2 fennel bulbs, 1 sliced and 1 chopped
1 lb perciatelli or 1 lb spaghetti
2 tablespoons olive oil
3 -4 cloves garlic, chopped
2/3 cup chopped fresh wild fennel or 2/3 cup fennel, tops
2 anchovy fillets, chopped
1/3-1/2 teaspoon red pepper flakes
1/3 cup olive oil, with anchovies and chili peppers (in my recipes)
fresh ground black pepper
sea salt

Steps:

  • Fill a large pot with water and bring to a boil.
  • Add the sliced fennel bulb and the bucatini and cook until the pasta is al dente, approximately 10 minutes.
  • Meanwhile, place the 2 tblsps olive oil in a large skillet.
  • Add the chopped fennel bulb and saute over medium heat for about 3 minutes.
  • Add the garlic, half the wild fennel, the chopped anchovies and the red pepper flakes.
  • Cook, stirring, for 6-8 minutes, or until the greens are tender.
  • Drain the pasta, reserving a little of the cooking liquid.
  • Chop the boiled fennel and add it to the sauce along with ΒΌ cup of the cooking liquid and the drained pasta.
  • Drizzle with the Olive Oil with Anchovies and Chili Peppers.
  • Add the remaining chopped fennel and toss well.
  • Taste, adjust the seasonings to your liking, and serve immediately.

A fresh sweet pepper roasted at home can be revelatory. The flames of an outdoor grill, stovetop burner or broiler add a touch of smokiness, while helping to remove a pepper's tough skin. To prevent the pepper from overcooking, do not place it in a closed container after roasting, as some suggest - just let it cool uncovered on a plate. The skin will still come off and the flesh won't be mushy. The combination of sweet pepper and salty anchovy is classic. Serve this carpaccio-style, using a whole pepper to cover the plate, or arrange in alternating rows.

4 red bell or other large sweet peppers, such as Corno di Toro
Kosher salt and black pepper
Pinch of red-pepper flakes
1 small garlic clove, grated
Extra-virgin olive oil
12 anchovy fillets, rinsed and blotted
1 teaspoon capers
12 black olives
Basil leaves, for garnish

Steps:

  • Roast the peppers: Place each pepper directly on the flames of a stovetop burner or under the broiler as close to the flames as possible. (Alternatively, place the pepper on a hot charcoal or gas grill.) Turning frequently with tongs, allow the skin to blacken and blister all over; About 10 minutes should suffice. Remove from flames, and leave to rest on a plate until cool enough to handle. Ideally, you should cook all the peppers at once rather than one at a time.
  • Cut the roasted pepper in half lengthwise. Using a small knife, scrape away and discard seeds. Turn over and scrape away the blackened skin. Wipe with a paper towel, if necessary. Do not rinse - a little char is fine. Leave the pepper halves in one piece or cut into strips 3/4-inch wide. Place in a small bowl, toss with salt and pepper, red-pepper flakes, garlic and a little olive oil. Leave to marinate at least 10 minutes.
  • Lay pepper halves or strips flat on a plate and add 3 or 4 anchovy fillets per serving. Garnish with a few capers and olives. Sprinkle with a little more salt and olive oil, and scatter basil leaves over the top.

1/2 cup olive oil
8 garlic cloves, large and minced
2 (2 ounce) cans anchovy fillets, drained, chopped
1 lb spaghetti
2 teaspoons fresh lemon juice
parsley, chopped
parmesan cheese, freshly grated, to taste
salt and pepper, to taste

Steps:

  • Heat oil in heavy medium skillet over low heat.
  • Add garlic and cook 2 minutes; add anchovies and cook until garlic just begins to color, about 3 minutes.
  • Meanwhile, cook spaghetti in a large pot of boiling, salted water, until tender but still firm to bite, stirring occasionally.
  • Drain well.
  • Return spaghetti to pot and add the anchovy mixture and lemon juice and toss to coat.
  • Season with salt and pepper to taste and sprinkle with parsley.
  • Add Parmesan to taste.

Recipe from the Washington Post. Good olive oil and good anchovies are essential to this recipe. Fortunately, tney are not as expensive or hard to find as they used to be. Use a high-quality imported brand of Italian or Spanish anchovy fillets in olive oil. Prep & cook time are estimates; it can all be done in the time it takes to boil the water and cook the pasta.

16 ounces dried spaghetti
kosher salt or sea salt, for the cooking water
1/4 cup extra-virgin olive oil
1 large garlic clove, minced
8 anchovies packed in oil (best-quality imported Italian or Spanish)
1 tablespoon tomato paste
1 small red chili pepper, stemmed, seeded and finely chopped (may substitute a generous pinch of crushed red pepper flakes)

Steps:

  • Bring a large pot of water to a rolling boil over high heat, then salt the water generously.
  • Add the pasta, stir to separate the noodles and cook according to the package directions (until al dente).
  • Meanwhile, heat the oil and garlic in a large skillet over medium-low heat for 1 to 2 minutes, or until the garlic is fragrant but not browned.
  • Add the anchovies and their oil (about 2 tablespoons) and use a fork to mash them up a bit, though there should still be some distinguishable pieces.
  • Stir in the tomato paste and chili pepper to form a sauce.
  • Cook for another minute or two, or until all of the ingredients are well blended.
  • Turn off the heat and cover to keep warm.
  • Drain the pasta in a colander set in the sink, reserving about 1 cup of the cooking water.
  • Transfer the pasta to the skillet; gently toss the pasta and sauce until thoroughly combined.
  • Add a splash or two of the cooking water as needed to loosen the sauce and prevent the spaghetti strands from becoming sticky.
  • Transfer the dressed pasta to warmed individual shallow bowls; serve immediately.
