OVERNIGHT STRAWBERRY-BANANA FRENCH TOAST
I found this scrumptious-looking, healthy recipe on McCormick.com and modified it slightly to fit my dietary needs. I can't wait to try it. Prep time does not include time to soak the bread.

Steps:
- Mix eggs, milk, vanilla extract and baking powder. Pour over bread to soak; turn to coat well. Cover.
- Refrigerate 4 hours or overnight.
- Preheat oven to 450°F.
- Mix frozen strawberries, bananas and sugar in 13x9-inch baking dish.
- Top with soaked bread slices.
- Sprinkle with cinnamon sugar.
- Bake 20 to 25 minutes or until golden brown.
OVERNIGHT BANANA FRENCH TOAST
I found this recipe on a card at Wal-Mart in their produce department. This is fabulous, the flavor and texture is so comforting and there is definately something about banana's and maple syrup. Give it a try, I'm sure you'll be as pleased as I am. I'm actually going to make this for Christmas breakfast this year.

Steps:
- Arrange half of bread cubes in a lightly greased 13x9" pan.
- Sprinkle evenly with cream cheese and bananas; top with remaining bread cubes.
- Whisk together eggs, milk, sugar, butter and maple syrup; pour over bread mixture, pressing bread cubes to absorb egg mixture.
- Cover and chill 8 hours.
- Sprinkle with cinnamon and bake, covered, at 350 for 30 minutes.
- Uncover and bake 30 more minutes or until lightly browned and set.
- Let stand 5 minutes before serving.

I made this recipe many years ago for a morning 65th wedding anniversary celebration. It is quick and easy, not to mention delicious. I serve this when i have overnight guests. The smell when it is baking, has my company running to the kitchen.

- 1. Cut bread into 8 thick slices. Place in an a 9X13 baking dish or any dish to refrigerate overnight. Combine milk,eggs,baking powder and vanilla. Beat until combined. Pour over bread.Continue to turn bread over several times, until all of the liquid has been absorbed.Cover and refrigerate overnight.In the morning, in a bowl, combine bannanas, frozen strawberries, sugar and apple pie spice. Stir until the fruit is coated. Pour into the bottom of a greased 9x13 baking dish and top with the prepared bread. Sprinkle with cinnamon sugar. Bake 20 to 25 minutes at 450 degrees. Place each toast on a dessert plate and top with the fruit mixture. Follow with a dollop of cool whip or ready whip out of a can.
OVERNIGHT ICE CREAM FRENCH TOAST WITH CINNAMON BANANA SYRUP

- Spread melted butter on baking sheet(s) until well coated. Set aside.
- Whisk together ice cream, eggs, and 2 teaspoons cinnamon in large shallow bowl until well combined. Dip bread slices in mixture, allow to soak for a few seconds, then place on baking sheet(s). Cover bread and set in refrigerator overnight.
- Preheat oven to 400 degrees F. Remove French toast from refrigerator (bring to room temperature if using a temperature sensitive baking dish such as glass) and remove cover. Bake at 400 degrees F for about 10-15 minutes per side or until golden brown and slightly crispy.
- Meanwhile, place maple syrup, vanilla, 1 teaspoon cinnamon, and banana in microwave safe bowl. Microwave on high in 1 minute increments, stirring after each, until bananas are soft, about 3-5 minutes. Serve over French Toast.

- Cube or tear bread into 1-2 in chunks. I like to use great harvest bread Apple cinch bread but any French, Italian, etc works. Put them in a sprayed or greased 13x9 in baking dish.
- mash 2 very ripe bananas with 1/4 c brown sugar.
- Whisk in 6 eggs.
- add 3 cups of milk, hazelnut and vanilla extract (double vanilla if you don't have hazelnut) and whisk until combined.
- Pour over the bread and refrigerate 4 hours or overnight.
- mix the remaining 1/2 c brown sugar with the cinnamon and walnuts and sprinkle evenly over the top of the bread in the morning.
- Slice the 1/2 stick of butter very thin and dot the top of the casserole with them.
- bake at 350 for 50-60 minutes, let stand 10 minutes before cutting.
- Serve alone or with maple syrup. This reheats very well!

OVERNIGHT BANANA STRUESEL FRENCH TOAST BAKE

- Spray a 9x13" baking dish with non-stick spray. Layer half of the bread cubes in prepared baking dish. Top with a layer of sliced bananas. Layer evenly with the rest of the bread. Blend the cottage cheese in a blender, food processor, or using a hand mixer. When there is a smooth consistency, blend in the eggs and milk. Mix in the sugar, cinnamon and vanilla extract. Pour the liquid mixture evenly over the top of the bread. Make the streusel topping - To a medium bowl, add the butter, flour, sugars, cinnamon, and using two forks or your clean hands, cut/crumble butter into dry ingredients until small pebbles and crumbly bits form. Sometimes it takes awhile depending how cold the butter is. Using your fingers or a spoon, evenly sprinkle the streusel over the bread. Cover baking dish tightly with plastic wrap or foil and store in the fridge overnight or for several hours. When you are ready to bake, remove dish from oven and uncover. Preheat oven at 350 degrees and bake for 43-52 minutes or until streusel is set and appears to have dried out some. Watch oven time carefully as it may vary. You can try a small bite and if it seems too wet, moist, or under-done for your liking, bake longer. Baking times will range greatly based on type of bread used, baking dish used, climate, and oven variance. Mine was done at 47 minutes. Remove from oven and serve warm with your favorite caramel sauce/syrup or a dusting of confectioner's sugar, chopped pecans, coconut chips or extra banana slices (I cooked the extra banana slices in a pan with some caramel sauce for about 1 minute for extra flavor). NOTES French toast is best fresh, but leftovers will keep airtight in the fridge for up to 2 days and can be reheated gently in the micro before serving.
