2 lbs swiss steak or 2 lbs round steaks
1/2 cup flour
1 teaspoon salt
1/2 tablespoon black pepper
1 medium onion, sliced and separated into rings
2 large carrots, thinly sliced
2 stalks celery, thinly sliced
1 (14 1/2 ounce) can diced tomatoes, undraind
1 (8 ounce) can tomato sauce
8 ounces water
1 dash Worcestershire sauce
hot mashed potatoes

Steps:

  • Heat oil in large skillet.
  • Combine flour, salt and pepper.
  • Cut steak into 4 or 5 servings; dredge in flour mixture.
  • Brown on both sides in hot oil; remove to large baking dish.
  • Place vegetables over steak; pour tomatoes, tomato sauce, water and Worcestershire over all.
  • Cover and bake at 350 degrees for 1 1/2- 2 hours, or until meat is tender.
  • Serve with sauce spooned over the mashed potatoes.

KAREN'S SWISS STEAK (STOVE TOP, CROCK POT OR OVEN)



Karen's Swiss Steak (Stove Top, Crock Pot or Oven) image

This recipe can be prepared on the stove top, or in the oven or crock pot. I decided to post it since it is a bit different than the swiss steak recipes I have seen on here. Just wait until you smell this stuff cooking!

1 1/2 lbs beef round steak, cut 3/4 inch thick
3 tablespoons flour
1 teaspoon salt
1 teaspoon dry mustard
1/4 teaspoon pepper
3 teaspoons garlic powder
2 teaspoons shortening
1 (16 ounce) can tomatoes
1 small onion, sliced
1 stalk celery, sliced
2 medium carrots, sliced
1 tablespoon Worcestershire sauce
1/4 cup red wine
1/4 cup water
hot cooked noodles
mashed potatoes or hot cooked rice

Steps:

  • Cut meat into 6 serving pieces.
  • Combine flour, salt, mustard, pepper, and garlic powder.
  • Put 2 T. of the flour mixture into the meat.
  • Brown the meat in the shortening on both sides.
  • Drain off excess fat.
  • Add undrained tomatoes, onion, celery, carrots, Worcestershire sauce and cooking wine.
  • Cover and simmer for 1 1/4 hours or until meat is tender.
  • Remove meat to a serving platter and keep warm.
  • Combine 1/4 water and the remaining flour mixture.
  • Stir into tomato mixture until thick and bubbly.
  • Pass with meat.
  • Serve meat and sauce with hot cooked noodles or rice.
  • Crock pot directions:.
  • Prepare swiss steak as above except cut meat to fit your crock pot.
  • After browning meat, transfer to crock pot.
  • Stir remaining flour into pan drippings in the skillet.
  • Stir in the remaining ingredients and cook until thick and bubbly.
  • Pour over meat in the crock pot.
  • Cook on low for 8 to 10 hours.
  • Serve with hot cooked noodles or rice.
  • Oven directions:.
  • Place meat in a baking dish.
  • Cover with thickened drippings and veggies as above.
  • Bake, uncovered, in a 350 degree oven for 1 hour and 20 minutes.
  • Serve with hot noodles or rice.

SIMPLE SWISS STEAK IN A DUTCH OVEN

All these years I've thought Swiss steak was from Switzerland! It's not. Swiss is the treatment of the steak. It's the process of rolling or pounding the tough cut to make it tender. I've kept the "Swissing" technique and added my own flavors. It's pretty simple. The hardest part is cutting the veggies. You can't beat a long braise to make meat--cut-with-a-fork tender. Feel free to add your own twist! Serve it over egg noodles and with a crusty loaf of bread.

2 pounds London broil
½ cup all-purpose flour
½ teaspoon seasoned salt
½ teaspoon ground black pepper
2 tablespoons olive oil
salt and ground black pepper to taste
2 (14.5 ounce) cans Italian-style diced tomatoes, undrained
1 cup beef stock
1 cup diced celery
2 small onions, diced
3 medium (blank)s carrots, diced
1 green bell pepper, diced

Steps:

  • Cut London broil into 2-inch cubes and spread out on a cutting board. Combine flour, seasoned salt, and 1/2 teaspoon pepper in a small bowl; sprinkle over meat. Toss to coat.
  • Place a sheet of plastic wrap over the steak and gently, but firmly, pound the steak with a mallet or the back of a soup ladle.
  • Heat oil in a large Dutch oven or pot over medium-high heat. Cook and stir meat until browned, about 10 minutes. Season with salt and pepper. Add diced tomatoes with juice, beef stock, celery, onions, carrots, and bell pepper. Mix well and bring to a boil.
  • Cover and reduce heat to low. Simmer, covered, for 1 hour, stirring occasionally. Crack the lid of the pot about 1/2 inch to let the steam escape. Continue to simmer until beef is tender, about 1 hour more.

2 pounds beef top round steak (3/4 inch thick)
2 cups sliced fresh mushrooms
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup chopped onion
1 to 2 teaspoons dried tarragon
2 tablespoons cornstarch
2 tablespoons water
1 cup heavy whipping cream
Minced fresh parsley, optional

Steps:

  • In a large cast-iron or ovenproof skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Crumble bacon and set aside. , Trim beef; cut into serving-size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. Cover and bake at 325°, until meat is tender, 1-1/4 to 1-3/4 hours, basting twice. , Remove meat to a serving platter; keep warm. Combine cornstarch and water until smooth; add to skillet. 1 1/2 lb beef round steak, 3/4 inch thick
1/4 c all purpose flour
1 tsp salt
2 Tbsp oil
1 can(s) (16 oz.) stewed tomatoes
1/2 c finely chopped onion
1/2 c finely chopped celery
1/2 c finely chopped carrots
1/2 tsp worcestershire sauce

