4 cups granny smith apples, peeled and chopped
2 tsp lemon juice
2 eggs, slightly beaten
2 cups sugar
3 cups all purpose flour (sifted)
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp salt
1 tsp ground cinnamon
3/4 cup vegetable oil
1 cup pecans, chopped
1 tsp pure vanilla

Steps:

  • Preheat oven to 350 degrees F. Spray 9"x12" baking pan with Pam. Peel and chop apples and place in large mixing bowl with lemon juice and stir until well coated. Set aside.
  • In small mixing bowl cream eggs and sugar with mixer. Set aside. In large mixing bowl sift together dry ingredients. Add in egg mixture and mix. Stir in oil and mix well. Fold in apples, nuts and vanilla. Stir to mix well and spoon into baking dish.
  • Bake on center rack of oven for 45 minutes. Remove from oven when toothpick inserted into center of cake comes out clean. Serve when cooled.

1 cup oil
2 cups sugar
3 eggs
1/2 teaspoon vanilla
2 cups flour
1 tablespoon salt
1 teaspoon baking soda
3 cups apples, diced
1 cup pecans, chopped
1 cup butter
1 cup brown sugar
1/2 cup whole milk

Steps:

  • Combine first four ingredients and beat for 2 minutes.
  • Sift together flour, salt, and baking soda. Add to wet mixture.
  • Toss pecans in a bit of flour, then stir apples and pecans into the cake mixture.
  • Pour batter into greased 9 x13 pan and bake at 350 for 45-50 minutes.
  • Remove cake from oven. Mix the butter, brown sugar, milk, and vanilla in a saucepan and boil for 3 minutes to make a caramel sauce.
  • Spread half of the carmel sauce on top of the warm cake. Reserve remaining caramel sauce to serve, reheated, with the cake.
