I've been trying to come up with different ways to have citrus with leafy greens & this is an excellent option! When Vitamin C is consumed with iron it makes the iron much easier to absorb. Tons of people are iron deficient & not because they don't take in enough iron....rather that they are not absorbing it properly (You can pop iron pills all day long but if your body isn't doing anything with it your wasting your time & money!!). Citric (citrus fruit) & malic (apples & pears) acid increase the absorb of non-heme iron (dark leafy greens) which is the best form of iron. Soooo pour this lovely goodness all over a huge plate of dark leafy greens!! Kale, romaine, baby spinach....whatever your fancy!!! (LFRV in moderation + leave out oil & salt)

1 small avocado
1 1/4 cups fresh orange juice
1/4 cup fresh lemon juice or 1/4 cup lime juice
1/4 cup basil, packed
1/4 cup olive oil
1/2 teaspoon salt

Steps:

  • Blend all ingredients together until smooth!
  • Pour over dark leafy greens & kiss iron absorption problems good bye!

3 oranges
1/2 avocado
2 sprigs dill
1/2 head napa cabbage, finely sliced (about 5 cups)
2 tomatoes, sliced
12 romaine leaves

Steps:

  • Slice the peel off of the 3 oranges and then section them out and get rid of any seeds. Chope one orange into chunks and place the other two into the blender.
  • Add the avocado & dill to the oranges in the blender and process until smooth.
  • Pour the dressing over the cabbage, toss, add in the additional orange, and toss again.
  • Spoon this mixture into romaine leaves, top with tomato slices, wrap up and enjoy!
