6 bone-in pork loin chops (3/4 inch thick)
1 tablespoon Worcestershire sauce
2 tablespoons vinegar
2 teaspoons brown sugar
1/2 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon paprika
3/4 cup ketchup
1/3 cup hot water

Steps:

  • Place chops, overlapping slightly if necessary, in a large cast-iron or other ovenproof skillet. Combine remaining ingredients; pour over meat. Bake, uncovered, at 375° for 40 minutes, turning chops halfway through cooking.

6 pork chops
3/4 cup ketchup
1/4 cup water
1/3 cup brown sugar
1/2 teaspoon dry mustard
1 teaspoon soy sauce
1/2 teaspoon salt

Steps:

  • Preheat oven to 350F.
  • Put chops in a baking dish in a single layer.
  • Stir together remaining ingredients and pour over pork chops.
  • Cover and bake 1 hour.
  • Uncover and bake 30 minutes, basting occasionally.

This is my daughter DeLena's recipe. She normally does hers in the microwave, but I love them in the oven. It adds something to the barbecue flavor if you use the oven.

4 thick pork chops, about 5-6 oz each
3/4 c cider vinegar
1 c bottled barbecue sauce
1/4 c brown sugar (if you like a sweet sauce - optional)
2 Tbsp minced onion
2 tsp minced garlic
2 tsp fresh ground black pepper
a little salt

Steps:

  • 1. Season the chops with salt and 1 teaspoon of the pepper. Place them in a shallow baking dish. Preheat oven to 350°.
  • 2. Stir together the vinegar, barbecue sauce, (brown sugar if used), onion, garlic, and the remaining black pepper. Pour over and around the chops.
  • 3. Cover with foil and bake for 30 minutes. Then, remove foil and continue baking for an additional 20 minutes, basting occasionally with the pan sauce, until chops reach an internal temperature of 160° or they are no longer pink inside.
  • 4. To cook them in the microwave: Use a microwave-safe baking dish. Follow directions as above, but do not cover with foil. Cover with waxed paper or a microwavable vented lid. Microwave about 3 minutes at a time, basting with the pan sauce after each 3 minutes. This usually takes about 12 minutes, or 3 minutes per chop. Check frequently to see if pink is gone inside, and do not cook too long or they will get tough.

1 medium onion, halved and thinly sliced
1/4 cup vinegar
3/4 cup water
1 tablespoon brown sugar or honey
1 tablespoon Worcestershire sauce
1/2 cup ketchup
1 teaspoon salt
1/4 teaspoon pepper
dash cayenne, optional

Steps:

  • Preheat oven to 350°. Place pork chops in bottom of a 13 x 9 x 2-inch baking pan. Place sliced onion over the pork chops. Combine remaining ingredients; pour over pork chops. Bake uncovered for 1 hour, or until chops are tender.

1/4 teaspoon(s) salt
1/4 teaspoon(s) freshly ground pepper
3 teaspoon(s) canola oil
1 medium onion
1 clove(s) garlic
1/3 cup(s) orange juice
1/2 cup(s) barbecue sauce

Steps:

  • Preheat oven to 400 degrees F. Sprinkle pork chops with salt and pepper. Heat 2 teaspoons oil in a large ovenproof skillet over high heat. Add the pork chops and cook until beginning to brown, 1 to 2 minutes per side. Transfer to a plate. Add the remaining 1 teaspoon oil to the pan. Add onion and cook, stirring, until softened, 3 to 4 minutes. Stir in garlic and cook, stirring, until fragrant, 30 seconds. Add orange juice and cook until most of the liquid has evaporated, 30 seconds to 1 minute. Stir in barbecue sauce. Return the pork chops to the pan, turning several times to coat with the sauce. Transfer the pan to the oven and bake until the pork chops are barely pink in the middle and an instant-read thermometer registers 145 degrees F, 6 to 10 minutes. Serve the sauce over the pork chops.
