Something truly magical happens while these mash-up brownies bake. The marshmallow fluff puffs up and toasts, creating a swirled effect with the brownie topping. We highly recommend turning on the oven light to watch the action!

3/4 stick (6 tablespoons) unsalted butter
1/2 cup packed light brown sugar
Kosher salt
1 large egg, beaten
1 1/4 cups all-purpose flour
1 cup fine graham cracker crumbs (about 6 whole graham crackers pulsed in a food processor)
1 stick (8 tablespoons) unsalted butter, cut into small pieces
6 ounces bittersweet chocolate, chopped into large chunks
1/2 cup packed light brown sugar
Kosher salt
2 large eggs, beaten
3/4 cup all-purpose flour
3 cups marshmallow creme, such as Fluff

Steps:

  • For the graham cracker brownie and marshmallow layer: Adjust an oven rack to the middle position and preheat to 350 degrees F. Line a 9-inch square baking pan with enough foil to create a 2-inch overhang on two sides. Set aside.
  • Melt the butter in a large saucepan over medium heat until light brown specks start to form and the butter starts to smell nutty, swirling the pan occasionally, about 10 minutes. Pour immediately into a large mixing bowl, being sure to scrape the brown bits from the bottom, and cool slightly, about 5 minutes. Add the brown sugar and 1 teaspoon salt and stir with a spatula or wooden spoon until smooth. Stir in the egg until incorporated.
  • Stir in the flour and graham cracker crumbs until just combined. Use your hands to mix the dough until well combined. Pat the dough evenly into the bottom of the prepared pan. Spread the marshmallow creme on top, using a small offset spatula to smooth it to the edge of the pan. Set aside.
  • For the chocolate brownie layer: Place the butter and 4 ounces of the bittersweet chocolate into a heat-safe bowl. Heat in the microwave in 30 second increments until the chocolate is mostly melted, about 1 minute total. Stir until the chocolate is completely melted and smooth. Cool slightly. Stir in the sugar and 1/2 teaspoon salt until well combined. Stir in the eggs. Fold in the flour until just combined. Pour the brownie batter on top of the marshmallow, using a small offset spatula to smooth the batter to the edge of the pan. Sprinkle the remaining chocolate chunks over the top of the batter.
  • Bake until the marshmallow is lightly golden brown and a cake tester inserted into the center of the brownie comes out clean (it's okay if marshmallow sticks to the cake tester but there should be no runny chocolate brownie batter), about 30 minutes. (While the brownie is baking, the marshmallow will slowly start to rise to the top of the pan, causing a marshmallow swirl throughout the brownie.)
  • Cool completely in the pan. Once the brownies are cool, gently separate from the side of the pan using a small offset spatula or paring knife. Use the foil to carefully lift the brownies from the pan onto a cutting board. Discard the foil and cut the brownies into 16 squares.

1 (20 ounce) package fudge brownie mix (one that says bake in 13x9 pan)
2 cups miniature marshmallows
1 cup semi-sweet chocolate chips
1/3-2/3 cup chopped peanuts

  • Place crackers in greased 13x9 baking pan.
  • Prepare brownie mix as instructions say.
  • Spread over crackers.
  • Bake at 350* for 25 minutes.
  • Sprinkle with marshmallows.

1-1/2 cups graham cracker crumbs (about 10 whole crackers)
1/4 cup sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
BROWNIES:
1 ounce unsweetened baking chocolate
1/2 cup butter, softened
1-1/4 cups sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1/3 cup dark baking cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup miniature marshmallows
TOPPING:
1 cup miniature marshmallows
5 whole graham crackers, broken into bite-sized pieces

Steps:

  • Preheat oven to 350°. Combine cracker crumbs, sugar and cinnamon. Stir in melted butter. Press onto bottom of an ungreased 13x9-in. baking pan. Bake until lightly browned, 7-9 minutes. Cool on a wire rack., For brownies, melt unsweetened chocolate on high in a microwave, stirring every 30 seconds. Cool slightly. Cream butter and sugar on medium speed until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition; beat in melted chocolate and vanilla. In another bowl, whisk together flour, cocoa, baking powder and salt; stir into creamed mixture. Fold in 1 cup miniature marshmallows. , Spread batter over graham cracker crust. Top with 1 cup marshmallows and broken graham crackers. Bake until center is set, 18-22 minutes (do not overbake).
