Indonesian Rice Salad With Orange-Sesame-Cilantro Dressing image

A potluck or picnic favorite. You will like the subtle flavors. If you don't like Cilantro, leave it out.

1 cup uncooked long-grain rice
1 (8 ounce) can pineapple chunks, drained
1/4 cup dry-roasted cashews or 1/4 cup peanuts, chopped
1/3 cup raisins
3 green onions, thinly sliced
1 small red bell pepper, diced in 1/2 inch pieces
1 small green bell pepper, diced in 1/2 inch pieces
1 stalk celery, cut in half down lengthwise,and thinly sliced
1 cup fresh bean sprout
1/2 cup fresh orange juice
2 tablespoons low sodium soy sauce
2 teaspoons dark sesame oil
1 tablespoon peeled and minced fresh ginger
1 teaspoon grated fresh orange zest
1 clove garlic, minced
1/4 teaspoon red pepper flakes
1 tablespoon cilantro, minced

Steps:

  • Cook rice according to directions and place in a bowl to cool to room temperature.
  • When cool, add pineapple, cashews, raisins, green onions, red and green bell peppers, celery, bean sprouts and cilantro.
  • In a jar, combine dressing ingredients and shake to mix.
  • If the salad is served immediately, drizzle all of the dressing over the salad.
  • If salad is to be served later, use only half of dressing over salad, then at the last minute add the other half of dressing, stirring to coat.
  • May be served room temperature or chilled.

vegetable oil cooking spray
1/2 cup green onion, sliced
1 cup long grain rice
1 small orange, zest of
2 1/4 cups water
2 tablespoons fresh cilantro, chopped
salt and pepper

Steps:

  • Spray medium saucepan with cooking spray; heat over medium heat until hot.
  • Saute onions until tender, 3-5 minutes.
  • Add rice and orange zest to saucepan; cook over medium heat until rice is lightly browned, 2-3 minutes, stirring frequently.
  • Add water to saucepan and heat to boiling; reduce heat and simmer, covered, until rice is tender, 20-25 minutes.
  • Stir in cilantro and season to taste with salt and pepper.

2 teaspoons butter
½ cup diced onion
1 cup uncooked long grain white rice
2 teaspoons ground cumin
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon ground black pepper
⅛ teaspoon cayenne pepper
salt to taste
1 ½ cups orange juice
½ cup chicken broth
½ cup chopped fresh cilantro

Steps:

  • Melt the butter in a saucepan over medium-high heat. Stir in onion, and cook until tender. Mix in rice, and season with cumin, garlic powder, onion powder, pepper, cayenne pepper, and salt. Cook and stir until rice is golden brown. Pour in orange juice and broth, and bring to a boil. Reduce heat to low, cover and simmer 20 minutes.
  • Remove cooked rice from heat, and gently mix in cilantro to serve.

1 teaspoon dried ancho chile powder or 1 teaspoon mild chili powder
1/2 teaspoon ground cumin
1/2 teaspoon sea salt, divided
1 teaspoon olive oil or 1 teaspoon vegetable oil
4 (1/4 lb) boneless skinless chicken breast, rinsed and patted dry, pounded 1/2-inch thick
1 medium navel oranges, juice of or 1/3 cup orange juice
2 tablespoons pure maple syrup or 2 tablespoons corn syrup
1 tablespoon chopped chipotle chile in adobo
1 teaspoon orange zest
2 cups cooked white rice or 2 cups brown rice
1/4 cup chopped cilantro leaf

Steps:

  • In a small bowl, combine chile powder, cumin and 1/4 tsp salt. Heat oil in a large nonstick skillet to medium-high. Tilt skillet to coat bottom lightly. Season both sides of chicken with chile-cumin mixture and cook for 3 minutes per side or until no longer pink in center. Remove from skillet and set aside.
  • Add orange juice and maple syrup to juice and bits left in skillet and cook for 1 minute to thicken slightly (until it measures 1/4 cup liquid), stirring constantly. Remove from heat, stir in chipotle chiles in adobo sauce and orange zest. Add chicken back to skillet, return to heat and cook for 1 minute on medium-high, turning constantly.
  • In a medium bowl, combine rice, cilantro and remaining 1/4 tsp salt. Serve chicken over rice and spoon any excess glaze over top chicken pieces.
