CRISP PARMESAN, OLIVE & SUNDRIED TOMATO POLENTA BITES
Make a batch of this easy polenta base at the weekend, then serve it as a pre-dinner snack. Leftovers can be baked or fried to have with eggs and spinach

Steps:
- Pour the stock into a large saucepan and bring to the boil. Add the polenta, and stir continuously over a medium heat for 3-4 mins until thickened and just coming away from the edges of the pan. Add the olives, tomatoes, oil and most of the parmesan, and stir for a further minute until well combined. Season.
- Spoon the polenta mixture onto a lined swiss roll tray or baking sheet. Place another sheet of baking parchment on top and roll out to 1cm thick, then remove the top sheet of parchment and scatter with the remaining parmesan. Leave the polenta to cool at room temperature for 1 hr to set. Alternatively, if you're making it ahead, leave to cool and chill for several hours or overnight.
- Once the polenta has set, heat the oven to 200C/180C fan/gas 6. Cut or stamp the polenta sheet into shapes of your choice, and arrange on a baking tray lined with parchment. Bake for 25-30 mins until golden brown and crisp, and serve warm. Will keep for up to a day in the fridge.

OLIVE, PEPPERONI & MOZZARELLA BITES

- Slice Mozzarella cheese into 1/2" x 1/2" cubes. Drain olives from liquid. Using a toothpick, skewer an olive and push 1/3 way up the toothpick. Fold a piece of pepperoni into half or quarters and skewer next. Finally skewer mozzarella. Do not push toothpick all the way through mozzarella, only half way through as you do not want guests poking themselves in the mouth with the toothpick. If making ahead of time, arrange on tray and cover with saran wrap so that it does not dry out. When serving, serve plain or with a drizzle of pizza sauce on platter.

- Heat oven to 350°F.
- Drain olives and finely chop them. In a medium bowl, mix olives, cream cheese and 3/4 cup of the Monterey Jack cheese. Place on a baking sheet.
- Spread about 1 Tbsp. olive mixture onto each bread slice. Top with a sprinkle of the remaining Monterey Jack cheese.
- Bake for 10 min.

OLIVE BITES
We used to eat fried olive bites at the State Fair of Texas but they got dropped due to the supplier not supplying them . I came up with my own version to satisfy our craving. Good as is but we like to dip in a creamy Greek dip. These can be made ahead and frozen. Allow to come to room temp approx 30 minutes before frying.

Steps:
- Mix cheeses and spices together till lump free.
- Add olives and gently mix till combined.
- Chill 30 minutes.
- Use a small cookie scoop and portion out filling. (100 disher).
- Drop into bread crumbs to coat and gently roll into balls.
- Place on baking sheet and freeze 20 minutes.
- Dip balls into beaten eggs a few at a time to coat.
- Use a fork to lift balls out of eggs and roll in bread crumbs.
- Freeze for 20 minutes.
- Repeat rolling in eggs and bread crumbs.
- Allow to dry for 15 minutes.
- Fry a few at a time at 350 till deeply browned.
- Drain on paper towels.

MINI CHEESE AND OLIVE WELSH RAREBIT BITES FOR FESTIVE FROLICS!
A delectable tangy topping of Cheddar cheese, chopped olives, sun-dried tomatoes with cherry tomatoes - melted on little toasted bread rounds! Perfect for all types of parties, buffets, nibbles, Hors D'oeuvres, starters and aperitif snacks! I make up my toasted bread rounds ahead of time and store them in an airtight tin; the cheese rarebit mixture can also be made ahead, you just need to spread it on top of the toasted bread rounds and then pop them in the oven for 5 to 8 minutes. Perfect, tasty and very elegant! I usually use green olives, as I prefer the flavour when mixed with the cheese and tomatoes - but you could use black olives if you wish. I also use pimento stuffed olives to great effect, I am sure that almond stuffed olives would also be wonderful. Try to use a good quality thick sliced loaf of bread for the toasted bread rounds - it makes such a difference to the finished taste. This recipe is easily doubled or trebled for larger gatherings!

- Stamp 12 x 2" rounds out of the sliced bread - the spare bread can be kept for fresh breadcrumbs.
- Pre-heat the oven to 230C/475F and line a baking tray with greasproof paper.
- Lay the bread rounds on the lined tray and bake for about 3 to 5 minutes or until a pale golden brown. Remove from the oven.
- Mix the grated cheese, chopped olives, chopped sun-dried tomatoes, mustard powder and mayonnaise together - season with salt and pepper to taste, remembering the olives are already quite salty!
- Spread the mixture over the top of the pre-toasted bread rounds and bake in the pre-heated oven for about 5 to 8 minutes, or until the mixture has melted and is bubbling.
- Take the mini rarebits out and place half a cherry tomato into the toppping of each round - put them back into the oven for about 1 to 2 minutes to soften the tomato, make sure they do not brown too much.
- Take them out of the oven and finish off by placing half an olive in the middle of each cherry tomato as a final garnish.
- Serve warm or at room temperature with cocktails, wine and other Hors D'oeuvres for festive feasts, frolics, parties or buffets!
- The toasted bread rounds can be stored for up to a week in an airtight tin, and the cheese rarebit mixture can be made ahead and stored for up to 3 days in the fridge.

