3 bunches carrots, peeled
2 tablespoons unsalted butter
2 tablespoons honey
Kosher salt
1 teaspoon minced fresh ginger
1 teaspoon grated orange zest
1/2 cup freshly squeezed orange juice
1/2 teaspoon freshly ground black pepper

Steps:

  • Cut the carrots diagonally in 1-inch-thick slices. You should have about 5 cups of carrots. Place 1/2 cup water, the butter, honey, 2 teaspoons of salt, and the ginger in a large saute pan and bring to a boil. Add the carrots, cover the pan, and simmer over medium-low heat for 5 minutes. Remove the lid and continue to cook for about 20 minutes, or until all the water has evaporated. You may want to raise the heat for the last 5 minutes.
  • Add the orange zest and orange juice to the pan, tossing with the carrots. Simmer uncovered for about 5 minutes, until the carrots are al dente (tender but still resistant when you bite) and the sauce glazes the carrots. Add the pepper and another teaspoon of salt, to taste.

2 pounds baby carrots
1/4 cup finely chopped green onions
1/4 cup butter
1/4 cup honey
1 teaspoon grated orange zest
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon pepper
2 teaspoons cornstarch
1/2 cup orange juice
4 teaspoons minced fresh mint or minced fresh parsley

Steps:

  • Place 1 in. of water in a skillet; add carrots. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until crisp-tender. Drain and set aside., In the same skillet, saute green onions in butter until tender. Stir in the honey, orange zest, salt, cinnamon and pepper. Combine cornstarch and orange juice until smooth; stir into onion mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened., Return carrots to the pan. Cook and stir for 2 minutes or until heated through. Sprinkle with mint.

1 1/2 pounds slender baby carrots, trimmed, scrubbed
2 tablespoons extra-virgin olive oil plus additional for drizzling
1 teaspoon (packed) finely grated orange peel
1/3 cup fresh orange juice
1 1/2 tablespoons honey
Fleur de sel or Maldon sea salt*
*Sea salts are available at some supermarkets and specialty foods stores and online from chefshop.com.

Steps:

  • Preheat oven to 400°F. Arrange carrots in single layer on rimmed baking sheet. Add 2 tablespoons olive oil and orange peel; sprinkle with salt and pepper and toss. Pour orange juice over; cover tightly with foil. Roast until crisp-tender, about 10 minutes. Remove foil. Increase oven to 450°F. Drizzle honey over carrots. Roast uncovered until carrots are tender and browned in spots, about 10 minutes longer. Transfer carrots and any juices to platter. Drizzle lightly with additional olive oil. Sprinkle with fleur de sel.

1/4 cup orange juice
1 Tbsp. brown sugar
2 Tbsp. honey

1 Tbsp. finely chopped fresh parsley

Steps:

  • Cook carrots in boiling water in large saucepan 8 to 10 min. or until crisp-tender. Drain, reserving 1/4 cup cooking water.
  • Pour reserved cooking water into large skillet. Add orange juice, sugar and honey; stir. Bring just to boil, stirring occasionally. Add dry gelatin mix; stir 2 min. until completely dissolved. Add butter and carrots; cook 2 to 3 min. or until carrots are glazed and tender, stirring frequently.
  • Use slotted spoon to transfer carrots to platter; top with sauce. Sprinkle with parsley.

2 large oranges
1 tsp orange zest
1 1/2 lb carrots, peeled and cut 1/2-inch thick slices
2 Tbsp butter
1 tsp salt
2 Tbsp honey
1 tsp fresh thyme leaves, minced or 1/4 tsp dried thyme

Steps:

  • 1. Grate 1/2 tsp orange zest and squeeze 3/4 cup juice from oranges. Stir carrots, 1 tbsp butter, orange juice, and salt in pot. Set to STOVETOP HIGH; cover and cook 10 minutes or until the carrots are tender. Stir them occasionally.
  • 2. Once carrots are cooked tender uncover pot. Cook uncovered till liquid is reduced to about 2 tablespoons. Stir in 1 tbsp of butter, honey, 1/2 tsp zest and thyme. Cook an addt'l 3-5 minutes, stirring often.

The Cumin Scented Carrots
1 ½-pounds baby carrots,
peeled
2 tablespoons butter
1 teaspoon honey
1 teaspoon ground cumin
pinch cayenne
½ lemon
fine sea salt and freshly
ground pepper
The Spiced Duck Breast
½ teaspoon ground star anise
½ teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground white
pepper
pinch cayenne
4 (6- to 8-ounce) boneless duck
breast halves, trimmed
1 tablespoon canola oil
2 shallots, peeled and thinly
sliced
1 tablespoon honey
½ cup orange juice
¼ cup lemon juice
2 tablespoons butter
fine sea salt

Steps:

  • Place the baby carrots in a large skilled with butter, honey and about ⅓ cup water. Heat over medium high heat and season the carrots with cumin, cayenne, salt and pepper and cook stirring occasionally, until lightly caramelized and tender, about 20 minutes. While the carrots are cooking, stir together the star anise, cumin, coriander and white pepper in small bowl. Season the duck breasts on both sides with salt, then crust the skin side of the duck breasts with the spice mixture. Divide the canola oil into 2 sauté pans and heat over medium heat. When the pans are hot, gently place two duck breasts, skin side down in each pan. Lower the heat to medium low and cook until skin is golden brown and crispy, about 12-15 minutes. Turn the duck breasts over and continue cooking for 3-4 minutes for medium rare. Transfer the duck breasts to the cutting board to rest. Return the pan to the stove. Over medium heat, divide the shallots between the pans and cook until soft. Add the honey, orange juice and lemon juice and reduce by half. Finish the pan sauce by whisking in the butter, seasoning to taste with salt then combine the sauce into one pan. Thinly slice the duck breasts crosswise. Place the duck slices on the plates, spoon some of the glaze over the duck and serve with the roasted carrots.
