One 28-ounce bag frozen shoestring fries
1/4 cup pepperoni slices
1/2 cup cooked ground sausage
1/2 cup pizza sauce, plus more for dipping
1/4 cup chopped banana peppers
2 cups grated mozzarella (from a block, not the pre-shredded kind)
1/2 cup grated Parmesan

Steps:

  • Put a medium cast-iron skillet in the oven and preheat the oven to 400 degrees F.
  • Bake the fries in the heated cast-iron skillet, mixing them a few times during the cooking process, until they are crisp, about 20 minutes.
  • Remove the skillet from the oven and top the fries with the pepperoni, sausage, sauce, peppers, mozzarella and Parmesan. You can also do layers of fries and toppings to make a pile of pizza fries. Return the skillet to the oven for 5 to 10 minutes to melt the cheese. Serve immediately with a side of pizza sauce for dipping.

1 (32 ounce) package frozen French fries
cooking spray
1 ½ cups pizza sauce, or to taste
1 teaspoon oregano
1 (12 ounce) package shredded mozzarella cheese
1 (8 ounce) package sliced pepperoni
1 teaspoon dried parsley flakes

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread fries onto a baking sheet and coat with cooking spray.
  • Bake in the preheated oven until crispy, 35 to 40 minutes.
  • Mix pizza sauce and oregano together in a bowl; pour over fries. Sprinkle mozzarella cheese over sauce mixture and top with pepperoni slices. Sprinkle parsley over sauce and pepperoni.
  • Turn the oven to broil.
  • Broil fries until cheese is browned and bubbling, 2 to 4 minutes.

I made this up with two of my daughter's favorite foods in mind: french fries and pizza. She took one bite and said "These are good! They taste like pizza!" Exactly what I had in mind.

2 1/2 lbs potatoes
1/4 cup tomato paste
3 tablespoons vegetable oil
1 tablespoon dried oregano
2 teaspoons fennel seeds
2 teaspoons mild paprika
1 teaspoon dried basil
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon sugar
1/2 cup grated parmesan cheese (optional)

Steps:

  • Preheat oven to 400°F.
  • Line a large baking sheet with aluminum foil and coat lightly with oil.
  • Grind fennel seed, oregano and basil into a powder using a spice mill or mortar and pestle.
  • Wash, peel and slice potatoes into thin french fry shapes.
  • Combine ground spices, tomato paste, garlic powder, salt, sugar and oil in a small bowl until smooth.
  • Place potatoes and seasoning paste in a large ziplock or plastic bag.
  • Using your hands, move the potatoes around in the bag until they are evenly coated with the seasoning paste.
  • Place potatoes in a single layer on the baking sheet.
  • Bake for 25 minutes at 400°F.
  • Using a spatula, turn potatoes over and sprinkle with parmesan cheese (if using).
  • Bake for 10-20 minutes more or until fries become golden and start to crisp (time may vary with size of fries).
  • Serve with marinara sauce or ketchup, if desired.
