- Preheat the oven to 450 degrees F.
- Season salmon with salt and pepper. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle. Bake until salmon is cooked through, about 12 to 15 minutes. Serve with the Toasted Almond Parsley Salad and squash, if desired.
- Mince the shallot and add to a small bowl. Pour the vinegar over the shallots and add a pinch of salt. Let sit for 30 minutes.
- Roughly chop the capers, parsley and almonds and add to the shallots. Add the olive oil, tasting as you go. Mix again and adjust the seasonings.

- Combine dill, olive oil, lemon juice, honey, garlic, coriander, salt, and pepper in a small bowl.
- Rinse salmon fillet under running cold water and pat dry with paper towels. Lay salmon skin-side down on a large piece of plastic wrap. Spread dill mixture all over the top of the fish, wrap well with plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 425 degrees F (220 degrees C). Unwrap salmon and place skin-side down in a baking dish.
- Bake in the preheated oven until salmon flakes easily with a fork, 12 to 15 minutes.

OVEN BAKED SALMON PATTIES
A healthier version of the usual pan fried salmon patties, the recipe is for 2 people, but can be doubled for larger amounts. My DH is not a fan of any fish that is not deep fried, or of Salmon, I had to find something that he would like and would fit into his diet! I combined an oven fried eggplant method into this and he loved it!

- Mix Salmon, and first 8 ingredients together, use large egg, if seems dry, add mayo untill it seems moist enough form into 4 patties and refrigerate for at least 1 hour, to firm. Mix rest of dry ingredients in a bowl. When oven is hot, spread patties with mayonaise, one side at a time, place in panko mixture, to absorb as much as possible, repeat with other side, place on cookie sheet sprayed with cooking spray and bake in 425 degree oven for 10 min., turn patties over and cook for 10 minutes more, checking to see if they are done to your likeness. Oven fries or sweet potato fries can be done at the same time and go great with this!
FAIL PROOF OVEN BAKED SALMON
I found this recipe on Pinterest, and thought it needed to be shared here. I searched, and haven't seen anything like it. Since finding this recipe, this is the ONLY way I will make my salmon indoors from now on.

- DO NOT PRE-HEAT YOUR OVEN. This is the trick.
- Lightly spray a cookie sheet with cooking spray. Or line pan with tin foil.
- Place Salmon fillet skin side down on pan.
- Drizzle with Olive Oil, and season with the salt, pepper, and dill weed. All seasonings are to your liking.
- Place salmon in a cold oven, set oven to 400 degrees F; bake salmon 25 minutes.
- You should have perfectly cooked salmon.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat 1/2 of the oil in a skillet over medium heat. Cook and stir 1/2 of the garlic and ginger until softened, 3 to 5 minutes. Remove from heat and cool for 10 minutes.
- Grease a baking pan with the remaining oil. Season salmon with salt and pepper and place in the baking pan. Rub cooled garlic and ginger over the salmon.
- Bake in the preheated oven for 12 minutes.
- While the salmon is baking, prepare the hoisin-plum sauce. Melt butter in the skillet; cook and stir remaining garlic and ginger until softened, 3 to 5 minutes. Add rice vinegar and let it cook off. Add oyster sauce and chile paste; bring to a simmer. Stir in hoisin and plum sauces and bring back to a simmer. Pour in chicken broth to loosen up sauce to a lighter consistency. Add soy sauce.
- Cover salmon with the sauce and continue baking until flesh flakes easily with a fork, 5 to 6 minutes more. Garnish with scallions before serving.

- Run salmon under cold water and pat dry with paper towels, set aside.
- In a large oven-proof baking dish add 3 tablespoons of olive oil and place the salmon in the baking dish.

- Heat oven to 180C/160C fan/gas 4. Line a 22cm tart or flan case with a sheet of baking parchment, pushing it into the sides and leaving a 1cm overhang over the top - this is easiest if you scrunch up the parchment first to make it more pliable (don't worry about it looking too neat). - Preheat the oven to 300°F. Once it reaches this temperature, place a small pan with water on the lower shelf (this will create a moist environment while roasting).
- Brush the salmon generously with two tablespoons of olive oil on both sides, season with sea salt and pepper and place skin-side-down in a small pan, or, in an oven-proof skillet. Tuck some lemon slices and a few thyme sprigs under the salmon and place a couple of thyme sprigs on top of the salmon.
- Bake for about 12-15 minutes, or, until the color of the salmon turns opaque and begins to flake easily (the baking time will depend on the thickness of the fillet, so check it to make sure). The internal temperature of the salmon should register between 125°F to 130°F when it is ready. Remember that the salmon will continue to cook even after it comes out of the oven.
- Remove the salmon from the oven. Drizzle the fillets with the remaining olive oil, squeeze some fresh lemon juice over the top, and let the dish rest for 5 minutes.
- Using a flexible spatula, remove the salmon from the pan, place it on individual plates, and discard the thyme--the skin should come off easily. Serve warm or at room temperature with a simple green vegetable on the side.

- Spray a glass baking dish lightly with FAT-FREE butter-flavored cooking spray. Preheat your oven to 350. Place 1 lb of salmon in your baking dish, skin-side down. Squeeze the juice of 1/2 a lemon over the top, then coat liberally with fresh ground pepper.
