1/4 cup slivered almonds
2 orange roughy, cod or haddock fillets (6 ounces each)
2 teaspoons butter
2 tablespoons white wine or chicken broth
2 tablespoons lemon juice
2 drops hot pepper sauce
Dash salt
Dash paprika

Steps:

  • Place almonds in a small microwave-safe dish. Cover and microwave on high for 1-2 minutes or until lightly toasted. , Place the fillets in a 9-in. microwave-safe pie plate. Dot with butter and sprinkle with almonds. Combine the remaining ingredients; pour over fillets. Cover and microwave at 70% power for 5 minutes or until fish flakes easily with a fork.

From when I was expecting my first baby, Alex, to well past the birth of my second child, Paige, I used to meet my grandmother, Ga-Ga, at Luby's Cafeteria in my hometown for lunch on an almost monthly basis. Luby's had a mega-long (it seemed like a football field, but probably wasn't quite) serving line of prefilled small plates holding such comfort foods as Jell-O salad, macaroni and cheese, Salisbury steak, fried chicken, mashed potatoes, and slices of pie as far as the eye could see. But for me, the single most memorable dish at Luby's was their gloriously consistent Fish Almondine. No matter which seventeen sides I selected (okay, sometimes it was eighteen), Fish Almondine was always the main course for me. This is my best attempt to re-create the Luby's magic. (I love and miss you, Ga-Ga.)

3/4 cup panko breadcrumbs
1/3 cup sliced almonds
3 tablespoons salted butter, melted
2 tablespoons chopped parsley
Kosher salt and black pepper
1/3 cup all-purpose flour
Six 6-ounce cod fillets
1/2 cup mayonnaise
Juice of 1 lemon

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small bowl, combine the panko and almonds. Drizzle in the melted butter and toss until well combined.
  • Add the parsley and toss it in . . .
  • Then stir in 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Put the flour in a shallow dish and add a pinch each of salt and pepper. Stir to combine.
  • Dredge both sides of the fish in the flour, shaking off any excess.
  • Spread a generous tablespoon of mayonnaise over each piece of fish . . .
  • And sprinkle the crumb mixture on top, pressing lightly to make sure it sticks.
  • Bake until the crumbs are golden and the fish is flaky, 16 to 18 minutes. Squeeze the lemon juice on top and serve.

1/4 cup almonds (slivered-I use sunkist Almond Accents-roasted garlic flavor)
1/4 cup butter
1 lb orange roughy fillet
1/4 teaspoon dried parsley
salt (sea salt)
1/4 teaspoon lemon pepper
1/4 teaspoon dill weed
2 tablespoons white wine
1/4 teaspoon paprika

Steps:

  • In an 8" square baking dish, place almonds ( I use Sunkist Almond Accents found in the Salad Section) and butter, microwave on high for 5-6 minutes,remove almonds,set aside.
  • Place fish in the same dish, turning to coat both sides.
  • Sprinkle filets with parsley,salt,lemon pepper, dillweed, paprika and almonds; pour wine into dish without touching filets.
  • In the mean time preheat oven to 350 degrees; bake uncovered 14-18 minute or untill filets flake. ( As usual with delicate fish -- keep checking to make sure you don't over cook).

I love buttery, lemony white fish so I devised this simple recipe. For this dish, you can use roughy, tilapia, whitefish, halibut.... any nice white fish fillet. And this is a great way for NEWBIES to seafood to break in. The technique is pretty forgiving of mistakes and the fish WILL be done, but not overcooked. Enjoy!

4 orange roughy fillets
8 tablespoons butter, melted (no margarine!)
2 lemons, halved
1/2 teaspoon paprika
8 fresh parsley sprigs (curly Italian parsley is best)
cooking spray

Steps:

  • Pull off four sheets of good quality aluminum foil, each about 24 inches long. Double each one over so it's a foot long and spray with the cooking spray.
  • Pre-heat the oven to 375-degrees F.
  • Lay out a fillet on each sheet of foil and pull the sides up a bit so that it will hold liquid.
  • Squeeze a half lemon over each fillet. Cut up the spent lemons into wedges and put the pieces around the fish.
  • Pour the melted butter equally over each fillet. Lightly dust the top of each fillet with the paprika. Instead of paprika, you could substitute Old Bay Seasoning, which yields an excellent flavor. In any case, you may not need all the spice, depending on the size of your fillets.
  • Close the foil and make a seal. Place the closed foil bowls into the oven, middle rack, and bake for 15 minutes.
  • Revove the foil bowls from the oven, carefully open them to expose the filets and place them all on a sheet pan. Re-set the oven to "broil" (on "high" if there is a setting), and return the fish to the oven just above the middle rack. Broil for just a few minutes until you see very slight browning, no more than 5 minutes.
  • Garnish with the parsley sprigs and serve hot with basmati rice on the side. (See: Recipe #217802 ). You can just leave the fish on the foil and place it on serving plates if you wish.

½ lemon
½ cup grated Parmesan cheese
¼ cup butter, softened
¼ cup prepared Dijon mustard mayonnaise blend
1 large clove garlic, pressed
¼ pinch salt

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place the orange roughy filets on the broiler pan and squeeze the lemon over the top of the fish. Broil the filets in the preheated oven for about 6 to 8 minutes.

this is my all time favorite "baked fish" dish. we served a prepared "cod almondine" when I worked at the school, and I applied what I thought to orange roughy. It is delicious.

4 oz orange roughy filets ( or more)
1 slice day old bread, for crumbs
1/2 tsp each garlic salt, pepper, salt
1 Tbsp lemon juice
1 tsp melted margarine
1/8 c thin almond slices

Steps:

  • 1. spray a shallow baking pan with cooking spray, or use non-stick foil (which I prefer)
  • 2. lay fillet on pan. sprinkle lemon juice over fillet, then the seasonings.
  • 3. melt margarine and toss with bread crumbs. sprinkle over fillet.
  • 4. place almonds on top of crumbs.
  • 5. bake at 350 degrees, covered with foil the first 10 minutes, then remove foil and bake an additional 20 minutes until fish is flaky and crumbs are golden.
  • 6. NOTE:
  • 7. you can use prepared bread crumbs and also use the new "butter spray" if you are watching your calories more closely. I've used both.And this works with any "baked fish" tilapia, cod, alaskan pollock.
