1 egg
¼ cup grated Parmesan cheese
1 teaspoon Cajun seasoning
2 boneless pork chops, trimmed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
  • Whisk egg in a shallow bowl.
  • Mix Parmesan cheese and Cajun seasoning together on a plate.
  • Dip each pork chop into egg. Press into Parmesan mixture until coated on both sides. Place in the prepared baking dish.
  • Bake in the preheated oven until golden and an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), 35 to 40 minutes.

4 boneless pork loin chops (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
2 tablespoons all-purpose flour
1 cup fat-free milk
1/3 cup grated Parmesan cheese
2 tablespoons grated onion
3 teaspoons minced fresh parsley
1/4 teaspoon dried thyme
1/4 teaspoon ground nutmeg

Steps:

  • Sprinkle pork chops with salt and pepper. In a large nonstick skillet, cook chops in butter over medium heat until meat juices run clear; remove and keep warm. , Combine flour and milk until smooth; stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in remaining ingredients; heat through. Serve with chops.

2 teaspoons lemon juice
2 tablespoons chopped fresh parsley
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme, crushed
1/4 teaspoon pepper

Steps:

  • Sprinkle pork chops with lemon juice. In a small bowl, combine the parsley, rosemary, thyme and pepper; rub over chops., Grill, covered, over medium heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving.

This is one of my favorite recipes for pork. I was inpired for the method by an article in a cooking magazine and then made it my own. The flavors are great and it really a fairly easy dish to make. Switch around the herbs and flavors, I always try something new and switch between fresh and dried herbs. I know 2 whole onions sounds like a lot for 4 servings, but they cook down and are the carrier of all of the flavor, after trying it you will probably increase it to 3! Use any kind of breadcrumbs you like, I love to make my own from whole-wheat bread and it tastes great. I truly believe it is a meal your family or friends will love to eat!

2 tablespoons butter, divided
2 medium onions
1/3 cup chicken stock
1 teaspoon fresh thyme
1 teaspoon fresh sage
4 large pork chops
1/2 cup dry breadcrumbs
1/4 cup freshly grated parmesan cheese

Steps:

  • Dice the onions.
  • In a saute pan melt a small dab butter and saute the onion until starting to turn clear. This should take about 10 minutes.
  • Stir in the broth and herbs and bring to a boil and simmer for 5-10 minutes.
  • Meanwhile season the chops with salt {and pepper if desired}. In another saute` pan, brown the chops in a little bit of butter, do not cook through.
  • Prepare a baking dish by spraying with nonstick spray.
  • Put a small bit of the onion mixture down for each of the 4 chops, then place the chops on top. Place the remaining onion mixture on top of each of the chops.
  • Combine the breadcrumbs and Parmesan cheese and sprinkle over top. Melt 1 T. of butter and drizzle over the top. Bake at 400 degrees, uncovered, for 20 minutes or until juices run clear.

This is a simple, yet delicious entrée. Elegant enough for a dinner party, especially Variation 2. Update: My favorite is the cream/tarragon version, but I decided it needed more sauce. When I make it I triple all of the sauce ingredients.

1 tablespoon vegetable oil
2 lbs pork loin chops (about 1 inch thick) or 2 lbs pork chops (about 1 inch thick)
6 tablespoons fresh lemon juice
6 tablespoons water
1 teaspoon thyme or 1 teaspoon rosemary, crumbled
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Heat oil in large skillet.
  • Over medium-high heat, add chops and cook until golden brown on both sides (2 to 4 minutes) Reduce heat to low and cook, turning often until chops are cooked through (10 to 12 minutes) Remove from pan and keep warm.
  • Add remaining ingredients to the skillet and increase heat to high.
  • Bring to a boil and cook, stirring up bits stuck to pan, until thickened (1 to 2 minutes) Serve sauce over chops.
  • Variation 1: Replace lemon juice and water with 3/4 cup dry white wine.
  • Variation 2: Replace lemon juice and water with 3/4 cup heavy cream and 3/4 cup chicken broth and replace dried thyme with dried tarragon.

2 tablespoons butter, divided
1 medium onion, chopped
3 tablespoons chicken broth
1/4 teaspoon dried tarragon
1/8 teaspoon dried thyme
2 boneless pork loin chops (3/4 inch thick and 5 oz each)
1/8 teaspoon salt
1/8 teaspoon pepper
3 tablespoons dry breadcrumbs
3 tablespoons grated parmesan cheese

Steps:

  • In a small skillet, melt 1 teaspoon butter over medium heat. Stir in the onion, broth, tarragon and thyme. Bring to a boil. Reduce heat; simmer uncovered, for 8-10 minutes or until onion is tender.
  • Meanwhile, sprinkle pork chops with salt and pepper. In another skillet, brown chops over medium heat in 1 tablespoon butter.
  • Spoon half of the onion mixture into a baking dish coated with nonstick cooking spray; top with pork and remaining onion mixture. Combine bread crumbs and Parmesan cheese; sprinkle over top.
  • Melt remaining butter; drizzle over crumbs. Bake, uncovered, at 400 degrees for 20-25 minutes or until meat juices run clear.

2 teaspoons vegetable oil, or to taste
1 tablespoon canola oil

Steps:

  • Mix parsley, marjoram, thyme, sage, garlic powder, onion powder, salt, and cinnamon together in a bowl.
  • Rub 1/2 teaspoon of the herb mixture over each pork chop. Store remaining herb mix in an airtight container for later use.

1 cup water
1/4 cup butter, softened
2 tablespoons rubbed sage

1 small onion, thinly sliced
1 teaspoon browning sauce, optional

Steps:

  • Cut roast in half. Place pork and water in a 4-qt. slow cooker. Spread butter over meat. Combine the sage, parsley, pepper, garlic, oregano and salt; sprinkle over meat. Top with onion. Cover and cook on low for 8-10 hours or until meat is tender. If desired, thicken cooking juices. Stir in browning sauce if desired. Let meat stand 10 minutes before slicing.
