LEMONGRASS PORK PATTIES WITH VIETNAMESE DIPPING SAUCE



Lemongrass Pork Patties With Vietnamese Dipping Sauce image

In Vietnam, little pork patties like this are often grilled over charcoal right on the street and diners sit and eat on (now iconic) little plastic stools. You can serve these patties simply wrapped in the lettuce leaves here, as a snack, or over vermicelli noodles, as a larger meal. WhatÂ’s non-negotiable? Serve with plenty of herbs and the funky, salty, sour, sweet dipping sauce.

Yield Makes 12 2-inch patties

Number Of Ingredients 18

Patties:
1 pound ground pork
3 large cloves of garlic, minced (about 2 tablespoons)
1/4 cup thinly sliced scallion greens (from 3 to 4 scallions)
1 stalk lemongrass, tough outer layers removed, lower 6 inches of tender bulb, finely chopped
1 tablespoon finely chopped fresh ginger
1 1/2 teaspoons fish sauce (such as nuoc mam or nam pla)
1 1/2 teaspoons sugar
1/2 teaspoon freshly ground black pepper
3/4 teaspoon kosher salt
Sauce and assembly:
1 1/2 tablespoons rice vinegar, plus more to taste
1 tablespoons sugar, plus more to taste
1/4 cup water
1 tablespoon plus 1 teaspoon fish sauce
Pinch of crushed red pepper
12 lettuce leaves, such as Boston lettuce or iceberg
Herb sprigs, such as mint, cilantro and Thai basil

Steps:

  • For the patties:
  • In a large bowl, use your hands to mix together all of the ingredients, then form the mixture into twelve 2-inch patties (about 3/4 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm.
  • Preheat the grill for at least 10 minutes and set it up to grill over moderately high heat. Oil the grates. Grill the patties until brown grill marks form on the bottom, about 4 minutes. Flip the patties, then grill for 3 to 4 minutes longer, until cooked through but still juicy.
  • For the sauce and assembly:
  • In a small mixing bowl, whisk the vinegar with the sugar and water. Add the fish sauce, then taste and season with more vinegar or sugar, depending on your taste.
  • Arrange the lettuce leaves and herb sprigs on a platter. To serve, wrap the pork patties and herb sprigs in lettuce and dip in the sauc

1 medium green pepper (sliced)
1 medium sweet red pepper (sliced)
1 medium yellow sweet pepper (sliced)
4 medium potatoes (sliced 1/2-inch thick)
6 medium carrots (sliced 1/4-inch thick)
1 small cabbage (sliced)
2 medium tomatoes (chopped)
1 -1 1/2 lb fully-cooked Polish sausage (cut into 1/2-inch pieced)
1/2 cup butter
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place vegetables in order listed on three pieces of double-layered heavy-duty foil (about 18"x18").
  • Add sausage; dot with butter; sprinkle with salt and pepper.
  • Fold foil around the middle and seal tightly.
  • Grill, covered, over medium heat for 30 minutes; turn and grill another 30 minutes till veggies are tender.

1 lb ground pork
3 chopped garlic cloves
1 teaspoon grated fresh ginger
1 tablespoon soy sauce
1 teaspoon sesame oil
3 carrots, finely diced
3 stalks celery, finely diced
6 green onions, finely diced
1 (12 ounce) package wonton wrappers
water
oil (for deep frying)
your favorite sweet and sour sauce

Steps:

  • Combine pork, garlic, ginger, soy sauce, sesame oil, and vegetables in a bowl.
  • Separate wonton skins.
  • Place a heaping teaspoon of filling in the center of the wonton.
  • Brush water on 2 borders of the skin, covering 1/4 inch from the edge.
  • Fold skin over to form a triangle, sealing edges.
  • Pinch the two long outside points together.
  • Heat oil to 450 degrees and fry 4 to 5 at a time until golden.
  • Drain and serve with sauce.

1 green pepper, chopped
2 cups celery, chopped
3 green onions, chopped
10 1/2 ounces cream of celery soup
10 1/2 ounces mushrooms, sliced
1/4 cup light cream
1 tablespoon soy sauce
1/4 teaspoon pepper
1/2 cup breadcrumbs
2 tablespoons butter, melted

Steps:

  • In a skillet, brown the ground beef.
  • In a bowl, combine rest of ingredients.
  • Topping: Combine breadcrumbs and melted butter and place over meat mixture.
  • Bake in 350 oven for 45 - 1 hour or until heated through.
  • Options: A can of water chestnuts could be added.

1 lb lean ground beef
1 large egg
1 teaspoon Worcestershire sauce
1/4 cup finely chopped onion
1/2 cup sour cream
1/3 cup fine breadcrumbs
3/4 teaspoon salt
1/4 teaspoon pepper
2/3 cup brown sugar, packed
3 tablespoons cornstarch
2 teaspoons dry mustard
1 cup pineapple juice
1/2 cup white vinegar
1/2 cup ketchup
1/2 cup water
1/2 teaspoon soy sauce

Steps:

  • Meatballs: Measure all ingredients into bowl. Mix well. Shape into 1 inch balls. Arrange on baking sheet. Bake at 350oF for 15 minutes.
  • Sweet and Sour Sauce: Stir brown sugar, cornstarch and mustard powder together in saucepan. Stir in pineapple juice. Add vinegar, ketchup, water and soy sauce. Heat and stir until it boils and thickens. Sauce can be served seperately for dipping or can be poured over meatballs to serve from chafing dish.
  • Makes 64 meatballs and 2 1/3 cup sauce.
