12 ounces pasta (I used Linguine)
1 (15 ounce) can diced tomatoes with juice (I used zesty red pepper flavor)
1 large sweet onion, cut in julienne strips
4 garlic cloves, thinly sliced
1/2 teaspoon red pepper flakes
2 teaspoons dried oregano leaves
2 large basil sprigs, chopped
4 1/2 cups vegetable broth (regular broth and NOT low sodium)
2 tablespoons extra virgin olive oil
parmesan cheese (to garnish)

Steps:

  • Place pasta, tomatoes, onion, garlic, basil, in a large stock pot. Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with oil.
  • Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated - I left about an inch of liquid in the bottom of the pot - but you can reduce as desired .
  • Season to taste with salt and pepper , stirring pasta several times to distribute the liquid in the bottom of the pot. Serve garnished with Parmesan cheese.

4 cloves garlic, very thinly sliced
1/4 teaspoon red pepper flakes
2 teaspoons dried oregano leaves
4 1/2 cups vegetable broth (use regular broth and NOT low sodium)
2 tablespoons extra virgin olive oil
1 bunch (about 10 to 12 leaves) basil, diced
Parmesan cheese for garnish

Steps:

  • Place pasta, tomatoes, onion, and garlic in a large stock pot. Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with oil. Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated - I left about an inch of liquid in the bottom of the pot - but you can reduce as desired . Season to taste with salt and pepper. 12 ounces linguine
15 ounces diced tomatoes, with liquid
1/2 cup sun-dried tomato, julienned
1 sweet onion, cut in julienne strips
4 garlic cloves, thinly sliced
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
2 teaspoons dried oregano leaves
handful fresh basil, chopped
8 ounces fresh Baby Spinach (I get the bagged kind)
4 1/2 cups vegetable broth
2 tablespoons olive oil

Steps:

  • Place pasta, tomatoes, sun dried tomatoes, onion, garlic, and basil in a large stock pot.
  • Pour in vegetable broth. Sprinkle the pepper flakes and oregano on top.
  • Drizzle with olive oil.
  • Add 1/2 teaspoon salt and some ground black pepper.
  • Cover pot and bring to a boil. Reduce to a low simmer and cook for about 10 minutes (add the spinach 7 to 8 minutes into cooking), stirring every 2 minutes. Cook until almost all of the liquid has evaporated.

1 (28-oz.) can diced tomatoes
2 cups chicken broth
1/2 medium-size yellow onion, sliced
4 garlic cloves, sliced
1 teaspoon dried oregano
1/3 cup firmly packed fresh basil leaves
2 teaspoons kosher salt
1 tablespoon olive oil
1/4 teaspoon dried crushed red pepper (optional)
1 (6-oz.) package baby spinach
Freshly grated Parmesan cheese

  • 1. Place first 9 ingredients and, if desired, dried crushed red pepper in a Dutch oven in order of ingredient list. Cover and bring to a boil over medium-high heat (about 12 to 15 minutes).
