Easy Orange Cranberry Glaze image

A good, easy, yummy glaze that can be used on chicken or turkey. I came up with this a few years ago for Thanksgiving, to change up the old boring turkey. Everyone loved it. There was no left-over turkey that year.

1 cup orange juice
1 cup packed dark brown sugar
1 (16 ounce) can jellied cranberry sauce
1 (3 inch) cinnamon stick

Steps:

  • Mix together the orange juice, brown sugar, and cranberry sauce in a saucepan, stirring to dissolve the sugar. Bring the mixture to a boil, drop in the cinnamon stick, and reduce heat to a simmer. Cook, stirring frequently, until the cranberry sauce is melted and the glaze is hot and bubbling, about 10 minutes.
  • To use: brush the glaze all over a roasted turkey during the last 45 minutes of cooking. Return the turkey to the oven and bake for 10 to 15 minutes to set the glaze. Repeat several more times before the end of cooking time.

Yummy and easy. I also like I have a new use for my 6 miniature fluted tube pan. You probably have all these ingredients in the house.

6 Tbsp frozen (thawed) orange juice concentrate
1/4 c sweetened dried cranberries
1/4 c coarsely chopped walnuts or pecans
1/2 c butter, melted (don't use margarine or spreads)
1/2 c sugar
1 tsp cinnamon
1 can(s) grands flaky refrigerated original or buttermilk biscuits

Steps:

  • 1. Heat oven to 350. Spray 6 miniature fluted tube cups generously with cooking spray. Place 1 tablespoon orange juice concentrate in each cup. Sprinkle evenly with cranberries and nuts.
  • 2. In shallow bowl, place melted butter; in another shallow bowl mix together sugar and cinnamon. Separate dough into 8 biscuits; cut each into 3 wedge shaped pieces. Dip each biscuit piece into butter; lightly coat with sugar mixture. Place 4 biscuit pieces, point side down, over mixture in each cup; press lightly. Drizzle any remaining butter evenly over rolls.
  • 3. Bake 18-23 minutes or until golden brown. Invert pan onto serving platter or cookie sheet; leave pan over rolls for 1 minute. Carefully remove pan. I any topping remains in pan, spoon over rolls. Serve warm.
