ORANGE LUNCH BOX COOKIES

¾ cup butter
1 cup packed brown sugar
1 egg
1 tablespoon orange zest
1 teaspoon vanilla extract
2 cups sifted all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
½ cup chopped walnuts
¼ cup white sugar

Steps:

  • Cream margarine or butter, add brown sugar gradually. Add unbeaten egg, grated orange rind and vanilla. Beat well.
  • Add flour sifted with baking powder and salt. Mix well. Chill dough until firm.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix granulated sugar and nuts. Roll dough into small balls the size of walnuts. Flatten on greased cookie tin and sprinkle with sugar and nut mixture. Bake for 10 minutes. Cool on racks. Store in tightly covered jar or tin.

1 c powered sugar
1 c white sugar
1 c margerine
1 c vegetable oil
2 eggs beaten
2 tsp orange extract
2 tsp orange peel
4 1/2 c flour, plus 2 tbsp
1 tsp baking soda
1 tsp cream of tarter
1 c chopped walnuts

Steps:

  • 1. In large bowl, add margerine, powdered sugar, white sugar, vegetable oil, orange flavoring, beaten eggs, orange peel, and nuts. Mix well.
  • 2. In another bowl, mix flour, baking soda, cream of tarter and salt. Add dry ingredients into wet mixture, mix well. Chill dough for several hours.
  • 3. I use a cookie scoop to make cookies, then roll into balls, press down gently to flaten. Bake @ 370 degrees for 12 - 15 minutes, just until light brown. Do not over bake! This is a large recipe and can be cut in half if desired. Cookies are delicate and delicious...ENJOY!

1 c butter
1 c packed brown sugar
2/3 c granulated sugar
2 large eggs, at room temperature
1 tsp pure vanilla extract
1 3/4 c all-purpose flour
1 tsp salt
3 1/2 c old fashioned oats
3/4 c dried cranberries
3/4 c chopped walnuts
2 Tbsp orange zest

Steps:

  • 1. Heat oven to 350. In a large bowl, beat butter and sugars on medium speed with electric mixer until creamy. Add eggs, vanilla and orange zest; beat well.
  • 2. Combine flour, oats, baking soda and salt in a separate bowl then add to moist ingredients with wooden spoon. Add walnuts and cranberries and mix.
  • 3. Drop dough by rounded tablespoons onto parchment lined baking sheets. Bake 9-12 minutes or until golden brown. Cool 2 minutes on baking sheets and remove to wire rack to cool completely.
  • 4. Store tightly covered. Makes about 4 dozen cookies.

1/4 cup chopped walnuts
WAFFLES:
1 cup plus 2 tablespoons all-purpose flour
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
2 large eggs
1 cup 2% milk
1/2 cup canned pumpkin
2 tablespoons butter, melted
Maple syrup

Steps:

  • Preheat waffle maker. Mix softened butter and orange zest; stir in walnuts., Whisk together first six waffle ingredients. In another bowl, whisk together eggs, milk, pumpkin and melted butter; add to dry ingredients. Stir just until moistened., Cook waffles according to manufacturer's directions until golden brown. Serve with butter mixture and syrup.

1/2 cup (1 stick) chilled unsalted butter or margarine, cut into pieces
3/4 cup sugar
1 tablespoon frozen orange juice concentrate, thawed
1 1/2 teaspoons grated orange peel
1/2 teaspoon vanilla extract
1 1/2 cups self-rising flour
24 walnut halves (about)

Steps:

  • Preheat oven to 325°F. Grease heavy large baking sheet. Blend butter in processor until smooth. Add sugar and process until fluffy. Mix in orange concentrate, orange peel and vanilla. Add flour and process just until dough comes together, scraping down sides of work bowl occasionally.
  • Form 1 rounded tablespoon of dough into ball. Place on prepared sheet; flatten to 2-inch round. Repeat with remaining dough. Press 1 walnut half firmly onto each round. Bake cookies until just beginning to color, about 12 minutes. Transfer cookies to racks and cool. (Can be made 2 days ahead. Store in airtight container at room temperature.)

1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1/2 cup (packed) golden brown sugar
1 large egg
3/4 cup walnuts, toasted, chopped
Powdered sugar

Steps:

  • Sift flour and salt into medium bowl. Using electric mixer, beat butter and brown sugar in large bowl until light. Beat in egg. Add flour mixture and beat until well blended. Stir in walnuts.
  • Turn dough out onto lightly floured surface. Divide dough in half. Roll each half into 8-inch-long, 1 1/2-inch-wide log. Wrap each log in waxed paper and freeze until firm, about 30 minutes, or refrigerate up to 2 days.
  • Preheat oven to 350°F. Cut dough logs crosswise into 1/3-inch-thick rounds. Place rounds 1 inch apart on 2 ungreased baking sheets. Bake until cookies are light golden around edges, about 15 minutes. Transfer to racks and cool 10 minutes. Place powdered sugar in shallow dish. Turn cookies in powdered sugar to coat completely. Cool on racks. (Can be prepared 3 days ahead. Store in airtight container.)

Notes: I added the 1 tsp. orange extract to the recipe as I truly enjoy the orange flavor! You may freeze the dough up to 1 month. Chill time is not included in prep time.

1 cup butter, softened
3/4 cup packed brown sugar
1 tablespoon freshly grated orange rind
2 cups all-purpose flour
1 teaspoon orange extract
1 egg, beaten
2 tablespoons granulated sugar

Steps:

  • In a large bowl, beat the butter, brown sugar, orange extract and orange rind until fluffy.
  • Stir in the flour to make a make a soft dough.
  • Turn out onto a floured surface; roll into a 1 1/2-inch diameter roll. (stated as printed in recipe). Note: I think it should mean a 10 x 8-inch rectangle and when rolled it will equal about 1 1/2-inch diameter roll.
  • Wrap in plastic wrap; refrigerate until firm -- about 2 hours.
  • Cut log into 1/4-inch slices and place on parchment lined or greased rimless baking sheets.
  • Brush with beaten egg; sprinkle with sugar.
  • If using a convection oven, preheat to 275 degrees. Bake on top, middle and bottom racks. Bake about 30 minutes or until lightly browned.
  • If using a conventional oven, preheat to 300 degrees.
  • Bake on top and bottom thirds of oven; switching and rotating pans halfway through. Bake 30-35 minutes or until lightly browned.

Number Of Ingredients 7

1 1/2 cups butter
1 cup sugar
1 large egg
2 teaspoons vanilla
1/4 teaspoon salt
4 cups unbleached all-purpose flour
1 cup finely ground walnuts

Steps:

  • Preheat oven to 375 degrees F.
  • In a mixing bowl, beat your butter, sugar, egg, vanilla, and salt until light and fluffy.
  • In another bowl combine flour and finely ground walnuts.
  • Little by little add flour mixture to butter mixture; mix until thoroughly combined.
  • Cover your dough and refrigerate it for at least 1 hour.
  • Take a quarter of your dough at a time out of your refrigerator, and roll it out to a quarter inch thickness.
  • With a lightly floured glass rim, or any other desired shape you wish to use, and cut your cookies out and place on an parchment lined cookie sheet and bake in preheated oven for 8-10 minutes until they are just lightly browned.
  • Remove the tray from the oven and immediately remove the cookies to a wire rack to cool completely.
