- Preheat oven to 350°F Place muffin papers in muffin tins or spray tins with vegetable oil.
- Drain oranges and pat dry with paper towels. Set aside.
- Whisk together flour, baking powder, salt, nutmeg, allspice, and sugar. Cut in shortening with a pastry blender or fork until mixture resembles coarse crumbs.
- Whisk together egg and milk. Pour into flour mixture and stir with a fork just until combined. Do not overmix. Batter will be thick. (If your batter is crumbly, you may add a SMALL splash of milk). Carefully fold in mandarin oranges.
- Fill muffin tins 3/4 full. Bake 20 to 25 minutes until center tests done and muffins are lightly golden.
- While muffins are baking, place melted butter in a small bowl. In another small bowl, whisk together sugar and cinnamon.
- When muffins are done, dip each hot muffin first into the butter and then into the cinnamon sugar. Let cool.

- Spray the grill rack with nonstick spray; prepare the grill.
- PREPARE GLAZE:.
- In a small saucepan, bring the marmalade, lime juice, and shallot to a boil. Boil 2 minutes. Allow to cool, then transfer half of the glaze to a small bowl.
- PREPARE RUB:.
- In a small bowl, blend the chili powder, sugar, 1/2 teaspoon salt, and the Chinese five-spice powder.
- PREPARE PORK:.
- Rub the rub all over the pork.
- Grill 5 inches from the heat, turning and brushing with half of the glaze, until an instant-read thermometer inserted in the center of the pork reaches 160°F, 20-25 minutes.
- PREPARE SUGAR-SNAP PEAS:.
- In a saucepan of boiling water, cook the sugar-snaps until crisp-tender.
- Rinse under cold water and drain.
- Toss the sugar-snap peas with the oil, vinegar, ginger, the remaining 1/4 teaspoon salt, and the pepper. (Be sure to add the vinegar to the sugar-snap peas just before serving, or the veggie's color will dull.).
- ASSEMBLE FOR SERVING:.
- Gently warm the remaining glaze over low heat.
- Slice the tenderloin, drizzle with the glaze, and serve with the sugar-snap peas.

BOBBY FLAY'S STICKY BUNS WITH ORANGE-HONEY-BROWN SUGAR GLAZE AND TOASTED ALMONDS

- To make the dough, sprinkle the yeast and the pinch of granulated sugar over the warm milk in a small bowl; set aside until foamy, about 5 minutes.
- Melt the butter in a small saucepan. Whisk the butter, vanilla, and egg yolk into the yeast.
- Whisk the flour, remaining 1/4 cup granulated sugar, and the salt together in a large bowl. Stir in the yeast mixture to make a sticky dough. Knead the dough on a floured work surface until it is soft and elastic, 6 to 8 minutes. Shape it into a ball and brush it with a little melted butter. Place in a bowl, cover, and let rise until doubled in size, about 1 1/2 hours.
- Remove the dough from the bowl and gently knead for a few minutes to deflate. Re-form it into a ball. Return it to the bowl, cover with buttered plastic wrap, and refrigerate for 4 hours.

I discovered this powdered sugar glaze when I ran out of milk one day and needed to whip up a glaze for my bundt cake. It goes great with chocolate bundt cakes or orange bundt cakes even just as a great glaze on sugar cookies if you're looking for that little something different.
