3 oranges
1/2 avocado
2 sprigs dill
1/2 head napa cabbage, finely sliced (about 5 cups)
2 tomatoes, sliced
12 romaine leaves

Steps:

  • Slice the peel off of the 3 oranges and then section them out and get rid of any seeds. Chope one orange into chunks and place the other two into the blender.
  • Add the avocado & dill to the oranges in the blender and process until smooth.
  • Pour the dressing over the cabbage, toss, add in the additional orange, and toss again.
  • Spoon this mixture into romaine leaves, top with tomato slices, wrap up and enjoy!

(LFRV compliant!) A very yummy treat I like to enjoy which came from Dr. Graham's book The 80/10/10 Diet. This makes a great breakfast, lunch or even dinner :) Pretty much whenever I feel like eating it. Low fat raw vegan & properly combined!! Sometimes I get lazy & just put all of this in the blender to make a smoothie.

3 ripe bananas
3 dates, soaked
3 tablespoons raw carob powder
water

Steps:

  • Slice up all the bananas and place all but half of one into a bowl.
  • Put the 1/2 banana, dates, carob powder into a processor or blender and begin to process while adding water. Add just enough water to get it moving and smooth.
  • Pour this over bananas & enjoy!

2 dozen medjool dates (might need more or less depending on size)
7 ripe bananas
9 ripe persimmons (the inside should be gooey)
1 cup blueberries or 1 cup blackberry

Steps:

  • Halve the dates and remove the pits. Place dates with the cut side up (makes it harder to get down because they are sticky but will be easier scooping it back up later) tightly covering the bottom of a pie plate.
  • Mash or blend the bananas until they are the consistency of custard then cover the dates.
  • Remove the skins from the persimmons and cover the bananas with the jelly-o like interior.
  • Decorate with blueberries or black berries & ENJOY!

I've been trying to come up with different ways to have citrus with leafy greens & this is an excellent option! When Vitamin C is consumed with iron it makes the iron much easier to absorb. Tons of people are iron deficient & not because they don't take in enough iron....rather that they are not absorbing it properly (You can pop iron pills all day long but if your body isn't doing anything with it your wasting your time & money!!). Citric (citrus fruit) & malic (apples & pears) acid increase the absorb of non-heme iron (dark leafy greens) which is the best form of iron. Soooo pour this lovely goodness all over a huge plate of dark leafy greens!! Kale, romaine, baby spinach....whatever your fancy!!! (LFRV in moderation + leave out oil & salt)
