Simply Oven Baked Pork Chops and Rice image

This is DH's recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.

1 (10 3/4 ounce) can cream of mushroom soup
1 1/2 cups water
1 cup long grain rice (uncooked)
1/4 onion, sliced
1/4 teaspoon pepper
3 -4 pork chops
salt and pepper (to taste)

Steps:

  • Stir together soup, water, rice and 1/4 teaspoons pepper in a 3 quart casserole.
  • Add onions.
  • Salt and pepper chops and place on top of rice.
  • Cover and bake at 350* for 1 1/4 hours or until meat is done and liquid is absorbed.
  • Remove from oven and let rest 5 minutes.

6 (1-inch thick) boneless pork chops
1 tablespoon adobo seasoning
1 (.18 ounce) packet sazon seasoning
½ teaspoon garlic powder
⅓ teaspoon ground black pepper
¼ teaspoon salt
3 tablespoons Italian dressing, divided
1 ½ cups water
¼ cup margarine
6 (6 ounce) packages dry stuffing mix (such as Stove Top®)
toothpicks
1 tablespoon water, or as desired

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place pork chops in a large bowl and season all sides with adobo seasoning, sazon seasoning, garlic powder, pepper, and salt; add 2 tablespoons Italian dressing and flip to coat.
  • Bring 1 1/2 cups water and margarine to a boil in a saucepan; add stuffing mix and cover. Remove saucepan from heat and set aside until stuffing absorbs water, about 5 minutes; fluff with a fork.
  • Remove pork chops from bowl, reserving liquid and seasonings. Lay each pork chop flat on cutting board and with a sharp knife held parallel to the board, cut a pocket into the pork, leaving 3 sides intact. Stuff each pork chop with stuffing and close pocket using a toothpick.
  • Arrange pork chops on a baking sheet. Mix remaining 1 tablespoon Italian dressing and 1 tablespoon water with reserved juices from pork chops; pour over pork chops.
  • Bake in the preheated oven until pork chops are cooked through, 25 to 35 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

I found this recipe by Nagi on a site called Recipetineats.com. "Made with ingredients you already have in your pantry.....slathered in a country style sauce then baked until sticky and golden. Also great with chicken". I used two pork chops and 4 Yukon gold potatoes. Kept the marinade amount the same. We were licking our plates.

1 teaspoon Worcestershire sauce
2 tablespoons ketchup
1 tablespoon soy sauce
2 tablespoons brown sugar
2 tablespoons olive oil, divided
1 garlic clove, minced
1 teaspoon apple cider vinegar
4 pork chops, 7-12 oz each
1 1/2 lbs potatoes, cut into 1 1/2-inch chunks

Steps:

  • Set oven to 400*.
  • toss potatoes with 1T oil, salt and pepper. Place in roasting pan big enough to hold potatoes and chops. (I used an iron skillet) and roast for 15 minutes.
  • Meanwhile mix marinade ingredients and slather on pork chops.
  • When potatoes have cooked 15 minutes add pork chops to the pan. Cook 10-15 minutes depending on size. Stir potatoes.
  • Turn chops and baste with pan juices. Stir potatoes. Return to oven for another 10-15 minutes.
  • turn on broiler. Baste chops again and broil for a few minutes until carmelized and golden.
  • Serve, scraping the juices onto the chops and potatoes. Garnish with parsley if desired.

This is an easy but really tasty pork chop dish --- purchase the thicker size pork chops or you may use 2-3 larger pork steaks, the thinner chops tend to fall apart when baked as they bake too fast, if desired you can top with shredded cheddar cheese the last 15 minutes of baking, also chopped fresh garlic may be added also to the bean mixture -- this may also be cooked in a crockpot, just brown the chops firstly in a skillet.

1 (3 lb) can pork and beans
1 medium onion, chopped
1 medium green bell pepper, chopped
1/4-1/3 cup store-bought barbecue sauce
3/4 cup ketchup
1/4 cup brown sugar
1 pinch cayenne pepper (optional or to taste, adjust amount to suit heat level)

Steps:

  • Set oven to 350 degrees.
  • Brown the chops in a frypan on both sides with salt, pepper and garlic powder (if using); set aside.
  • Grease an Dutch oven or a oven-proof casserole dish (large enough to hold the ingredients).
  • In a bowl mix together the pork and beans, chopped onion, chopped green pepper, BBQ sauce, ketchup, brown sugar and cayenne pepper (if using).
  • Layer HALF of the bean mixture on the bottom of Dutch oven.

