1 lb sausage
1 Tablespoon extra virgin olive oil
1 medium onion, chopped
1 bell pepper, chopped ((I used 1/2 red & 1/2 green bell pepper))
2 medium sweet potatoes, chopped in 1" cubes
8 eggs, beaten
3/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon oregano
1/2 avocado, sliced ((optional))
fresh chopped parsley ((optional))

Steps:

  • Preheat oven to 350 F.
  • In a cast iron skillet, cook sausage over medium-high heat, stirring occasionally, until browned and crumbly, about 5 minutes. Transfer to a plate.
  • Heat 1 Tbsp olive oil over medium-high heat, and cook onion and bell peppers until soft. Add chopped sweet potatoes; season with salt, black pepper, oregano. Cover and cook, stirring occasionally, until tender, about 8 minutes.
  • Add cooked sausage, eggs, and stir everything. Cook until bottom is set, about 2 minutes.
  • Bake in a preheated oven for about 5 - 7 minutes, just until set. Garnish with chopped parsley and sliced avocado, if desired.

This oven baked frittata recipe is so easy to make! Made with sweet potatoes, breakfast sausage, spinach and plenty of eggs this is the perfect healthy breakfast skillet for you and your family. Whole30 and Paleo too!

1 tablespoon avocado oil or ghee
3 garlic cloves, minced
1/2 large yellow onion, diced
1 pound grass-fed breakfast sausage
1 medium sweet potato, diced into 1/2″ cubes
12 eggs
1/4 cup coconut milk
1 teaspoon salt
1/2 teaspoon black pepper
2 oz spinach, roughly 2 handfuls
Parsley, to garnish

Steps:

  • Preheat oven to 350 degrees Fahrenheit. In a cast iron skillet (I used a 10 inch), cook breakfast sausage over medium-high heat, breaking up chunks with a spatula, until no longer pink. Once cooked, transfer to a plate.
  • Add oil to the same skillet and sauté garlic and onion for 2-3 minutes. Add sweet potatoes and cook on medium heat for 5 minutes, stirring frequently, until slightly golden brown. Add spinach and stir until wilted.
  • While sweet potatoes are cooking, whisk together coconut milk and eggs in a medium-large sized bowl.
  • Add breakfast sausage back to the cast iron skillet and stir in to sweet potato mixture. Pour whisked egg mixture evenly over sausage and sweet potatoes in cast iron. Press down sausage and sweet potato mixture into the eggs so that the mixture is completely covered.
  • Bake for 25 to 30 minutes until egg is golden brown and cooked thoroughly. The center of the frittata will no longer jiggle when fully cooked. Remove the skillet from the oven and place it on a rack to cool. Slice the frittata with a knife, garnish with parsley, and serve.

1 pound sausage (we used anduille)
1 medium sweet potato, peeled and grated
10 eggs
1/2 bag baby spinach
3 tablespoons coconut oil
Pepper to taste

Steps:

  • 1. In a large oven proof skillet, heat the coconut oil over medium heat. 2. Crumble in the sausage (remove from casing if necessary) and brown. 3. Add the shredded sweet potato and cook until the potatoes are tender. 4. Evenly spread the sausage mixture over the bottom of the pan. Whisk together the eggs, and pour evenly over the meat, sweet potato. Sprinkle all over with black pepper. 6. Cook for about 3 minutes or until bubbly and you can see that the edges of the frittata are almost done. 7. Transfer to the oven and cook under the broiler on low until the frittata is cooked all the way through.
