoes are browned. Turn heat to medium-high and add garlic, rosemary, and pepper. Brown for about 3 minutes and serve hot.

16 baby red spuds (@ 1 1/2 lb), cut into 1/2" pieces.
2 T olive oil
1/4 t salt
pinch black pepper
4 garlic cloves, minced
1 T fresh Rosemary, whole leaves

Steps:

  • Blanch spuds in 1 qt water for 3 mins. Drain and run under cold water few seconds, then let dry. Heat oil in 12" skillet over med heat. Add spuds and salt and stir well Cook uncovered 30 mins, stirring occasionally to brown evenly. Turn heat up to med-high. Add garlic, rosemary and pepper and cook 3 mins, stirring constantly. Serves 4.