This recipe is foolproof. The pork chops turn out VERY tender. I have tried many other recipes for pork chops in the oven, and I always go back to this tried and true recipe of mine. My husband eats about 3 or 4 chops every time I make it. He also makes sure to tell me to make enough for leftovers. Make sure to buy pork chops with the bone. The bones add more flavor, and the meat is more moist. I would also suggest to NOT buy "thin" cut pork chops. Enjoy!!

6 pork chops, about 1 inch thick
1 medium onion
2 7/8 ounces mccormicks dry pork gravy mix
1/4 teaspoon Kitchen Bouquet, gravy darkener
2 cups cold water
1 (10 ounce) can cream of mushroom soup
Lawry's Seasoned Salt
paula deen's house seasoning
1/2 cup margarine
1 (8 ounce) container fresh mushrooms (optional)
1 teaspoon Italian dressing (optional)

Steps:

  • Take pork chops and season both sides generously with Lawry's Seasoning Salt and Paula Deen's House Seasoning.
  • If you do not have Paula Deen's Seasoning you can make your own by mixing 1 cup of salt with 1/4 cup of pepper and 1/4 cup of garlic powder. You can put it in a shaker bottle and use for up to 6 months.
  • Melt 1/4 cup of the margarine in a large frying pan. On medium to medium high heat, brown the chops on both sides. So they have a pretty brown color to them. About 3 to 4 minutes on each side.
  • Spray a roaster pan with cooking spray.
  • Slice up a medium size onion and layer the bottom of the roaster pan.
  • Layer the browned up chops over the onion. DO NOT let the chops overlap. It is important that they are in a single layer.
  • In a separate mixing bowl, mix together the water, dry gravy mix, gravy darkener and the cream of mushroom soup. Season this to taste with the Lawry's Seasoning Salt and Paula Deen House Seasoning.
  • Pour this mixture over the pork chops.
  • Melt the last 1/4 cup of butter in the frying pan, and saute the thinly sliced fresh mushrooms. I season them with salt and pepper and a splash of Italian dressing.
  • Put a pile of the mushrooms on the top of each of the pork chops. Or you can also just mix the sauteed mushrooms in with the gravy. I have done it both ways.
  • Bake COVERED at 300°F for two and a half hours. Do not remove the cover at all while baking.
  • The gravy thickens up on its own. Just serve pork chops on a platter accompanied with homemade mashed potatoes, vegetable and salad.

1 1/2 teaspoons paprika

  • Grease a 13 x 9-inch baking dish.
  • In a shallow bowl combine the flour with the next 5 spices (remove 3 tablespoons of the flour mixture and set aside).
  • Coat the pork chops in the flour mixture one at a time then place onto a plate.
  • In a large skillet over medium-high heat melt the butter with oil; add in the pork chops and brown on both sides then transfer to prepared baking dish.
  • In the same skillet add in mushrooms and saute until golden; sprinkle over the pork chops.
  • To the skillet add in onion and bell pepper; saute until softened.
  • Add in garlic and cook for 2 minutes.
  • Add in the reserved 3 tablespoons flour mixture and stir for 1 minute.
  • Stir in 2 cups half and half cream or milk; bring to a boil and stir for 2 minutes or until smooth and bubbly.
  • Remove from the heat and stir in 2 tablespoons lemon juice (at this point you may season the gravy with more black pepper to taste).
  • Pour the sauce over the chops and mushrooms; using a fork lift the chops slightly to allow the gravy to flow underneath.
  • Cover with foil and bake at 350 degrees F for about 50-60 minutes (do not cover tightly you will need to allow some air to flow out while cooking).

This is an updated version of DH's bachelor days recipe, that I posted in 2005. When I first met him, the only spices he owned was Tony's, garlic salt and salt and pepper. This is the recipe that has evolved from the original. It's still a basic recipe...just a lot more flavor. As with all my recipes, feel free to change it up to suit your family's tastes. Note: You can season the rice with salt and pepper. We do it at the table.

3 -4 pork chops or 4 chicken thighs
1 tablespoon butter
1 tablespoon canola oil
1 (10 3/4 ounce) can cream of mushroom soup (I use Healthy Request)
1 (14 1/2 ounce) can low sodium chicken broth
1 cup white rice (uncooked)
1/2 cup onion, coarse chop
1/4 teaspoon seasoning salt
1/4 teaspoon garlic powder

I threw this together yesterday and I loved it...it was so tasty and the pork was so tender that it could cut it with my fork.

