Steps:

  • Pour over carrot mixture and toss to coat well.

1/2 cup raisins
1/4 cup mayonnaise (not Miracle Whip)
2 tablespoons lemon juice
1/8 teaspoon salt
1/4 cup plain nonfat yogurt
1 tablespoon honey

Steps:

  • Blend together mayonnaise, lemon juice, salt, yogurt and honey.
  • Pour dressing over carrots and raisins and mix thoroughly.
  • Chill for 30 minutes before serving.

2 tablespoons honey
1 tablespoon Dijon mustard
2 lbs carrots, peeled and shredded
1 cup raisins
1 (8 ounce) can crushed pineapple, drained

1/2 c mayonnaise (light is ok)
1 tsp lemon juice

6-8 large carrots
2/3 c raisins
1/2 tsp salt
COOKED DRESSING
1/4 c flour
2 Tbsp sugar
1 tsp salt
1 tsp dry mustard
1 1/2 c milk
2 egg yolks, slightly beaten
1/3 c vinegar
1 Tbsp butter

Steps:

  • 1. Peel and shred carrots. Toss with raisins and salt. Set aside.
  • 2. In a saucepan mix the flour, sugar, salt and dry mustard. Stir milk in gradually, whisking to mix. Bring to a boil and boil 1 minute. Slowly add 1/4 of the liquid into the eggs while stirring to temper the eggs so they don't cook when added to the hot liquid. Now add the egg yolks in a slow steady stream while stirring liquid. Add the vinegar and butter, boil 1 minute. Let cool and add to the carrot and raisin mixture. Chill before serving.

Fast, easy, and very colorful. Still one of my favorites after all these years-an easy recipe that I could help make w/ my Nonnie. Can't get any easier than this-5 ingredients! I normally use red delicious apples but have tried all varieties-especially if they are on sale! Adjust ingredients to your liking-just add enough mayo to make creamy. Also, you can sub dried cranberries for raisins for a change. Cooking time is chill time in the fridge, Hope you enjoy this salad as much as my family and I do!!!
