When I had to make a dinner with Mennonite theme, I came up with this meaty main dish. Most often, I serve it with salad, soup and bread. The apple juice gives the pork a wonderful flavor, and the cabbage taste isn't too strong. My husband and I have two grown children. We raise corn and soybeans and feed out cattle here, plus we also grow specialty-cut fresh flowers.

1/3 cup all-purpose flour, divided
Salt and pepper to taste
8 boneless pork loin chops (1/2-inch thick and 4 ounces each)
1/4 cup butter, cubed
2 cups apple juice
2 pounds small red potatoes
1 pound or 1 jar (16 ounces) small whole onions, drained
1 pound carrots, cut into 3-inch pieces
6 to 8 cups shredded cabbage

Steps:

  • In a large resealable plastic bag, place 1/4 cup flour, salt and pepper; add pork chops. Seal bag; toss to coat. In a Dutch oven over medium-high heat, brown chops in butter on both sides. Remove pork chops; set aside and keep warm., Stir remaining flour into pan drippings until blended. Gradually whisk in apple juice. Bring to a boil. Cook and stir for 2 minutes or until thickened. , Return chops to pan; add the potatoes, onions and carrots. Cover and bake at 350° for 30 minutes., Top with cabbage; cover and bake for 50-60 minutes longer or until a thermometer reads 160° and vegetables are tender, basting occasionally with juices.

4 boneless pork chops (thin cut)
3 (15 ounce) cans of sliced cooked potatoes (drained)
1 (8 ounce) container sour cream
2 (10 ounce) cans cream of mushroom soup (no water added)
1 (3 ounce) can sliced mushrooms (drained)
2 cups of crushed Ritz crackers
5 teaspoons butter

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Using a nonstick spray, spray a 9x13 glass baking dish.
  • Arrange pork chops in the bottom.
  • Next add the sliced potatoes (drained).
  • Add sliced mushrooms (drained).
  • Mix the cream of mushroom soups with the sour cream and pour over the sliced mushrooms.
  • Add the crushed crackers on top. Dollop on the butter.
  • Cover with foil and bake for 45 minutes. Uncover and bake for 15 minutes more.
  • Cooking time will vary depending on the thickness of your pork chops.

6 pork loin chops, 3/4 inch thick
1/2 cup all-purpose flour
2 tablespoons olive oil
2 teaspoons dried thyme
2 teaspoons salt
1/4 teaspoon pepper
4 large potatoes, peeled and cut into 3/4 inch cubes
5 medium carrots, sliced 1/4 inch thick
1 medium onion, cut into wedges
3 cups beef broth

Steps:

  • Dredge pork in flour. Heat oil in large skillet. Brown the pork chops on both sides.
  • Sprinkle with thyme, salt, and pepper.
  • Peel potatoes and cut into 3/4 inch cubes. Add to skillet along with the carrots and onion. Pour broth over all.
  • Bring to boil; reduce heat cover and simmer for 40 to 50 minutes or until the pork and veggies are tender.

I have 3 busy children and care for a handicapped mom. I don't have a lot of time to spend on hard dishes which leave a lot of dishes to wash. I created this because I didn't have the time to cook them all separate.

3 cups instant rice
3 cups water
1 (16 ounce) package frozen vegetables (whatever you like)
4 -6 pork chops
2 (10 ounce) cans cream of mushroom soup (can use cream of celery or chicken)

Steps:

  • Preheat oven to 350.
  • Lightly spray 9x13 pan with Pam.
  • Add rice and spread it evenly over bottom of pan.
  • Layer vegetables next.
  • Put pork chops on top.
  • Pour soup over top of pork chops.
  • Carefully pour water over top of soup.
  • Cover tightly with tinfoil.
  • Bake 1 hour.

8 pork chops (1/2-inch thick)
1/3 cup all-purpose flour
1/4 cup butter or margarine
salt and pepper to taste
2 cups apple juice, divided
2 pounds small red potatoes
1 pound or 1 jar (16 ounces) small whole onion, drained
1 pound carrot, peeled and cut into 3-inch pieces
6 to 8 cups shredded cabbage

Steps:

  • Coat pork chops in flour reserve excess flour. In a large Dutch oven, melt butter over medium-high heat. Brown chops on both sides. Season with salt and pepper if desired. Remove and set aside. Stir reserved flour into pan cook and stir until a paste forms. Gradually whisk in 1-1/2 cups apple juice blend until smooth. Return chops to Dutch oven cover and bake at 350° for 30 minutes. Add potatoes, onions, carrots and remaining apple juice. Cover and bake 30 minutes longer. Top with cabbage cover and bake for 1 to 1-1/2 hours or until the pork chops are tender, basting occasionally with juices.