1 can(s) cream of mushroom soup
5 porkchops
1 pkg fresh sliced mshrooms
1/2 onion chopped
2 strips of green bell pepper diced
2 Tbsp minched up onion, garlic and celery from food processor
1/2 c vegitable broth
2 clove minced garlic
3 tsp olive oil
1 tsp tyme
1 tsp rosemary
1 tsp oregano
1 tsp season salt
1 tsp onion powder
1 tsp garlic powder
freshly ground peper
3 dash(es) red wine viniger

Steps:

  • 1. In a small bowel mixed together Olive oil, thyme, rosemary, oregano, season salt, garlic powder, onion powder, ground pepper, and vinegar to make marinade. Put thawed pork chops in a ziplock bag with mariane, shake up to coat the chops and mariande for at least two hours.
  • 2. Preheat oven to 350%. In a large skillet, brown marinated pork chops and then place in a baking dish that had been coated with cooking spray.
  • 3. In a bowel, mix together the can of cream of mushroom soup with a half cup of vegetable broth. I used a vegetable bullion cube and hot water as it was what I had on hand.
  • 4. In the pan with the pork drippings, saute the chopped onion and garlic along with the pepper strips. I only cut two strips off of a green bell pepper and diced them up but you can add more or a different type of pepper if you choose. I also had a mixture in the fridge of onion, celery and garlic that I had left over from making tuna salad that I minced up in a mini food processor that I added to the skillet. Add the mushrooms and saute it all together.
  • 5. After the onion, garlic, pepper, and mushroom mixture has cooked for at least five minutes, add in the soup mixand cook for two minutes before pouring it over the pork chops in the baking dish.
  • 6. Cover the dish with foil tightly and stick it in the oven for an hour.
  • 7. Serve and enjoy! The meat will be so tender you won't need your knife and the soup/veggie mix will create a delice sauce to top the pork chops with as you eat. So tasty!

4 boneless pork chops
salt (to taste)
4 clove fresh garlic, minced
2 tsp dry rosemary, crushed
1 bay leaf
1 to 2 tsp black pepper (or to taste)
6 1/2 Tbsp white wine vinegar
2 small onions, thinly sliced
2 Tbsp olive oil
4 slices pineapple
RICE
3 Tbsp olive oil
1/2 medium onion, chopped
5 1/2 oz peas
3 cups water
1 1/2 cups uncooked white rice
1 tsp salt (or to taste)

Steps:

  • 1. Preheat the oven to 350ºF (180ºC).
  • 2. Season the chops with salt. Mix together the garlic, rosemary, bay leaf, pepper and white wine. Add the chops and let marinate in the refrigerator about an hour.
  • 3. FOR THE RICE: Place the olive oil, chopped onion and peas in a medium saucepan, and sauté over low heat until onion starts to turn slightly browned. Increase heat to high and add the water, and let it reach a boil. When it starts to boil, reduce heat to medium and let it simmer about 15 minutes. Then reduce heat to low, add the rice and salt, stir well, and let simmer, covered, for about 10 minutes or until rice is tender and has absorbed all the liquid.
  • 4. FOR THE PORK CHOPS: Add chops and marinade to a baking pan, then add the onion slices to the pan. Drizzle olive oil on top, and roast in preheated oven for 25 minutes.
  • 5. Meanwhile, cut the pineapple slices into pieces and set aside.
  • 6. Briefly remove the baking pan from the oven and add the pineapple pieces. Return pan to the oven more 5 minutes until the chops start to turn slightly golden brown.
  • 7. Remove the baking pan from the oven and serve the chops with the cooked rice.

1 c bottled barbecue sauce
1/4 c brown sugar (if you like a sweet sauce - optional)

  • 3. Cover with foil and bake for 30 minutes. Then, remove foil and continue baking for an additional 20 minutes, basting occasionally with the pan sauce, until chops reach an internal temperature of 160° or they are no longer pink inside.
  • 4. To cook them in the microwave: Use a microwave-safe baking dish. Follow directions as above, but do not cover with foil. Cover with waxed paper or a microwavable vented lid. Microwave about 3 minutes at a time, basting with the pan sauce after each 3 minutes. This usually takes about 12 minutes, or 3 minutes per chop. Check frequently to see if pink is gone inside, and do not cook too long or they will get tough.

