FRESH STRAWBERRY CHILLED PIE WITH OREO CRUST
This pie is delicious and so easy to prepare. You can substitute blueberries, etc. if you prefer, but the fresh strawberries are such a delight! Cool whip is used for dietary purposes and adding the extract gives it more homemade flavor. Almond extract would be good also. Enjoy!

Steps:
- 1. Prepare crust first. Combine in a bowl crushed cookie crumbs, butter, and sugar. Mix well with hands to absorb butter. Press into 9" pie plate sprayed with coconut oil or your preferred spray. Chill crust while preparing filling.
- 2. Stir together condensed milk and lemon juice. Fold in cool whip (add more if you prefer) with vanilla extract. Add berries to mixture and pour into pie crust. Top with remaining berries sliced in half. Chill 3 to 4 hours. Serve.
- 3. Note: You can use 1/3 cup of sugar if you prefer less sweetness.
OREO RUM STRAWBERRY PIE
The pie needs to be chilled several hours or overnight before serving.

Steps:
- Boil 1 cup water. Add lemon gelatin mix, stir and put into refrigerator until the mixture begins to firm. Then combine gelatin with cream cheese.
- In separate bowl, whip heavy cream, sugar, vanilla extra and rum extract until smooth. Combine this with gelatin-cream cheese mixture, until it's creamy.
- In pie pan, put down a layer of cookie halves, covered by a layor of cream mixture and then a layer of strawberries. Repeat layer of cookies and layer of cream. Decorate top with more strawberries and the whole cookies.
- Refrigerate for a few hours or overnight. Serve chilled.
