How to make Mexican-style popsicles, a.k.a. paletas! This fresh fruit paletas recipe comes in 4 delicious flavors and requires just a handful of simple ingredients.

Number Of Ingredients 7

6 cups roughly chopped strawberries (fresh or frozen and thawed)
6 cups roughly chopped mango (fresh or frozen and thawed)
6 cups pineapple chunks (fresh, canned, or frozen and thawed)
6 cups roughly chopped kiwi (about 12 kiwis)
¼ cup sugar or honey
¼ cup fresh lime juice
Water as needed

Steps:

  • Blend: Choose the fruit you want to use, then divide it in half. Finely chop half of the fruit and set it aside. Put the remaining fruit in a blender, along with the sugar and lime juice. Blender until smooth, adding a splash of water as needed to get things moving.
  • Mold: Stir chopped fruit into blended mixture. Pour into molds, leaving a little space at the top for them to expand. Firmly tap the mold on the counter to remove any air bubbles. Insert sticks and freeze until hard (at least 4 hours).
  • Serve: Run the mold under warm water for a few seconds to loosen them up, then remove from the mold.

Number Of Ingredients 6

1 (14-ounce) can sweetened condensed milk
1 cup half-and-half
3/4 cup freshly squeezed lime juice (about 4 large limes)
2 teaspoons lime zest
Pinch of salt
3 cups coarsely crushed Maria cookies, or graham crackers

Steps:

  • Put the sweetened condensed milk, half-and-half, lime juice, lime zest, and salt in a bowl and whisk until thoroughly combined.
  • If using conventional molds, divide the mixture among the molds, snap on the lid, and freeze until solid, about 5 hours. If using glasses or other unconventional molds, freeze until the pops are beginning to set (1 1/2 to 2 hours), then insert the sticks and freeze until solid, 4 to 5 hours. If using an instant ice pop maker, follow the manufacturer's instructions.
  • Spread the graham cracker pieces on a large plate. Unmold the paletas and press each side into the graham crackers, coating completely.

Mexicans can never have enough limes. We put them in everything, so it's no surprise that this flavor of paleta is one of the top three sellers everywhere. For this recipe, try to use the smaller limes, similar to Key limes, as they're a little more tart. That said, these ice pops will be delicious with any lime juice as long as it's freshly squeezed.

Yield makes 8 to 10

Number Of Ingredients 4

2 cups water
2/3 cup sugar
3 (1-inch) strips of lime zest
3/4 cup freshly squeezed lime juice (about 10 small limes)

Steps:

  • Combine the water, sugar, and lime zest in a small nonreactive saucepan. Cook, stirring, over medium heat until the mixture comes to a boil and the sugar has dissolved. Let cool to room temperature. Strain through a fine-mesh sieve, then stir in the lime juice.
  • If using conventional molds, divide the mixture among the molds, snap on the lid, and freeze until solid, about 5 hours. If using glasses or other unconventional molds, freeze until the pops are beginning to set (1 1/2 to 2 hours), then insert the sticks and freeze until solid, 4 to 5 hours. 2 large cucumbers, peeled and chopped (reserve about a 1/4 cup)
1/4 cup lime juice
1/4-1/2 jalapeno, finely chopped seeds removed (wear rubber gloves to protect your hands, and wash well afterward)
4 tablespoons sugar
1/4 teaspoon salt
zest of two lime

Steps:

  • In a blender, add the cucumbers, lime juice, jalapeño, sugar and salt. Blend until smooth. Mix in reserved chopped cucumbers and lime zest. Pour into molds and freeze.