6 pork loin chops (1 to 1 1/4-inch thick) or 6 rib chops (1 to 1 1/4-inch thick)
1 cup celery, sliced
1 1/2 cups long grain rice, uncooked
1 medium onion, sliced
3 cups water
4 teaspoons instant chicken bouillon
1 teaspoon Italian herb seasoning
1/2 teaspoon salt
1 medium green pepper, cut into 6 rings

Steps:

  • heat oven to 350*F.
  • in a 10" skillet brown pork chops over medium heat.
  • in a 13x9 baking pan stir together celery and uncooked rice. place onion slices over rice, top with pork chops.
  • in 2-qt saucepan bring water to full boil. add remaining ingredients except green pepper.
  • stir to dissolve, pour over pork chops.
  • cover with aluminum foil, bake for 60 to 70 minutes or until rice is cooked and pork chops are fork tender.
  • remove foil, top pork chops with green pepper rings, continue baking for 10 to 15 minutes or until green pepper is crispy tender.
  • Tip:.
  • if you are out of Italian Seasoning mix.
  • 1/4 tsp oregano leaves.
  • 1/4 tsp marjoram leaves.
  • 1/4 tsp basil leaves.
  • and a pinch of rubbed sage.

2 tablespoons vegetable oil
1 (10 3/4 ounce) can cream of mushroom soup (light version works great)
2/3 cup chicken broth
1 cup sour cream (low-fat works too)
2 cups french's French-fried onions

Steps:

  • In a shallow bowl, combine flour, salt and pepper; dredge pork chops.
  • Heat oil in a large skillet; cook pork chops 4 to 5 minutes per side or until browned.
  • Place in a single layer in a ungreased 13 X 9 baking dish.
  • Combine soup, broth, and the sour cream, pour over chops.
  • Sprinkle with half the onions.
  • Cover and bake at 350° for 45-50 minutes.
  • Top chops with remaining onions.
  • Return to oven, uncovered for 10 minutes.

I LUV bbq, but there are times when the weather here in WI doesn't want to co-operate & I can't grill or bbq outdoors. I came up with this on one of those "uncooperative" days. Turned out pretty good!!! Hope you try & like it, too!!! PLEEZ choose chops that have some fat on them...rib chops, preferred. I'll argue this with anyone, cuz fat adds flavor & helps keep the meat moist. NOTE: Cooking time does NOT include marinade time

6 thick pork rib chops, about 1/2 to 3/4 in. thick
1 (12 ounce) bottle Lawry's mesquite marinade
3/4 cup barbecue sauce (I use Sweet Baby Ray's original)
1/2 cup chili sauce
3 tablespoons soy sauce
1 tablespoon molasses
3 tablespoons light brown sugar
1 -2 tablespoon jack daniel's whiskey (optional)

Steps:

  • Place chops in a zip-lock bag...pour in marinade...close bag, removing as much air as possible. Marinade overnight.
  • Next day, preheat oven to 325°.
  • Remove chops & drain off excess marinade, but do NOT rinse.
  • Select a 4-sided pan large enough to hold the chops & coat with cooking spray. Place chops in pan & cover pan tightly with foil.
  • Bake for 2 hours.
  • While chops are baking, mix together remaining ingredients EXCEPT THE WHISKEY, in a medium saucepan.
  • Heat over med-high heat, stirring often until just starting to boil.
  • Remove from heat & cover until needed.
  • When chops are done baking, remove foil & drain off as much fat from pan as possible.
  • Stir the Jack Daniel's Whiskey into the sauce.
  • Using tongs, dip each chop into the sauce & place back into pan.
  • Return pan to oven & bake Uncovered for 15-20 minutes or until glaze has set.

1 egg, beaten
2 tablespoons milk

  • In a shallow dish combine egg, melted butter, milk and ground black pepper.
  • Place Kentucky Kernel Seasoned Flour in another shallow dish.
  • Dip pork chops into egg mixture.
  • Dip pork chops into flour, covering both sides.
  • Place in 13x19x2-inch baking pan.
  • Bake, uncovered, in a 425 degree oven for 10 minutes. Turn chops.

4 medium 3-4 oz pork chops
1 c buttermilk, low fat
1 c bread crumbs, seasoned
2 tsp dried basil
2 tsp paprika
1 tsp lemon pepper
1/2 tsp garlic powder

Steps:

  • 1. Allow pork chops to soak in buttermilk (in refrigerator) for at least one hour.
  • 2. In a small bowl combine bread crumbs and remaining spices
  • 3. Preheat oven to 425F and spray a cookie sheet with non?stick spray oil.
  • 4. Spread mixture onto wax paper and dip each pork chop in crumb mixture.
  • 5. Place chops on prepared cookie sheet and bake for 20 to 25 minutes, or until chops are no longer pink (internal temperature of 160F).
