EASY HEALTHY & DELICIOUS SHRIMP RISOTTO RECIPE
Simple, healthy and delicious creamy oven baked risotto loaded with shrimp, spinach, spinach, goat cheese and Parmesan.

Steps:
- Preheat the oven to 350F degrees.
- Place rice and 4 cups of the simmering stock in a Dutch oven, such as Le Creuset.
- Cover and bake for 40 minutes, until most of the liquid is absorbed and the rice is al dente.
- Remove from the oven and stir in the shrimp and spinach.
- Return to the oven and cook for 5 minutes, until the shrimp are pink and the spinach is wilted.
- Remove from the oven and add the remaining cup of chicken stock, the Parmesan, goat cheese, wine, olive oil, salt and pepper.
- Stir vigorously until the rice is thick and creamy, 2 to 3 minutes.
- Add the peas and stir until they are heated through.
- Serve immediately.

BEET RISOTTO

- Place a small braiser or medium dutch oven over medium heat. Add the butter and olive oil to the hot pan and melt. Add the shallot, fennel, beet and 1/2 teaspoon salt and cook, stirring often, until fragrant and the vegetables are beginning to soften, about 3 minutes. Add the rice and stir to coat the in butter and oil mixture and toast slightly, about 3 more minutes. Deglaze with the sherry vinegar and season with the remaining salt. Begin adding the broth, 1 cup at a time, stirring often. Cook, stirring, after each addition until the broth is almost completely absorbed, continuing with the remaining broth until the risotto is creamy, cooked through and still moves slightly when spooned onto a plate. This will take about 20 minutes. Stir in the Parmesan until melted. Serve with crumbled gorgonzola on top.
OVEN ROASTED SHRIMP OVER BEET RISOTTO
Steps:
- Make Risotto First--- Saute garlic in olive oil. Once fragrant and lightly browned, add 1/2 cup rice. Saute until rice is covered by olive oil. In a separate pan, bring chicken broth to a simmer and keep warm. Add 1 cup of broth to rice mixture, than add remaining rice. As rice absorbs the broth, continue to add more broth until all is absorbed--- stir frequently. Once all broth is added, add the diced beets. Cook until heated through, about 10 mins. Add parmesan cheese and butter. Let sit on top of risotto without mixing in. Take risotto off the heat and let sit, covered for about 5 mins. Oven Roasted Shrimp-- Marinate the peeled and deveined shrimp in olive oil, garlic, salt and pepper for about 30-60 mins. Heat oven to 500 degrees F. When risotto is removed from the heat, place the marinated shrimp mixture into the hot oven on a baking sheet. Cook for 5-6 mins, turning once. To serve---- Stir risotto to incorportate the cheese and butter. Place a scoop on each plate. Top with 4 shrimp.

- Preheat oven to 425°.
- In an ovenproof saucepan or Dutch oven, heat oil over medium-high heat.
- Add the onion and cook, stirring, until translucent, 2 to 3 minutes.
- Add the rice and cook, stirring to coat the grains with oil, about 1 minute.
- Stir in the wine and cook until it has completely evaporated, about 1 minute. (If omitting, skip this step.).
- Stir in 1 1/2 cups water, the stock, salt, and pepper. Bring to a boil.
- Cover, transfer to the oven, and bake, until most of the liquid has been absorbed by the rice, 20 to 25 minutes.
- Remove from oven.
- Stir in 1/2 to 3/4 cup water (the consistency of the risotto should be creamy), the butter, cheese, and parsley.

- Heat oven to 200C/fan 180C/gas 6. Fry the bacon pieces in an ovenproof pan or casserole dish for 3-5 mins until golden and crisp. Stir in the onion and butter and cook for 3-4 mins until soft. Tip in the rice and mix well until coated. Pour over the wine if using and cook for 2 mins until absorbed.
- Add the cherry tomatoes and the hot stock, then give the rice a quick stir. Cover with a tightly fitting lid and bake for 18 mins until just cooked. Stir through most of the parmesan and serve sprinkled with the remainder.

- Place racks in bottom third and middle of oven; preheat to 350°F. Toss mushrooms, garlic, thyme, red pepper flakes, 1/4 cup oil, and 1/2 tsp. salt on a rimmed baking sheet. Roast on bottom rack, tossing halfway through, until deeply golden brown and crisped, 25-30 minutes.
- Meanwhile, heat 2 Tbsp. oil in a large ovenproof Dutch oven or heavy pot over medium-high. Add onion and cook, stirring often, until softened and slightly translucent, 3-5 minutes. Stir in rice; season with pepper and 1/2 tsp. salt. Cook, stirring occasionally, until some grains are translucent, about 2 minutes. Add vermouth, bring to a simmer, and cook, stirring occasionally, until pan is almost dry, about 2 minutes. Add 2 1/2 cups stock. Bring to a simmer, then cover and bake in oven until liquid is mostly absorbed but rice is still slightly firm in the center, 16-18 minutes.
- Return pot to stove and heat over medium. Add remaining 1/2 cup stock and cook, stirring constantly, until rice is tender but still has some bite and sauce is creamy, about 2 minutes. Remove from heat and stir in Parmesan, butter, and lemon zest; season to taste with salt, if needed. Add a little bit of warm water, if needed, until risotto is thick but still pourable.
- Transfer risotto to a platter. Top with crispy mushrooms and parsley. Drizzle with oil. Serve with lemon wedges alongside.
OVEN-BAKED RISOTTO
Unlike stove-top risottos, this oven-baked version requires hardly any stirring. Grate some additional Parmesan cheese to sprinkle on top of the individual portions.
