Pineapple-Orange Glazed Ham is a traditional Holiday gathering entree your guests will love. While this main course is typically served for the holidays, it's actually perfect anytime and leftovers are easily integrated into delicious weeknight meals that will satisfy your whole family.

10 lbs Ham (, whole or half (we used 10 lb ham))
Cloves (, whole (optional))
3 cups Brown Sugar (, packed)
2 cups Pineapple-Orange juice (, or plain OJ)
3 Tablespoons Apple Cider Vinegar ((more or less to taste))

Steps:

  • Preheat the oven to 325 degrees F.
  • Score the surface of the ham in a diamond pattern about 1/8-inch deep. Place cloves in the middle of each diamond (optional). Place the ham in a large roasting pan equipt with a roasting rack, cover, and tent with foil, and then bake for 20-minutes per pound or according to the package directions.
  • Heat the brown sugar, vinegar, and juice in a small saucepan until bubbly. Reduce heat to a simmer and cook until thickened, about 15 minutes.After about 2 hours of baking time, remove the foil and brush the glaze on the ham in 20 minutes intervals (put the ham back in the oven, uncovered, in between) until it's nice and glossy. Remove from the oven and allow to rest 15-20 minutes before carving.
  • After about half the calculated baking time has passed [See Note], remove the foil from the ham and set aside for later. Brush the glaze on the ham in 10 to 20 minutes intervals, returning the ham to the oven, uncovered, between each interval. Continue to glaze until the ham is fully heated.
  • Durning the last 5-minutes of bake time, set the oven to broil and caramelize the glaze. Be sure to continually check the ham during this 5-minutes as the glaze can easily burn during broiling.
  • Remove from the oven, tent loosely with the foil you set aside earlier, and allow it to rest for 15-20 minutes before carving to allow the juices to redistribute.
  • Serve warm with leftover glaze sauce poured over the meat as desired (optional).

1 - 7-10 lb pre-cooked spiral 1/2 ham
1-1/4 cup(s) light brown sugar
1/3 cup(s) pineapple juice
1/3 cup(s) orange juice
1/3 cup(s) honey
2 tablespoon(s) orange zest
2 tablespoon(s) dijon mustard
1/4 teaspoon(s) ground cloves

Steps:

  • bake ham as directed. Place saucepan over med-high heat. Stir remaining ingredients. Bring to a boil. Lower heat and simmer for 10 mins, stirring occasionally.
  • When ham has only 30 minutes left to cook, start basting ham w/ glaze, every 10 min.

One of my family's favorite holiday ham recipes --perfect for Easter or New Year's celebrations. The glaze is really wonderful-- half gets brushed onto the ham and baked, the remainder gets passed at the table. Enjoy!

10 lbs bone-in ham, rind removed
whole cloves
1 cup brown sugar
1/2 cup Bourbon (or orange juice)
1 (12 ounce) jar orange marmalade (best with a slightly bitter marmalade such as Hero)
1 cup crushed pineapple
3 teaspoons prepared mustard (French's yellow mustard)
1 (14 ounce) can pineapple rings, drained
10 -12 maraschino cherries

Steps:

  • Preheat oven to 325°F.
  • Using a sharp knife, score the ham into a diamond pattern about 1/4-inch deep and 1-inch apart.
  • Stud the ham with whole cloves in the center of each diamond.
  • Place ham fat side up in a shallow roasting pan (for easy clean-up line pan with aluminum foil, or use a heavy-duty disposable aluminum pan).
  • Bake ham for 2 1/2 hours.
  • Meanwhile, stir together the brown sugar, bourbon, orange marmalade, crushed pineapple, and prepared mustard. Heat to boiling over medium-high heat, stirring until sugar has dissolved.
  • Remove ham from the oven.
  • Spoon half of the glaze/sauce over the ham.
  • Decorate ham with pineapple rings, using a few toothpicks to hold ring in place. Place a cherry in the center of each ring, and attach it with a toothpick.
  • Return ham to the oven and bake for another 20 to 30 minutes.
  • Transfer ham to a platter and allow to rest for 10 minutes before carving (be sure to remove all toothpicks).
  • Pass the remaining sauce at the table.

1 1/4 cups brown sugar
1/3 cup pineapple juice
1/3 cup orange juice
1/3 cup honey
2 tablespoons orange zest
2 tablespoons Dijon mustard

Steps:

  • Place ham in a roasting pan, bake at 325°F for two hours.
  • Meanwhile, stir remaining ingredients together in a saucepan.
  • Bring to a boil, lower heat and simmer 10 minutes.
  • When ham has baked two hours, brush the ham with the glaze, continue doing so every 10 minutes while baking for another 30 minutes.

If you've never cooked ham with marmalade, here's your chance--an easy blend of the citrus preserve with mustard, brown sugar, and pineapple makes an easy glaze.

1 (3-lb.) boneless cooked ham
1 (8-oz.) can crushed pineapple in unsweetened juice
1/2 cup firmly packed brown sugar
3 tablespoons orange marmalade
1 teaspoon prepared mustard

Steps:

  • Place ham in 3 1/2 to 5-quart slow cooker. Drain pineapple liquid from can into slow cooker; refrigerate pineapple. In small bowl, combine brown sugar, 1 tablespoon of the marmalade and mustard; mix well. Spread over ham.
  • Cover; cook on Low setting for 6 to 8 hours.
  • About 5 minutes before serving, remove ham from slow cooker; place on cutting board. Cut off enough ham to make 2 cups cubed; cover and refrigerate for Ham and Broccoli Soup p.29. Cover remaining ham to keep warm.
  • In small microwave-safe bowl, combine pineapple and remaining 2 tablespoons orange marmalade; mix well. Microwave on High for 1 1/4 to 1 1/2 minutes or until thoroughly heated, stirring once halfway through cooking. Cut ham into slices. Serve ham with pineapple mixture.