Steps:

  • 1. Trim any excess fat from meat and cut into 6 serving-size pieces. Combine the flour and salt. With a meat mallet or the edge of a heavy plate, pound 2 Tbsp. of the flour mixture into the meat.
  • 2. In a 12-inch skillet, brown the meat on both sides in hot oil. While the meat is browning, chop the vegetables.
  • 3. Transfer the meat to a 2-qt. shallow casserole dish. Drain off excess oil from the skillet. Stir the remaining flour mixture into the pan drippings in skillet. Stir in tomatoes, onion, celery, and carrots and Worcestershire sauce. Cook and stir until thickened and bubbly. Pour over the meat in the baking dish.
  • 4. Bake uncovered in a pre-heated 350-degree oven for 1 hour and 20 minutes, or until meat is tender.
  • 5. Some recommend serving over rice or noodles. I prefer mashed potatoes or my favorite Criss-Cross Potatoes.

1/4 cup vegetable oil
2 tablespoons butter
2 tablespoons oil
1 onion, chopped
1 tablespoon fresh minced garlic (or to taste)
3/4 cup water
3 tablespoons soy sauce
3 tablespoons brown sugar
1 cup sour cream
1/4 cup grated parmesan cheese

Steps:

  • Set oven to 300 degrees.
  • Cut the steaks into serving-size pieces.
  • Lightly dust the beef pieces with flour, then pound with a meat mallet until thin and flattened.
  • In a small cup mix together salt, cayenne, black pepper (if using) paprika and dry mustard powder, then season the flattened beef with the spice mixture.
  • Heat oil and butter in a large oven-proof skillet over medium heat.
  • Add in the steaks and lighty brown/sear on one side, turn over and brown on the other side; transfer to a plate.
  • Add in onions and garlic; saute for about 3 minutes, scraping up any browned bits on the bottom of the skillet with a wooden spoon.
  • In a bowl mix together sour cream, water, soy sauce and brown sugar, then add to the skillet; mix to combine with the onion/garlic mixture.
  • Return the steaks back to the skillet.
  • Sprinkle lightly with Parmesan cheese.
  • Cover the skillet and bake in oven at 325 degrees for about 30-45 minutes, or until tender.

  • 2. Cut steak into small steaks and coat in flour. Brown steaks in a little oil and salt and pepper them.

1 1/2 lbs bnls. beef steaks, your choice...I prefer sirloin
3 tablespoons unbleached flour
1 teaspoon seasoning salt, LAWRY's preferred
1/4 teaspoon black pepper
1/2 teaspoon chili powder
2 -3 tablespoons Crisco shortening, I use the butter flavor
1 (16 ounce) can stewed tomatoes, undrained
1 small onion, thinly sliced
1 stalk celery, sliced (or chopped)
1 large carrot, thinly sliced
1 1/2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 325°.
  • Cut meat into 6 serving-size pieces'.
  • Combine the flour & seasonings.
  • Pound 2 T. of the flour mixture into the meat.
  • Heat the shortening in an 10 in., oven-proof skillet.
  • Brown the meat on both sides.
  • Drain the excess fat from the skillet.

2 lbs. beef, round or sirloin, cut in 3/4 inch thick strips
1/4 cup flour
1 tsp. salt
Oil for browning
2 16 oz. can of diced tomatoes
1/2 cup carrots, chopped or sliced
1/2 cup celery, chopped or sliced
1/2 tsp. Worcestershire sauce

Steps:

  • Cut meat into 6 serving size portions. Combine flour and salt; pound 2 Tbs. of mixture into meat. Brown meat on both sides in oil. Transfer meat to a 12 x 7 1/2 x 2 inch baking dish. Blend remaining 2 Tbs. of flour mixture into pan drippings. Stir in undrained tomatoes, celery, carrots, and Worcestershire. Stir until thickened and bubbly; pour over meat. Bake, covered, at 350 degrees until tender, about 1 hour and 20 minutes.

Get great barbecue flavor without the grill with this clever steak recipe served atop mashed potatoes.

Number Of Ingredients 8

1 (14.5-oz.) can diced tomatoes, undrained
1 (12-oz.) jar beef gravy
1/2 cup barbecue sauce
1 cup Green Giant® Niblets® Frozen Corn
1 medium onion, cut into thin wedges
1 1/2 lb. boneless beef round steak, cut into serving-sized pieces
2 tablespoons chopped fresh parsley
6 cups hot mashed potatoes

Steps:

  • Heat oven to 325°F. In ungreased 13x9-inch (3-quart) glass baking dish, combine tomatoes, gravy and barbecue sauce; blend well. Add corn and onion; mix well. Place beef pieces in mixture; spoon mixture over beef. Cover with foil.
  • Bake covered at 325°F. for 1 hour 30 minutes or until beef is fork-tender. Sprinkle with parsley. To serve, spoon mashed potatoes into individual shallow bowls. Top each with beef and vegetable mixture.

1 1/2 lbs beef round steak, 3/4-inch thick
1/4 cup flour
1 teaspoon salt
1 (16 ounce) can stewed tomatoes
1/2 cup chopped celery
1/2 cup chopped carrot
2 tablespoons chopped onions
1/2 teaspoon Worcestershire sauce
1/4 cup shredded cheddar cheese

Steps:

  • Cut meat into 4 pieces.
  • Mix flour and salt; pound into meat. Set remaining flour aside.
  • Brown meat in hot shortening. Place in shallow baking dish.
  • Blend flour with drippings. Add remaining ingredients except cheese.
  • Cook, stirring constantly until mixture boils. Pour over meat;
  • COVER and bake at 350 degrees for 2 hours.
  • Top with cheese and return to oven until cheese melts.
  • Serve with smashed potatoes and a green salad.
