2 tablespoons extra virgin olive oil
1 medium onion (chopped)
4 ounces button mushrooms (chopped)
1 tablespoon fresh thyme leaves (minced) or 1 teaspoon dried thyme
3 garlic cloves (minced)
1 teaspoon gingerroot (minced)
4 tablespoons unsalted butter
2 tablespoons flour
2 cups chicken stock
1 tablespoon Worcestershire sauce

Steps:

  • Heat oil in a 12" skillet over medium high heat, add onions and sautee for 5 - 6 minutes.
  • To that add mushrooms, thyme, garlic and ginger and cook 1 - 2 minutes or just until fragrant. Set aside.
  • In a medium saucepan melt butter on medium heat. Once butter is melted turn heat to low, Wisk in flour and cook for 1 - 2 minutes to cook out the flour taste.
  • Add stock and worcestershire sauce while wisking constantley to avoid lumps.
  • Stir in onion mixture and simmer 10 minutes or to desired thickness.

2 Tbsp. butter
1 cup chopped onion (about 1 large onion)
3 shallots, chopped (about 2/3 cup)
1 tsp. snipped fresh thyme or 1/4 tsp. dried thyme, crushed
2 Tbsp. all-purpose flour
1 14 oz. can reduced-sodium chicken broth
1 Tbsp. reduced-sodium soy sauce
1 Tbsp. Worcestershire sauce
1/8 tsp. salt
1/4 tsp. freshly ground black pepper

Steps:

  • In medium saucepan, melt butter over medium-high heat. Add the onion, shallots, and thyme; cook, stirring occasionally, for 10 to 12 minutes or until vegetables are tender and browned. Stir in the all-purpose flour; cook and stir for 1 minute. Add the broth, soy sauce, and the Worcestershire sauce. Cook and stir until mixture comes to boiling; reduce heat to medium. Simmer, uncovered, for 8 to 9 minutes or until slightly thickened. Stir in the salt and pepper.
