CLASSIC CHERRY DELIGHT
This Classic Cherry Delight comes together in just minutes and is made of three simple layers. If you want a dessert that's not overly sweet yet delicious, this is it!

Steps:
- Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
- Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
- Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
- Refrigerate for at least 2 hours before serving. I like to leave it overnight.
- Refrigerate leftovers.

Press onto the bottom of an 8x4-in. loaf pan coated with cooking spray. , In a small bowl, beat cream cheese and confectioners' sugar until smooth; fold in whipped topping. Spread over crust. Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
- Beat egg whites until stiff. Gradually add the sugar and cream of tarter; beat until sugar is dissolved.
- Add crackers, nuts and vanilla. Pour into prepared pan and bake for 25 minutes in the preheated oven.
- Remove from oven, cool and cut into squares. Top each serving with pie filling and whipped topping.

OPAL'S CHERRY DELIGHT RECIPE

- Mix graham cracker crumbs, 1 cup confectioners sugar and butter together in a bowl; press into a 9x13 pan. Whisk cream cheese, cool whip and 2 cups confectioners sugar together in a bowl until smooth; spread over graham cracker crust. Pour cherry pie filling over cream cheese layer. Refrigerate until firm, at least an hour.
EASY CHERRY DELIGHT DESSERT (NO-BAKE)
This is a really great dessert, plan ahead this needs to chill for a minimum of 3 hours or overnight is even better.

- Prepare a 9 x 9" baking pan.
- In a bowl, mix the graham cracker crumbs, melted butter and 1 tbsp sugar; spread on bottom of prepared baking pan to form a crust.
- Mix the Dream Whip topping according to directions on the package, then beat in the softened cream cheese into the Dream Whip a little at a time.
- Add the remaining sugar and vanilla until well blended.
- Smooth on top of the crust.
- Top with the cherry pie filling.
- Chill at least 3 hours (overnight is even better) if storing in the fridge overnight, cover with plastic wrap.
OPAL'S CHERRY SURPRISE
I don't know where my mom got this recipe, but she has been making it for over 50 years, hence that's why I named it Opal's Surprise, after my mom..

- 1. Crust:Pour in greased large pan. Bake at 350 for 30 minutes. Cool. Don't worry when the crust falls.
- 2. Filling: 1/2 pint heavy whipping cream 1 (3 oz) Cream cheese softened at room temperature 1 c. sifted powdered sugar 1 t. Vanilla
- 3. Using a mixer, whip the cream cheese. Then add the sifted powdered sugar and heavy whipping cream alternately a little at a time until thick. Before you have added all the powdered sugar to the cream sugar, add the vanilla. Do not beat the ingredients too long or you will make butter. Pour the filling on top of the cracker crust.
- 4. Then top with Cherry Pie Filling..
