1 1/2 pounds green beans
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Trim the ends of the green beans and add to a large bowl.
  • Toss with the extra-virgin olive oil, salt and pepper and spread out evenly on a parchment lined baking sheet.
  • Roast, stirring once halfway through, until lightly caramelized and crisp tender, 12 to 15 minutes. Serve alongside the Foil Wrapped Side of Salmon with Lemon and Rosemary.

3/4 lb fresh green beans, boiled to crisp-tender
1 small onion, peeled and sliced into thin rings
2 garlic cloves, peeled and thinly sliced
1 tablespoon balsamic vinegar or 1 tablespoon red wine vinegar
2 teaspoons olive oil

Steps:

  • Spread beans in one layer across a large baking dish or baking sheet; scatter onions and garlic over beans; drizzle with vinegar and olive oil; toss to coat evenly.
  • Bake at 450° for 10 minutes; remove from oven, toss beans again, then return to oven and continue baking for another 5 minutes.
  • Sprinkle with salt and fresh-ground black pepper to taste; serve.

Steps:

  • Preheat oven to 400 degrees F.
  • Line large baking sheet with aluminum foil and lightly spray with non-stick cooking spray.
  • Spread beans in a single layer on a large baking sheet and drizzle with olive oil.
  • Sprinkle with salt and pepper, then using your hands (or a large spatula), lightly toss beans until they are coated with oil and seasonings. Spread beans back out in a single layer.
  • Cook for 20-25 minutes, or until beans are tender and start getting brown spots on the outside.

Sometimes I even add a few shakes of crushed red pepper flakes to give a little "heat" to the beans. If you'd like to cut back a little on the olive oil, a few tablespoons of water in the bottom of the pan will keep the beans from drying out too much.

1 -1 1/4 lb green beans (can use a mix of both) or 1 -1 1/4 lb yellow wax bean, trimmed (can use a mix of both)
2 tablespoons slivered almonds
1 tablespoon lemon juice
1 teaspoon lemon zest
2 -4 teaspoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
salt & freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees.
  • Line a baking or roasting pan with foil, and spray with a bit of non stick spray.
  • Combine all ingredients on pan, and toss well with your hands to be sure all the beans are evenly coated.

1.5 lb small potatoes
2 lb fresh green beans
16 oz sliced mushrooms
1 Medium yellow onion
8 cloves garlic
6 sprigs fresh thyme
3 tablespoons olive oil
sea salt and fresh ground black pepper

Steps:

  • Preheat oven to 350° F. If you want them to cook a bit quicker you can do 400°, but I was cooking a roast at 350 so that's what I went with. Wash all of your vegetables. Cut the potatoes into quarters, slice mushrooms, half and slice the onion thinly, peel and roughly chop the garlic cloves. Add all of these vegetables to the baking sheet. Drizzle the olive oil over the top. Add the fresh thyme leaves, salt, and pepper. Toss well and spread into single layer. Roast for 30 minutes. While roasting, cut your green beans into thirds. After 30 minutes remove the pan from the oven and add the cut green beans. Toss well. Spread back out in a single layer and place back in the oven to roast for another 30 minutes.

2 (12 ounce) packages fresh cut green beans
1 tablespoon olive oil
1 teaspoon salt, divided
4 bone-in center-cut pork chops (4-6 oz. each)
1/4 teaspoon pepper
1/2 cup panko breadcrumbs
1/4 cup freshly grated parmesan cheese
1 tablespoon lemon zest
1 teaspoon chopped fresh thyme
1/4 cup vegetable oil
1/4 cup chopped pecans
1/2 tablespoon butter

Steps:

  • Preheat oven to 450°; drain and rinse beans.
  • Combine beans, 1 T olive and 3/4 t salt in a large bowl, tossing to coat.
  • Spread beans in a single layer in a jelly-roll pan.
