2 (8 ounce) packages cream cheese (, softened)
1 cup blue cheese dressing
1 cup buffalo hot sauce
2 cups shredded sharp cheddar cheese
2 cups shredded cooked chicken
6 ounces crumbled bleu cheese ((optional))
4 ribs celery (cut into sticks)
4 carrots (cut into sticks)
1 baguette (sliced)
1 bag tortilla chips

Steps:

  • Preheat an oven to 400 degrees F. Lightly grease an 8x8 pan.
  • Use a hand mixer to beat cream cheese until fluffy. Stir in bleu cheese dressing, hot sauce, cheddar cheese, and cooked chicken until thoroughly mixed.
  • Spread cheese mixture out into the prepared pan. Top with crumbled bleu cheese. Bake in the prepared pan for 20-25 minutes until cheese is melted and bubbly.
  • Meanwhile, cut celery into sticks and slice baguette.
  • Serve dip hot with celery sticks and baguette slices for dipping.

This has become one of my most requested dishes at family functions. I prepare it at home and just heat up in the microwave when I am ready to serve. I also adjust the amount of hot sauce depending on who will be there. Our family prefers it mild with only 1/2 cup of sauce.

3 cups cooked chicken breasts, shredded
8 ounces cream cheese, cubed
8 ounces shredded cheddar cheese
1 cup ranch salad dressing
1/2-3/4 cup Frank's red hot sauce

Steps:

  • Combine all ingredients in a large sauce pan or dutch oven. Heat over medium heat, stirring constantly until the cheeses have melted and start to bubble.
  • Transfer to a 2 quart casserole dish and serve with Tortilla chips and/or celery sticks.
  • If made ahead of time, microwave 3-5 minutes or until bubbly. Stir before serving.

2 cups shredded cooked chicken (from about 1/2 rotisserie chicken)
1 1/2 cups cottage cheese
1/2 cup Buffalo-style hot sauce
6 ounces grated pepper jack (about 3 cups)
6 ounces grated mild Cheddar (about 3 cups)
1/4 cup crumbled blue cheese
Rainbow baby carrots, celery sticks and assorted crackers and chips, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the chicken, cottage cheese, hot sauce, pepper jack and Cheddar in a large bowl and mix well. Transfer to an 8-inch square baking dish, spreading it into an even layer. Sprinkle all over with the blue cheese and bake until hot and bubbly, about 35 minutes.
  • Serve warm with baby carrots, celery sticks, crackers and chips.
