3 (10.5-ounce) cans restaurant-style condensed crab bisque (recommended: Bookbinder's)
2 1/4 cups plus 6 tablespoons heavy cream
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh parsley leaves
3 (4.25 ounce) cans crabmeat, picked over
Salt
Cayenne pepper

Steps:

  • In a medium saucepan, combine bisque, 2 1/4 cups heavy cream, lemon juice, parsley, and crabmeat with juices and bring to a simmer over medium heat for 5 to 10 minutes. Season soup, to taste, with salt and cayenne pepper. Divide soup among 6 bowls. Add 1 tablespoon of cream to each bowl and swirl with butter knife to create a pretty design. Serve immediately.

1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
3 tablespoons mayonnaise
5 teaspoons minced celery
1 tablespoon minced green onion
2 English muffins, split
4 slices tomato
4 slices cheddar cheese (1/2 ounce each)
4 slices Monterey Jack cheese (1/2 ounce each)
Paprika

Steps:

  • In a small bowl, combine the crab, mayonnaise, celery and onion. Place muffins on an ungreased baking sheet. , Broil 4-6 in. from the heat until toasted. Spread each muffin half with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

These were served at a party many years ago, and I have made them from time to time over the years, and they always disappear quickly. If you enjoy seafood, you will love these. Preparation time does not include freezing time.

1/4 lb butter
1 (6 ounce) jar Kraft Old English cheese spread
1 1/2 teaspoons mayonnaise
1/2 teaspoon garlic salt (can use garlic powder if watching salt intake)
1/2 teaspoon seasoning salt
1 (8 ounce) can crabmeat
6 English muffins, split

Steps:

  • Combine all ingredients (except muffins) till well combined.
  • Spread evenly over split muffins (12 pieces).
  • With sharp knife, cut into small pie shaped slices (I usually cut each in 4 pieces, but if you need more, you can cut them smaller).
  • Place on cookie sheet.
  • Put cookie sheet in freezer until crabbies are frozen.
  • When frozen, remove from cookie sheet and place in plastic bag. Return to freezer and store till ready to use.
  • When ready to serve, place on cookie sheet.
  • Put under broiler until bubbly and crisp, approximately 5 minutes.

4 tablespoons butter
1 large shallot (or 2 small) minced
4 tablespoons all-purpose flour
3 cups milk
1 tablespoon seafood seasoning (recommended: Old Bay)
One 8-ounce block cream cheese
2 cups grated Manchego cheese
1 cup grated Cheddar
2 tablespoons freshly chopped parsley leaves
2 tablespoons sherry, optional
One 16-ounce box elbow macaroni
1 pound lump crabmeat
4 tablespoons melted butter
1 cup bread crumbs
2 teaspoons seafood seasoning (recommended: Old Bay)
1 tablespoon freshly chopped parsley leaves

Steps:

  • Preheat oven to 375 degrees F.
  • For the sauce: Melt the butter in a saucepan. Add minced shallots and saute for 1 to 2 minutes. Add the flour to make a roux. Cook for about 2 to 3 minutes to cook the flour. Slowly, add 3 cups milk. When milk is incorporated into the roux, add the seafood seasoning, and the block of cream cheese. Cook until cream cheese is melted. Add shredded Manchego and Cheddar cheeses and parsley. Cook until all the cheese is melted. Add the sherry, if desired.
  • Cook macaroni according to package directions or until just al dente. Drain macaroni. Stir cheese mixture into cooked macaroni and old in crabmeat. (Be sure to fold in crabmeat so you don't break up the lumps too much, you want nice chunks of crab.) Put mixture in a baking dish.
  • For the topping:
  • Mix melted butter, bread crumbs, seafood seasoning, and parsley. Sprinkle topping on the dish. Bake in the oven for 15 to 20 minutes to make the topping crispy. Garnish with fresh parsley.

1 pound crabmeat, shredded and picked over to remove shells and cartilage
1/2 green pepper, diced small
1/2 red pepper, diced small
1/4 cup carrot, shredded
1/2 small red onion, diced
1 egg, beaten
1/2 teaspoon garlic powder
1/4 teaspoon cayenne powder
1/4 teaspoon dry mustard
1/2 cup mayonnaise
1/4 teaspoon Worcestershire sauce
Vegetable oil, for frying
Special sauce, recipe follows
1 cup mayonnaise
1/2 teaspoon dry mustard
2 tablespoons honey
2 tablespoons cayenne pepper

Steps:

  • Set bread crumbs aside; combine remaining ingredients together until mixed well. Form mixture into 3-ounce cakes. Roll each cake in bread crumbs. Place cakes in freezer for 1 hour, to set up. Saute on medium heat until each cake is golden brown and heated through. Serve with special sauce.
  • In a small bowl combine all of the ingredients and mix well. Refrigerate until ready to use.
