2 tablespoon(s) butter
3/4 pound(s) chicken breast halves, skinless and boneless, cut into 3/4-inch pieces
1/3 cup(s) onion, finely chopped
1 can(s) (14 1/2 oz.) chicken broth
1/2 package(s) (6 oz.) broad egg noodles, uncooked
1 package(s) (10 oz.) frozen peas and carrots
1/2 teaspoon(s) salt
1/4 teaspoon(s) black pepper
1 can(s) (10 3/4 oz.) condensed cream of chicken soup
3/4 cup(s) milk
3/4 cup(s) grated parmesan cheese, divided
1 jar(s) (4 oz.) chopped pimiento, drained

Steps:

  • In a large heavy saucepan over medium heat, melt butter; add chicken and onion. Cook 5 minutes or until chicken is no longer pink.
  • Add chicken broth; heat to boiling. Stir in uncooked pasta, peas and carrots, salt and pepper, stirring to coat evenly with liquid. Heat to boiling; reduce heat.
  • Cover and simmer on medium heat for 8 to 10 minutes, stirring occasionally, or until most liquid is absorbed.
  • In a medium bowl, stir together soup, milk, 1/2 cup cheese and pimiento until smooth; stir into pasta mixture. Simmer until heated through.
  • Serve hot, sprinkled with remaining Parmesan cheese.

1 butternut squash, cut into 1/2-inch cubes
2 medium potatoes, cut into 1/2-inch cubes
1 carrot, cut into 1/2-inch cubes
¼ cup olive oil
1 tablespoon lemon pepper seasoning

2 skinless, boneless chicken breasts
1 tablespoon olive oil
1 tablespoon Caribbean seasoning

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine butternut squash, potatoes, carrot, 1/4 cup olive oil, lemon pepper seasoning, and 1/2 teaspoon salt in a bowl; toss to combine. Transfer vegetables to a baking sheet.
  • Toss chicken breasts in the same bowl with 1 tablespoon olive oil, remaining salt, and Caribbean seasoning until coated. Add to baking sheet.

Classic chicken and noodles with vegetables in a creamy, cheesy sauce, all cooked in one pot for easy clean up.

2 pounds boneless, skinless chicken breasts (cut into 1-inch pieces)
2 tablespoons olive oil
1 small yellow or white onion (diced)
3 medium carrots (peeled and sliced)
2 celery stalks (sliced)
1 tablespoon minced garlic
Salt & Pepper (to taste)
10 ounces cream of chicken soup
1 1/4 cup nonfat milk ((fill the chicken soup can))
2 cups low sodium chicken broth
1 tablespoon dried parsley
1/2 teaspoon dried thyme
1 teaspoon garlic powder
8 ounces dry fettuccine pasta (about 1/2 of a regular box)
1 1/2 cups shredded sharp cheddar cheese (divided)

Steps:

  • Heat olive oil in a 5 quart pot or deep saute pan. Add chopped vegetables and minced garlic. Saute over medium-high heat for about five minutes, or until vegetables are just becoming tender.
  • Add chicken and season with salt and pepper. Continue to saute over medium heat until chicken is no longer pink on the outside. It does not have to be cooked through since it will continue to cook in the sauce.
  • Stir in cream of chicken soup, milk (fill the chicken soup can), chicken broth, pasta and dry seasonings.
  • Bring to a boil, then turn heat down to low. Simmer uncovered for about 20 minutes or until pasta is tender, stirring every five minutes to keep pasta from sticking together.
  • Once pasta is cooked to al dente, remove from heat and stir in 1 cup of cheddar cheese until melted. Sprinkle with remaining cheese. Cover pot and let rest for 5-10 minutes to thicken the sauce.
  • Sprinkle with fresh chopped parsley for garnish.

6 boneless skinless chicken thighs, thinly sliced in 1/2-inch strips (about 20 oz)
12 oz uncooked spaghetti, broken in half (from 1-lb box)
1 medium red bell pepper, cut in thin strips
3 green onions, thinly sliced on the bias, white and green parts separated
1 package (3 1/2 oz) shiitake mushrooms, stemmed and thinly sliced
4 tablespoons butter
2 tablespoons hoisin sauce
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
2 teaspoons chile garlic sauce
2 tablespoons chopped fresh cilantro leaves
1 tablespoon sesame seed

Steps:

  • In 5-quart Dutch oven, mix broth, chicken, spaghetti, bell pepper, green onion whites, mushrooms, butter, hoisin sauce, sesame oil, soy sauce and chile garlic sauce. Heat to boiling over high heat, stirring occasionally.
  • Reduce heat to medium-low; cook 11 to 15 minutes, stirring occasionally, until juice of chicken is clear when thickest part is cut (at least 165°F), pasta is cooked and most of liquid is absorbed. Top with green onion greens, cilantro and sesame seed. Serve with additional soy sauce and chile garlic sauce, as desired.
