EGGNOG WAFFLES WITH CRANBERRY ORANGE RUM COMPOTE

Eggnog Waffles with Cranberry Orange Rum Compote image

Another fun way to serve up a meal with the beloved Eggnog included. We sometimes like to have a breakfast meal for dinner and so we have with this one. It is a perfect meal to have for Christmas morning as well. I've included a new topping for this one so now you have a choice of sweet or tangy. Hope you enjoy. This recipe is from:Margie Slivinske,San Jose Easy Meals Examiner.

Categories     Fruit Breakfast

Number Of Ingredients 16

WAFFLES
2 cup(s) all purpose flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) ground cinnamon
1/8 teaspoon(s) fresh ground nutmeg
1/2 teaspoon(s) salt
2 cup(s) eggnog
2 - eggs, separated
1/4 cup(s) (1/2 stick) butter, melted and cooled
TOPPING:CRANBERRY ORANGE GOLD RUM COMPOTE
1 cup(s) cranberries, fresh
1 cup(s) water
1/2 cup(s) sugar
1/4 cup(s) orange juice
3 tablespoon(s) dark gold rum
1 medium orange rind, grated

Steps:

  • In a large mixing bowl, sift together the flour, baking powder, cinnamon, nutmeg and salt. Set aside. In a separate bowl, whisk together the eggnog, egg yolks and melted butter until well combined.
  • Make a well in the center of the flour mixture and pour the eggnog mixture into the well. Stir the dry and wet ingredients together until well combined but don't overmix. You don't want large lumps in the batter but you also don't want to mix it until the batter is too smooth as overmixing can cause the waffles to be heavy and tough. With an electric mixer, beat the egg whites on high until just until they start to form stiff peaks. Using a spatula, gently fold the beaten egg whites into the batter.
  • Spray a waffle iron with cooking spray. Using a ladle, spoon waffle batter in the center of waffle iron. Pour enough batter than it will spread out when the lid is closed but not too much that it overflows.
  • Close the lid after ladling the batter. Most waffles are cooked when the steam stops coming out of the waffle iron, about 3 - 4 minutes. Carefully remove the hot waffle from the iron and pour batter for the next waffle. Repeat until all waffle batter is used. Either serve the hot waffles as they are made or place them on an oven-proof serving platter and keep them warm in oven on low heat till ready to serve.
  • December 18th, 2014 ---- We had these for dinner tonight and I made a more tangy topping with cranberry orange gold rum compote w/chopped pecans.....had I had whipped topping I would of added it. Yumm

ORANGE PECAN WAFFLES

Orange Pecan Waffles image

Orange flavored waffles. I found this recipe in a Round Waffle Bakers leaflet. I have not tried this recipe, but I'm posting this for safe keeping. This recipe did not give serving size or cook time. When I made this recipe I used Splenda in place of the sugar, the butter, I only used the grated zest of one orange, I also added 1 scoop of protein powder. I thought these were a bit heavy, so is the batter and when I scooped out the batter due to it being so thick I had to spread it. When I made these waffles I got 6 square waffles. Overall I thought these had great flavor.

ORANGE CINNAMON ROLL WAFFLES - DEE DEE'S

Orange Cinnamon Roll Waffles - Dee Dee's image

These waffles are just oozing with creamy sweetness with a nice pleasant hint of orange. If you love cinnamon rolls, I'm positive you will love these waffles. I found a wonderful recipe for Cinnamon Roll Waffles, tweaked it a little to add the orange flavor that we like and came up with this recipe. Adapted from Recipe Girl.

Categories     Waffles

Time 10m

Number Of Ingredients 20

WAFFLES:
1 3/4 c all purpose flour
2 Tbsp sugar
1/2 Tbsp grated orange peel
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 large eggs
2 c buttermilk
1/4 c canola oil
1 tsp orange extract
CINNAMON TOPPING
1/2 c butter, melted
3/4 c brown sugar, firmly packed
1/2 Tbsp ground cinnamon
CREAM CHEESE TOPPING
4 Tbsp butter, room temperature
2 oz cream cheese, room temperature
3/4 c powdered sugar
1/2 tsp orange extract

Steps:

  • 1. Preheat Waffle Iron. NOTE: The waffle iron I used is a Krups Belgian Waffle Iron. This recipe will make a lot more than 8 with a smaller waffle iron.
  • 2. In a medium bowl, whisk together flour, sugar, orange peel, baking powder, baking soda and salt; make a well in the center of mixture; set aside.
  • 3. In a separate bowl, whisk together eggs, buttermilk, oil and orange extract. Pour this mixture into bowl with dry ingredients. Stir just until moistened; batter will be slighly lumpy.
  • 4. Spray waffle iron with nonstick spray (I used PAM). Pour batter into waffle iron grid and close lid. Following your waffle iron instructions, bake waffles until completely done. NOTE: My waffle iron instruction say waffles are done when they stop steaming. Repeat with remaining batter. Keep waffles warm in a 200 degree oven until ready to serve.
  • 5. PREPARE CINNAMON TOPPING: In a medium bowl, mix melted butter, brown sugar and cinnamon. Pour this mixture into a small ziploc bag, seal and set aside.
  • 6. PREPARE CREAM CHEESE TOPPING: In a medium, micorowave-safe bowl (I used a 2 cup pyrex measuring cup) heat butter and cream cheese for about 30 seconds, adding 15 seconds as needed; just until melted. Whisk in powdered sugar and orange extract.
  • 7. WHEN READY TO SERVE: Place waffles on plates, snip a small hole in the bottom corner of ziploc bag and drizzle cinnamon topping over warm waffles, then drizzle cream cheese topping using as much or as little as you like. Serve immediatley.
  • 8. NOTE: I could only eat one of these! I cooled the other waffles and put in the freezer for a quick breakfast for another day. Also put cream cheese topping in a ziploc bag and froze both toppings for later use.

ORANGE NUT WAFFLES WITH ORANGE SYRUP

All thoughts of calories must be set aside while you plunge into these interesting special-day waffles. Orange Nut Waffles with Orange Syrup were originally printed in Bon Appetit (December 1981). I haven't tried these waffles yet but am planning on trying this very soon. When I make them I will be omitting the liquor in the syrup, replacing with juice.
