ORANGE CRISPIES

Steps:
- In a small bowl, cream shortening and sugar until light and fluffy. Beat in the egg, extract and salt. Add flour; mix well. Drop rounded tablespoonfuls of dough 2 in. apart onto ungreased baking sheets., Bake at 375° until edges begin to brown, about 10 minutes. Cool for 1-2 minutes; remove from pans to wire racks. Sprinkle warm cookies with sugar.

It seems we've all been in the position of "between paychecks" and the children tell you (usually around 10pm) that they need something for the morning school bake sale. At least, this happens to me all the time. So, on the last call for bake sale items, I took what I had in the kitchen and whipped up a batch of cookies. WHOA!!!!...

- 1. Preheat oven to 350-degrees F.
- 2. Cream butter, sugar, and orange concentrate in a medium bowl. Slowly stir in flour and mix until well-blended. Drop by teaspoonfuls onto cookie sheets.
- 3. Bake for 12 - 15 minutes or until light golden brown. Cool on wire rakcs. Makes 3 dozen cookies.
