OVEN FRIED PANKO GREEN BEANS

Steps:
- Heat oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper or a silicone mat.
- In a small baking dish (room for the beans to roll around), stir together the Panko bread crumbs, parmesan cheese, garlic powder, salt, and pepper. Crack eggs into a shallow dish and whisk along with 2 tablespoons water.
- Working with three or four beans at a time, dip the beans into the egg, then roll in the crumbs, turning and rolling to coat. Gently lay beans on the baking sheet in a single layer.
- Evenly drizzle olive oil on top of fries.
- Bake for 15-20 minutes, until tender and golden brown.

Steps:
- Preheat oven to 450°; drain and rinse beans.
- Combine beans, 1 T olive and 3/4 t salt in a large bowl, tossing to coat.
- Spread beans in a single layer in a jelly-roll pan.
- Bake 18-20 minutes or until the beans are tender and slightly browned.
- Meanwhile, sprinkle pork chops with pepper and remaining 1/4 t salt.
- Stir together breadcrumbs and next 3 ingredients in a large shallow dish.
- Dredge pork chops in breadcrumb mixture.
- Cook chops in 1/4 cup hot vegetable oil in a large skillet over medium heat for 5-6 minutes on each side or until done.
- Stir pecans and butter into beans; bake 5-6 more minutes or until pecans are golden.
- Serve pork chops with green beans.

- Position racks in the upper and lower thirds of the oven; preheat to 425 degrees F. Line a baking sheet with foil and coat with cooking spray. Combine the cornflakes, 1 tablespoon olive oil and the paprika in a medium bowl; season with salt and pepper. Combine the yogurt, lemon juice, 1 tablespoon water, 1/4 teaspoon salt and a few grinds of pepper in a large bowl; add the chicken and toss to coat.
- Dredge the chicken in the cornflake mixture, pressing to help it adhere. Transfer to the prepared baking sheet; mist with cooking spray. Bake on the upper oven rack until lightly browned, about 15 minutes. Flip the chicken and bake until cooked through, 7 to 10 more minutes.
- Meanwhile, toss the green beans, garlic, scallion whites and the remaining 1 tablespoon olive oil in a bowl; season with salt and pepper. Spread on another baking sheet; bake on the lower oven rack, stirring occasionally, until tender, about 20 minutes. Toss with the lemon zest and scallion greens. Serve with the chicken and honey mustard.

Steps:
- Preheat oven to 400 degrees.
- steam bag of green beans in microwave for roughly 5 mins.
- dice shallots.
- combine beans, olive oil, shallots, salt, and pepper in a bowl. Toss together by hand or with tongs.
- spread over a baking pan as evenly as possible and place in oven.
- check and move beans around with a spatula every 10 mins or so. If they become chard, it is not an issue as this is what you will want.
- remove from oven after about 30 mins and enjoy!
