Number Of Ingredients 6

6-7 Russet Potatoes (thinly sliced)
1 Onion (Thinly Sliced)
3 tbsp Butter
2 tbsp Olive Oil
2 ½ teas Salt
1 teas Freshly Ground Black Pepper

Steps:

  • Put thinly sliced onions in a large skillet along with the butter and olive oil. Saute on medium heat for 2-3 minutes
  • Add the thinly sliced potatoes along with the spices stirring it together.
  • Saute on med-high heat flipping every few minutes
  • Saute for 25 minutes or until it's browned to your desire

I remember my Grandmother making this marvelous dish over 65 years ago. We were the only vegetarians in our family and therefore Grandma cooked just to please me. A very easy, simple but tasty side dish. Young potatoes are especially good.

4 large russet potatoes or 4 large yukon gold potatoes
1 large onion, sliced thin
4 tablespoons butter (or more if required)
2 tablespoons extra virgin olive oil
1/2 teaspoon granulated garlic powder
1/2 teaspoon dried dill weed
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Peel and slice potatoes about 1/8 inch thick or thinner.
  • Slice onion thinly.
  • In a large frying pan on medium-high heat, melt butter, add olive oil.
  • Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatula, turn the potatoes and onions over so they do not break apart. If potatoes appear too dry, add some additional butter.
  • Sprinkle with granulated garlic powder, dried dill weed, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
  • Serve hot with your meal.
  • Note: You may use 2 or 3 large garlic cloves (chopped small), instead of granulated garlic powder. Add to the potatoes after the first 10 minutes of cooking time.

2 pounds potatoes, sliced into 1/2-inch-thick pieces
1 onion, halved and each half cut into quarters
½ cup canola oil
½ cup olive oil
4 cloves garlic
1 envelope onion soup mix
1 tablespoon chopped fresh rosemary, or more to taste
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.
  • Roast in the preheated oven for 25 minutes. Remove foil and continue to roast until potatoes and onion are browned and edges are crispy, 15 to 30 minutes.

2 pounds red potatoes, cut into bite-sized chunks
2 tablespoons olive oil
½ large sweet onion, chopped
¾ cup pea pods
1 head bok choy, roughly chopped
½ cup bean sprouts
½ (6 ounce) bag baby spinach
3 tablespoons soy sauce, or to taste
¼ teaspoon chopped ginger
salt to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Boil on medium-high heat until tender but still intact, about 15 minutes. Drain.

1/2 cup pitted Greek (kalamata) olives
1/2 cup diced ripe tomatoes
1/4 cup minced red onion
1 1/2 tablespoons olive oil
1 tablespoon red wine vinegar
1 tablespoon chopped fresh thyme leaves or 1 teaspoon dried
Salt and ground black pepper

Steps:

1 pound large new potatoes
1 tablespoon olive oil
8 ounces whole onion or 7 ounces chopped ready-cut onion (1 2/3 cups)
1 pound Italian frying green peppers
1 cup chicken or beef stock or broth
1/4 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Scrub but do not peel potatoes; slice in food processor.
  • Heat nonstick pan large enough to hold all the ingredients until it is very hot. Reduce heat to medium-high; add oil and add potatoes. Stir often to brown on both sides.
  • Chop whole onion, and add to potatoes as they cook.
  • Wash, trim and seed peppers, and slice in food processor. When potatoes and onions have begun to brown, add peppers and cook a couple of minutes over medium heat.
  • Add stock; reduce to simmer, cover and continue to cook until all of the ingredients are soft.
  • Season with salt and pepper.

2 pounds russet potatoes (4 medium), scrubbed and cut into 1-inch-thick wedges
2 fresh or dried bay leaves
1 tablespoon whole cloves
1 head garlic, halved crosswise
Kosher salt
Extra-virgin olive oil, for frying (about 4 cups)

Steps:

  • Place potatoes in a large pot with 2 quarts water. Add bay leaves, cloves, garlic, and 2 tablespoons salt. Bring to a boil, then reduce heat to medium-high and cook until potatoes are just tender, 4 to 5 minutes. Drain, then spread out potatoes on a rimmed baking sheet lined with paper towels until dry, at least 30 minutes and up to 1 hour.
  • Fill a heavy medium pot about halfway with oil; heat over medium until a thermometer registers 350°F. Working in batches, add potatoes and fry, stirring occasionally, until golden and crisp, 10 to 12 minutes a batch. (Return oil to 350°F between batches.)
