This is a Weight Watchers recipe. 6 pts./serving. Serving size: 3 tenders. This is easy to make, tasty, and very popular with my kids. I use regular milk instead of buttermilk, just because I always have it.

1 lb chicken breast tenders
1/2 cup low-fat buttermilk
1 1/2 cups reduced-fat cheese crackers, crushed (such as reduced-fat Cheese Nips)
3/4 teaspoon creole seasoning
1/4 teaspoon salt
cooking spray
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 450.
  • Combine chicken and buttermilk in a shallow bowl. Place crackers, Creole seasoning, and salt in a heavy-duty zip-top bag. Crush crackers with a rolling pin or heel of hand.
  • Drain chicken, discarding buttermilk. Add chicken to bag, close, and shake to coat well.
  • Coat a baking sheet with cooking spray. Pour oil in center of baking sheet; heat oil at 450 for 3 minutes. Remove oven from pan, reduce heat to 400. Spread hot oil with a spatula over an area just large enough to accommodate chicken. Quickly place chicken in oil on pan.
  • Bake at 400 for 10 minutes, turn, and bake and additional 3 minutes or until done.

Instead of the same old boring salad with grilled chicken. I made a chopped salad with delicious oven fried chicken tenders. The mayonnaise marinade in this recipe keeps the chicken moist and flavorful. Hope you enjoy!

1 1/2 lbs chicken tenders
1/2 cup white vinegar
8 cups water
1 cup good quality mayonnaise (you can use low fat)
4 garlic cloves, smashed in a mortar and pestle (or finely chopped)
3 tablespoons goya light adobo seasoning
fresh ground black pepper
4 cups Italian style breadcrumbs
2 limes, juice of
1 tablespoon Worcestershire sauce
cooking spray
2 tablespoons olive oil
1 head romaine lettuce, chopped (remove core, slice in strips lengthwise, then slice across)
4 plum tomatoes, diced
2 cucumbers, diced
1 (6 ounce) can black olives (pitted)
1/2 cup crumbled blue cheese
1 cup canola oil
4 garlic cloves, smashed in mortar and pestle (or finely chopped)
2 teaspoons sugar
1/4 cup white wine vinegar
salt & fresh ground pepper (lots of pepper)
1 teaspoon oregano
1 teaspoon dry mustard
2 tablespoons water

Steps:

  • Make Vinaigrette:.
  • Combine all ingredients in bowl. Wisk well to combine. Refrigerate for at least 1/2 hour to allow flavors to combine.
  • Wash Romaine lettuce, tomatoes and cucumbers. Spin a couple of times in salad spinner. Transfer to a Salad bowl. Top with pitted olives and blue cheese. Toss to combine. Add Vinaigrette and toss right before serving.
  • Soak Chicken in Water and white vinegar for 10 minutes. Rinse well and pat dry. Transfer chicken to ziploc bag or large bowl.
  • In a bowl, mix mayo, garlic, 2 tbs. light adobo, black pepper to taste, lime juice and worcestershire sauce. Mix to combine.
  • Add mayo mix to chicken, coat well. Let marinade for at least 1/2 hour to 1 hour on the counter. If longer, refrigerate then bring to room temperature before cooking.
  • In ziploc bag or large bowl combine bread crumbs, 1 tbs. light adobo, and black pepper to taste. Mix well.
  • Coat the chicken in the bread crumb mixture.
  • Preheat oven to 425.
  • Grease a baking sheet with cooking spray, place chicken on baking sheet. Drizzle chicken with olive oil.
  • Bake for 15 to 17 minutes. Flipping once halfway through cooking time.
  • I like to Serve the Chicken Tenders on top of the Chopped Salad.
  • Enjoy!

This recipe came from my "Where's Mom Now That I Need Her?" cookbook. The recipe calls for one whole fryer chicken, but I usually just use four skinless chicken breasts. This way, I have breading left over for the next time I want to make this dish.

1 cup biscuit mix
1 teaspoon salt
1 1/2 teaspoons paprika
1 dash pepper
8 boneless skinless chicken breasts or 1 broiler-fryer chicken
1/2 cup butter or 1/2 cup margarine

Steps:

  • Preheat oven to 400 degrees.
  • While oven is preheating, place 1/2 cup butter or margarine in 9x13 baking dish. Place in oven just until melted.
  • Combine biscuit mix, salt, paprika, and pepper in small mixing bowl.
  • Place the amount of breading you'll be using in a paper bag. (Whole recipe will coat one whole fryer chicken or about 8 chicken breasts). Place the remainder in a plastic baggie for use at a later time.
  • Cut chicken into pieces about 1 inch thick.
  • Place chicken pieces in paper bag of breading one at a time and shake to coat.
  • Place coated pieces in baking dish with melted butter or margarine.
  • Bake at 400 degrees for 50 minutes. Reduce heat to 375 and bake for an additional 10 minutes. If using a convection oven (which is what I use) you'll only need to bake the chicken at 400 for about 40 minutes.
  • Serve with your favorite dipping sauce (I prefer honey mustard).

1 egg
1 tablespoon water
1 cup Progresso™ plain or Italian style panko crispy bread crumbs

1 1/4 lb (20 oz) chicken breast tenders (from two 14-oz packages)
Favorite dipping sauce, if desired

Steps:

  • Heat oven to 425°F. Line cookie sheet with foil; spray with cooking spray.
  • In shallow dish, place flour. In another shallow dish, beat egg and water. In third shallow dish, mix bread crumbs and cheese. Coat chicken with flour; dip into egg mixture, then coat with bread crumb mixture. Place on cookie sheet.

3/4 cup flour
1/4 teaspoon garlic powder
1/4 teaspoon thyme
1/4 teaspoon oregano
1/8 teaspoon paprika
salt and pepper
crushed corn flakes
parmesan cheese
buttermilk

Steps:

  • Mix the flour with the other dry ingredients (not with the corn flakes).
  • First dip the chicken tenders in the buttermilk and roll in flour mix.
  • Then dip back in buttermilk.
  • Now roll in corn flakes.

FRIED CHICKEN TENDERS

Nice and crispy and a tad spicy, the perfect appetizer. The trick to perfect fried chicken is to control the temperature of your oil. Too hot and the food burns before it's fully cooked, too cool and it won't get crispy and it will get very greasy. Use a deep-fry thermometer and a heavy pot so that when you add the food the temperature won't drop too drastically. Brining the chicken is the best way to make it juicy and flavorful, but I wouldn't recommend doing it overnight as that's too long. Two hours should do it.

1 quart water
1/4 cup kosher salt
1/4 cup sugar
2 cups flour
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons paprika
2 tablespoons seasoning salt
1 tablespoon black pepper
2 teaspoons cayenne pepper
2 eggs
1/4 cup milk

Steps:

  • Combine the water, kosher salt, and sugar in a container to form a brine. Add the chicken tenders and let this marinate in the fridge for 2 hours.
  • Combine the flour, garlic powder, onion powder, paprika, seasoned salt, black pepper and cayenne pepper in a container and mix very well to combine.
  • Mix the eggs and milk in another container.
  • Preheat your oil to 350 degrees.
  • Dredge the chicken tenders in the flour mixture and pat off excess.
  • Dip the tenders in the egg mixture and drain excess.
  • Dredge the chicken tenders in the flour a second time and set them on a plate. Put them in the fridge to dry out for about 20 minutes. This will help the coating stick to the chicken better.
  • Once the oil is hot, fry the tenders in small batches for about 5 minutes and then drain on paper towels.
  • Serve with your favorite dipping sauces!
