2 tablespoons olive oil
garlic powder
salt

Steps:

  • Clean asparagus and snap off tough ends, leave whole.
  • Heat skillet and olive oil (use skillet with lid).
  • Add asparagus and cook on medium-low heat (so that asparagus doesn't burn) Turning asparagus occasionally.
  • Add garlic and salt to taste, Cook asparagus to tender crisp.
  • serve.

1 pound fresh sugar snap peas
2 teaspoons canola oil
1 garlic clove, minced
2 teaspoons minced fresh gingerroot
1-1/2 teaspoons balsamic vinegar
1-1/2 teaspoons reduced-sodium soy sauce
1 teaspoon sesame oil
Dash cayenne pepper
1 tablespoon minced fresh basil or 1 teaspoon dried basil
2 teaspoons sesame seeds, toasted

Steps:

  • In a large nonstick skillet or wok, saute the peas in canola oil until crisp-tender. Add the garlic, ginger, vinegar, soy sauce, sesame oil and cayenne; saute 1 minute longer. Add basil; toss to combine. Sprinkle with sesame seeds.

Looking for a new way to prepare asparagus? A friend prepared this for our family, and it is now one of our favorites. It is best with the thin asparagus. This dish is great with baked ham.

4 garlic cloves, minced or pressed
1/2 cup chicken broth
1/4 cup soy sauce
2 teaspoons cornstarch
1/2 teaspoon dark sesame oil
6 cups asparagus spears, snapped in 2-inch segments
2 teaspoons olive oil
2/3 cup green onion, chopped
2 teaspoons sesame seeds, toasted

Steps:

  • Combine garlic, broth, soy sauce, corn starch, and sesame oil in a small bowl. Mix well. Set aside.
  • Saute asparagus and green onion in olive oil for approximately 6-8 minutes, until crisp tender.
  • Stir sauce and add to asparagus and cook approximately 1 minute until sauce thickens.
  • Place in serving bowl and sprinkle with toasted sesame seeds. Recipe does not keep well, so make only enough for one meal.

1 1/2 lbs fresh asparagus, trimmed and cut into 2-inch pieces (about 4 cups)
2 tablespoons butter
1 tablespoon vegetable oil
3 tablespoons chicken broth
1 teaspoon lemon juice
1 teaspoon soy sauce
1/4 teaspoon black pepper
2 tablespoons almonds, slivered and toasted

Steps:

  • In large skillet or wok, stir-fry asparagus in butter and oil for 2 minutes.
  • Stir in the broth, lemon juice, soy sauce and pepper.
  • Cover and cook for 2-3 minutes or until asparagus is tender.
  • Sprinkle with almonds.

1 pound asparagus
3/4-pound sugar snap peas
2 tablespoons good olive oil
Kosher salt
Freshly ground black pepper
Red pepper flakes, optional
Sea salt, for serving

Steps:

  • Cut off the tough ends of the asparagus and slice the stalks diagonally into 2-inch pieces. Snap off the stem ends of the snap peas and pull the string down the length of the vegetable.
  • Warm the olive oil in a large saute pan over a medium heat and add the asparagus and snap peas. Add the salt, pepper, and red pepper flakes, to taste, if desired. Cook for approximately 5 to10 minutes until al dente, tossing occasionally. Sprinkle with sea salt and serve hot.

1 lb lean sirloin steaks, fat trimmed
3 tablespoons dry sherry
2 tablespoons dark sesame oil
1 tablespoon grated fresh gingerroot
1 tablespoon minced garlic
1 teaspoon safflower oil
2 green onions
3/4 lb asparagus
1/2 cup red bell pepper, julienned
2 tablespoons oyster sauce
2 tablespoons arrowroot
1 cup trimmed whole snow peas

Steps:

  • Cut steak into thin strips and place in a large bowl with sherry, sesame oil, gingerroot, and garlic. Marinate 15 minutes.
  • Cut green onions into 1/2-inch pieces, trim asparagus and cut into 1-inch lengths.
  • Heat wok over medium-high heat and add safflower oil.
  • Stir-fry green onions, asparagus, and bell pepper for 2 minutes, then remove to a platter and keep warm in oven.
  • Add steak AND marinade to wok, stir-frying for 3 minutes.
  • In a small bowl combine oyster sauce and arrowroot.
  • Add to steak and cook for 1 minute.
  • Add vegetable mixture and cook for 1 minute, stirring constantly.
  • Toss in snow peas, cover wok, and cook for 1 minute.
  • Serve immediately.
