MUSHROOM, ONION AND THYME GRAVY

Steps:
- Heat oil in a 12" skillet over medium high heat, add onions and sautee for 5 - 6 minutes.
- To that add mushrooms, thyme, garlic and ginger and cook 1 - 2 minutes or just until fragrant. Set aside.
- In a medium saucepan melt butter on medium heat. Once butter is melted turn heat to low, Wisk in flour and cook for 1 - 2 minutes to cook out the flour taste.
- Add stock and worcestershire sauce while wisking constantley to avoid lumps.
- Stir in onion mixture and simmer 10 minutes or to desired thickness.

ONION-THYME GRAVY
Steps:
- In medium saucepan, melt butter over medium-high heat. Add the onion, shallots, and thyme; cook, stirring occasionally, for 10 to 12 minutes or until vegetables are tender and browned. Stir in the all-purpose flour; cook and stir for 1 minute. Add the broth, soy sauce, and the Worcestershire sauce. Cook and stir until mixture comes to boiling; reduce heat to medium. Simmer, uncovered, for 8 to 9 minutes or until slightly thickened. Stir in the salt and pepper.
