This recipe started out as the Lemon Blossoms from "Paula Deen & Friends" cookbook. I didn't have the lemon or lemon pudding called for so I improvised. A word of warning - do not try this with a hand mixer. The dough is unbelievably stiff and I nearly burned out the motor on mine. The finished cupcakes are light as a feather though. I was truly amazed that such a thick batter would bake up so light.

1 (18 1/2 ounce) package orange cake mix
1 (3 1/2 ounce) package vanilla instant pudding mix
4 large eggs
3/4 cup vegetable oil
4 cups confectioners' sugar
1/3 cup water
3 tablespoons vegetable oil
1 -2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees. Spray miniature muffin tins with cooking spray.
  • Combine the cake mix, pudding mix, eggs and oil and blend with a stand mixer for about 2 minutes or until smooth.
  • Pour about a tablespoon of batter into each spot in the muffin tin. I used a mini ice cream scoop about the size of a melon baller.
  • Bake for about 12 minutes. Remove from pan immediately and set aside to cool slightly.
  • Sift the confectioner's sugar into a mixing bowl. Add the water, oil and vanilla and mix until smooth.
  • Dip the warm cupcakes into the glaze and place them on a wire rack with waxed paper underneath to cool and for the glaze to set. This could take a while especially if it's humid.
  • When the glaze has set completely the cupcakes can be stored in an airtight container until it's time to serve them.

1 can (12.4 oz.) Pillsbury® refrigerated cinnamon rolls with icing
1/2 cup crushed pineapple (from 8-oz. can), well drained on paper towels
1/3 cup SMUCKER'S® Orange Marmalade
4 oz cream cheese (from 8-oz. package), softened

Steps:

  • Heat oven to 350 degrees F. High Altitude (3500-6500 ft): Heat oven to 375 degrees F.
  • Spray 8 (2 3/4x1 1/4-inch) muffin cups with CRISCO® Original No-Stick Cooking Spray. Separate dough into 8 rolls; set icing aside. Cut each roll into quarters; place 4 quarters, points up and separated slightly, in each muffin cup.
  • In small bowl, stir together pineapple, marmalade and cream cheese. Place 2 tablespoons mixture into center of dough in each cup.
  • Bake 17 to 22 minutes or until light golden brown. High Altitude (3500-6500 ft): Bake 20 to 23 minutes.
  • Cool in pan on wire rack 5 minutes. Run knife around edges of muffin cups; remove rolls from cups and place on serving plate. Remove cover from icing; microwave on Medium (50%) 10 to 15 seconds or until thin enough to drizzle. Drizzle icing over warm rolls. Serve warm.

1 can(s) (12.4 oz) pillsbury refrigerated cinnamon rolls with icing
1/2 c crushed pineapple, well drained on paper towels
1/3 c sweet orange marmalade, (i use smuckers)
4 oz cream cheese, room temperature

Steps:

  • 1. Heat oven to 350 degrees. Spray muffin pan with cooking spray. Separate dough into 8 rolls. Cut each roll into 2 pieces. Place dough in muffin cups, points up, slightly separated.
  • 2. In small bowl, mix pineapple, marmalade, and cream cheese together. Place 2 tablespoons into center of dough.
  • 3. Bake for 17-22 minutes, until browned. Cool in pan for 5 minutes. Run a knife around outside of each muffin to loosen and remove from pan. Place muffins on a serving plate.
  • 4. Remove cover from icing. Microwave on 50% power for 10 seconds, or until thin enough to drizzle over warm muffins. Serve immediately and enjoy.

The original recipe comes from a Better Homes and Gardens cookie catalog, however, it is only for the cookie base. These are actually a lot easier than they seem but totally worth the wait! Any kind of jam or jelly is delicious with this recipe if you aren't thrilled with oranges, but the favorite around here orange.

1 c butter
2/3 c granulated sugar
1/2 tsp vanilla
2 c all-purpose flour
1 c orange marmalade

Steps:

  • 1. In a mixing bowl, beat butter with an electric mixer for about 30 seconds. Add sugar and vanilla and beat until well mixed. Beat in as much flour as you can with the electric mixer, then stir in the rest with a wooden spoon. Cover and chill approx 1 hour, it will be easy to handle.
  • 2. Preheat oven to 350 degrees and lightly grease a mini-cupcake pan. Shape dough into approx 1 inch balls and drop into the cupcake pan slots. Using your index finger or the back of a small spoon, make an indentation in the center of the cookie dough so that it comes up even to the top of the muffin cup. Make sure not to push the indentation too far down, so there is enough dough all around the cup. Spoon approx 3/4 to 1 teaspoon of orange marmalade into each indentation, so it is even with top of the muffin cup.
  • 3. Bake approx 10-12 minutes, or until the edges of the cookie are turning golden brown. Let cool in the pan for about 5 minutes before carefully removing with a knife. They should come right out. Cool before serving, the marmalade will stay fairly hot after the cookie crust has cooled. Makes about 2 1/2 - 3 dozen blossoms.

1 box powdered sugar

Steps:

  • Make the box of cake mix as directed. Pour into mini-muffin pans.
  • Bake at 350°F for about 10 minutes.
  • Mix the juices and powdered sugar. Remove the muffins from the tins and drop in the juice mixture (icing). Let them dry or cool on a wire rack. They are really good warm as well.

This recipe freezes very well. Freeze by the dozen. Great Christmas tradition treat when I was little and now the same for my boys.

1 box yellow cake mix
1 lb confectioners' sugar
2 lemons, juiced
1 grated rind of lemon, zest
2 garted rind of orages, zest

Steps:

  • 1. Mix cake mix according to directions.
  • 2. Put 1 TBS cake mix into each section of mini muffin pan with cute muffin liners.
  • 3. Set to the side: Mix confectioner's sugar with the lemon and orange juice + rinds. Mixture will be very thin.
  • 4. Bake cake mix 350 degrees until muffins are done.
  • 5. Dip cooled cakes into the glaze.

1 package Duncan Hines yellow cake mix
2 cups sugar
2 oranges, juice and rind
2 lemons, juice and rind

Steps:

  • Prepare cake mix as directed. Bake in tiny muffin tins that have been sprayed with vegetable oil. Mix together sugar and juice and rinds of oranges and lemons. Stir until sugar is dissolved. While muffins are still warm, dip each muffin into sugar/juice mixture. Cool muffins on cookie racks. These freeze well.