- Preheat oven to 425 degrees. Toss parsnips with oil and season with salt on a rimmed baking sheet. Bake, tossing halfway through, until golden and tender, 25 to 30 minutes. Toss in chorizo, return to oven, and bake until chorizo is warmed through and releases orange oil, about 5 minutes more. Remove from oven and toss in olives. Serve on skewers.
OLIVE AND ANCHOVY BITES
Steps:
- Place the flour, butter, cheese, anchovies, olives and cayenne pepper in a food processor and pulse until the mixture forms a firm dough. Wrap the dough loosely in clear film. Chill for 20 minutes. Preheat the oven to 400 degrees. Roll out the dough thinly on a lightly floured surface. Cut the dough into 2in wide strips, then cut across each strip in alternate directions to make triangles. Transfer to baking sheets and bake for 8-10 minutes until golden. Cool on a wire rack. Sprinkle with sea salt. Variation: To add a little extra spice, dust the olive and anchovy bites lightly with cayenne pepper before baking.
OLIVE BITES
Steps:
- In a mixing bowl, combine the flour and butter until the mixture resembles bread crumbs. Mix in the Cheddar and Parmesan and knead lightly to combine. Form the mixture into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
- Unwrap the dough, take a small piece and cover an olive, making sure the pastry surrounds the olive and there are no gaps. Flour your hands and roll the olive-encased pastry into a ball; put it on an ungreased baking sheet. Repeat the process with the remaining pastry and olives. Chill in the refrigerator for at least 1 hour. (Can be made a day ahead and held in the refrigerator.)
- Preheat the oven to 425 degrees F. Put the baking sheets on the middle shelf of the oven and bake until the pastries are light golden, about 10 minutes. Remove the bites from the oven and arrange on a serving platter.
MUSHROOM AND RED PEPPER-BLACK OLIVE TAPENADE BITES

- Preheat the oven to 350°F.
- Toss the mushroom caps in a bowl with some salt, pepper, and a drizzle of EVOO. Arrange the mushrooms on a baking sheet in an even layer with the gill side up. Roast the mushrooms for 10 to 12 minutes, or until they are cooked through.
- While the mushrooms are roasting, prepare the red pepper-black olive tapenade. Place the roasted red peppers in a food processor with the parsley. Add the olives, capers, garlic, and lemon zest. Pulse the processor and grind into a paste.
- Once the mushrooms are done roasting, squeeze the juice of the lemon over them. Place about 1/2 tablespoon tapenade in each cap. Use 2 spoons for this: One is to scoop tapenade and the other is to push it off onto the mushroom. Place the mascarpone in a sealable plastic bag. Squeeze the cheese into one of the bottom corners, and with scissors snip 1/4 inch off of that corner. Squeeze a little mascarpone on top of each tapenade-filled mushroom. Serve hot or at room temperature.

Steps:
- Into food processor mix flour and butter, process until fine breadcrumbs.
- Next add cheeses and chilli, pulse briefly.
- Add olives, egg yolk and water.
- Pulse until mix forms large clumps which sticks together when pressed with fingers.
- Add a little more water if necessary.
- Roll out onto a floured surface into 2 logs.
- Wrap logs in glad wrap - place in fridge for 1 hour, as it is easier to slice.
- Cut into slices when required and bake at 180C, approx 10 minutes, until golden.
- Can freeze the logs.
CHEESY OLIVE BITES
Steps:
- Drain a jar of pimento-stuffed spanish olives. Pinch off piece of the dough log the size of the olive, flatten, and wrap around olive, rolling between palms to smooth. Put on a baking tray, and freeze. Bake at 350 degrees for 10-15 mins, dust with pimenton, and serve.
POLENTA OLIVE TAPENADE BITES RECIPE - (4.1/5)

- Lightly grease a square brownie pan with olive oil. Bring the vegetable broth to the boil, turn the heat down to a simmer and add the polenta. Whisk vigorously as it will thicken immediately. Keep whisking to remove any lumps. Once very thick, pour into the prepared pan and smooth out the top. Set aside to cool and then refrigerate for at least an hour until firm. Slice the polenta into small squares, brush with a little olive oil and place under the grill (broiler) for a few minutes until crisp. Top each square with a heaped teaspoon of tapenade and half a cherry tomato. Sprinkle with parsley and black pepper to serve.

I've had this recipe for years. It's so easy & tasty! If I remember correctly the original recipe called for black olives stuffed with cream cheese. I tweaked the original recipe to get it to where my hubby & I like it! We like it HOT!
