ONE-PAN HAM, EGG AND CHEESE BREAKFAST SANDWICH
This one-skillet folded egg sandwich isn't new, but it's certainly viral! I've been making and enjoying something similar for decades. I like it because it's efficient, delicious and fun, and the technique is easy to master with a little practice.

Steps:
- Place a 9 1/2- to 11-inch nonstick skillet over medium heat and preheat for 2 to 3 minutes. Spray the skillet for about 2 seconds with cooking spray, then cook the ham or Canadian bacon on each side until hot and lightly browned. Transfer to a plate and set aside.
- Place the bread in the skillet to toast for about 30 seconds on each side. Set aside.
- Spray the skillet again with cooking spray until very well coated, about 5 seconds. (You can also substitute melted butter for the cooking spray if you like.) Whisk the eggs in a small bowl and pour into the skillet. Season with salt and pepper. Reduce the heat to low and allow the egg to firm up, about 1 minute. While the top of the egg is still wet, place both slices of bread in the center next to each other. The egg will firm up around them.
- Flip the entire round of egg with the bread stuck to it. Now the 2 slices are covered by the egg and it will look like an omelet from the top. Fold the edges of the egg over the bread, leaving them still connected to the the bread slices. Top the bread slice on the left with the cheese. Top the other bread slice with the ham or Canadian bacon, folding or overlapping slightly if necessary to fit inside the bread. Once the egg is set, gently fold the right slice of bread over the other to close the sandwich. Slide the sandwich onto a plate and, voila, you have a perfect breakfast sandwich.

- Preheat oven to 500˚F (260˚C).
- Dice potato, red bell pepper, and onion. Place on a baking sheet.
- Drizzle olive oil over everything and season with rosemary, garlic, paprika, salt, and pepper. Mix until evenly coated and spread into an even layer.
- Bake for 30 minutes, stirring every 10-15 minutes.
- Serve with your favorite breakfast sides.

ONE-PAN SWEET POTATO BREAKFAST HASH RECIPE BY TASTY

- Dice the sweet potato
- Heat the olive oil in a large skillet over medium-high heat. Add the diced sweet potato, cover, and cook, stirring occasionally, for about 10 minutes, or until it begins to soften.
- While the sweet potato cooks, dice the red onion and mince the garlic. Add to the skillet.
- Dice and seed the bell peppers and add to the skillet.
- Dice the jalapeño, if using, and add.
- Chop the green onion and rosemary, if using fresh, and add to skillet. Cover and cook for about 5 minutes, or until the sweet potato is tender.
- Create 4 wells in the vegetable mixture, not too close to the edges of the skillet, but far enough apart that they aren't touching. Crack 1 egg into each well. Cover and cook for 3-5 minutes more, or the eggs are cooked to your liking.
- Breakfast is served!

HEARTY ONE PAN BREAKFAST
Great for when you have a crowd for breakfast. Very hardy and filling, big boys and little boys just love it! I usually do all the prep work the night before so very little effort is needed in the morning. We like to serve it with hot French bread.

- Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Add the onions, peppers, garlic, tomatoes, and potatoes. Season with salt and pepper and cook until vegetables are soft, about 5 minutes.

- Heat the grill to high. Heat a medium non-stick frying pan, add the chipolatas and fry for 3 mins. Add the bacon, turning occasionally, until it starts to crisp, about 5 mins more. Tip in the mushrooms and continue to cook for a further 3-5 mins. Drain any excess fat and move the ingredients so they are evenly spread out.

This is an easy recipe,because all you need is in your refrigerator.My husband works outside a lot,and wants something quick to eat, when he comes in for dinner. I have made this,( all in one pan breakfast)when camping. If Made ahead of time, its even quicker to cook the next day. Enjoy!

- 1. Mix Liquid smoke and brown sugar together,put mixture in pan with bacon, cook together until done.Remove bacon from pan, set aside. Save bacon drippings.
- 2. Cook onions, and pepper with 1/2 the dripping 5-8mins remove from pan set aside,add remaining drippings and cook potatoes until soft.Return onions and pepper to potatoes. Cook 10mins more.
- 3. Push potatoes to the edges of pan, into the center crack your eggs and cook them any way you wish. I find it easier to just crack the eggs in the pan, and when your eggs are done , its time to eat. Then sprinkle the top with bacon. If you like cheese sprinkle a little on top before serving. I use sharp cheddar!
ONE-PAN TROUT BREAKFAST
My husband is a fisherman, and when we're camping this dish gets made with Brook Trout. When we're "up north" it gets made at home with the Lake Trout he fishes for in the many lakes there.

- In 12 in. frying pan cook bacon crisp. remove bacon and drain. set aside. Leave a couple T. fat in pan.
- Thinly slice potatoes, leaving skins on. Fry until brown on bottom and turn. Add thinly sliced onions. Stir and cook until potatoes are tender. Add crumbled bacon and mix in. Remove from pan.
- Place the rest of the bacon grease in pan. Flour the trout and shake off excess. cook 2 or 3 min. until browned. Turn with wide spatula and cook 3-4 min more. Season with garlic salt and pepper to taste. If you've tucked a lemon in your gear a squeeze of lemon juice sparks the flavor
