This is an old family recipe that my mom has cooked for 50 years. It's a wonderful, 'stick-to-the-ribs' meal that goes wonderful with warm cornbread or rolls. I find that kids love this when they don't like regular 'spicy' chili. Enjoy!

1 cup elbow macaroni
1 pound ground beef
1 small onion, chopped
1 cup chopped celery
½ large green bell pepper, chopped
1 (15 ounce) can kidney beans, drained
2 (10.75 ounce) cans condensed tomato soup
2 (14.5 ounce) cans diced tomatoes
⅛ cup brown sugar
salt and pepper to taste

Steps:

  • Bring a pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a small saucepan, simmer celery and green pepper with water to cover until tender; Drain.
  • Place ground beef in a large heavy skillet over medium heat. Cook until evenly brown. Add onion, and cook until tender and translucent. Drain excess fat. Add celery and green pepper. Stir in kidney beans, condensed tomato soup, diced tomatoes and brown sugar. Season with salt and pepper, and stir in macaroni.

2 cups uncooked elbow macaroni
4 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
¼ onion, minced
salt and pepper to taste
¼ pound processed cheese food
¼ pound shredded Cheddar cheese
¼ pound shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare the elbow macaroni according to package directions.
  • Meanwhile, melt the butter in a small saucepan over medium high heat. Stir in the flour until a cream colored paste forms. Then pour in the milk and stir constantly until this comes to a hard boil, then stir for 1 more minute. Remove from heat and set aside.
  • When the macaroni is cooked, spread 1/2 of it into the bottom of a lightly greased 9x13-inch baking dish. Then layer 1/2 of the grated onion, 1/2 of the salt and pepper and 1/2 of each of the cheeses. Repeat this one more time: macaroni, onion, salt and pepper and cheeses, and then pour the reserved white sauce over all. Top off with small pats of butter to taste.
  • Cover and bake at 350 degrees F (175 degrees C) for 45 minutes.

This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

1 ¾ pounds whole-wheat macaroni
¾ cup butter
¾ cup all-purpose flour
6 cups milk, divided
1 tablespoon Worcestershire sauce
1 teaspoon mustard powder
1 teaspoon onion powder
1 teaspoon cayenne pepper
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese, divided
3 (8 ounce) packages shredded American cheese
1 (8 ounce) bag potato chips (such as Lay's®), crushed
1 cup shredded Cheddar cheese
⅓ cup grated Parmesan cheese
butter-flavored cooking spray

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain.
  • Melt butter in a large pot over medium-low heat. Slowly add flour to butter, whisking constantly; cook until brown and the mixture no longer smells of flour, about 5 minutes. Pour 1 cup milk into the flour mixture, whisking continually until fully incorporated, about 45 seconds; repeat twice. Add remaining 3 cups milk to the mixture, whisking to incorporate. Stir Worcestershire sauce, mustard powder, onion powder, and cayenne pepper into the mixture; season with salt and black pepper.
  • Reduce heat to low. Cook sauce, whisking frequently, until it begins to thicken, about 10 minutes. Add about half the package of shredded Cheddar cheese; stir continually until the cheese melts completely. Repeat with remaining half package of Cheddar cheese and the American cheese, about 4 ounces at a time. Once cheese is entirely incorporated, remove sauce from heat.
  • Stir drained macaroni into the cheese sauce to coat. Divide macaroni between two 9x13-inch baking dishes.
  • Mix crushed potato chips, 1 cup shredded Cheddar cheese, and Parmesan cheese in a bowl. Top the macaroni with the potato chip mixture evenly. Spray the potato chip mixture with cooking spray.
  • Bake in preheated oven until the crust is golden brown and the sauce is bubbling, 35 to 45 minutes.

1 lb. box elbow macaroni, cooked al denta
16 oz. extra sharp cheddar cheese (store brand works fine)
1/2 gal. butter milk (or however needed for your particular dish so that the elbows are completely covered)
1 stick butter
1 teaspoon dry mustard
2 eggs beaten
pepper to taste

Steps:

  • 1. Boil elbows in highly salted water. Drain. While elbows are boiling, in large saucepan, heat butter and cheese until melted. Add 4 cups buttermilk, dry mustard and eggs. Heat until thoroughly melted and blended. Add to drained elbows. Stir together. Pepper to taste. Add more buttermilk to just the top of elbows. Put 4 or 5 slices of American Cheese on top. Bake uncovered in a 350 degree preheated oven for 55 minutes or until hot and bubbly.
  • 2. NOTE: Even if you hate buttermilk you will love this. The buttermilk just gives it that sharp pungent taste that you crave in macaroni and cheese dishes.

1 (16 ounce) box macaroni elbow macaroni
2 teaspoons salt
2 quarts water
4 eggs
3 1/2 cups milk
1 tablespoon sugar
1/4 teaspoon vinegar
1/4 teaspoon baking powder
1 teaspoon dry mustard
2 teaspoons cornstarch
4 tablespoons butter, melted
2 (12 ounce) packages cheese, shredded
1 (8 ounce) package cheese, shredded

Steps:

  • Cook macaroni noodles in salted water until just before being tender. (Noodles will continue to bake in dish.).
  • While noodles are cooking, beat eggs in a large bowl.
  • Add milk to eggs and stir in all other ingredients except the 8 ounces of cheese.
  • Combine drained noodles with egg mixture.
  • Pour into buttered 9 x 13 inch baking dish.
  • Begin baking at 450 degrees for 15 minutes. Then reduce heat to 375 degrees and bake 15 more minutes until becomes bubbly and slight brown at edges. Sprinkle 8 ounces of cheese on top and bake for last 5 minutes. Do not over bake. Remove from oven and let sit for 5 minutes.

1 can(s) evaporated milk (regular size - not small)
2 eggs, beaten
2 Tbsp butter
1 pkg elbow macaroni (1 pound)

OPTIONAL:
1/4 c finely crushed soda cracker crumbs or crumbs from toasted bread

Steps:

  • 1. Preheat oven to 350 degrees. Cook and drain macaroni. Heat milk, eggs, butter, and cheese in a small saucepan until cheese is melted. Stir together macaroni, cheese mixture and salt and pepper. Pour into a buttered casserole and bake for 20-30 minutes until just beginning to brown.
  • 2. Optional: Grandma often added some finely crushed soda crackers on top of casserole during the last 10 minutes of baking to give the dish a little crunch.

1 (14 oz.) can of evaporated milk
1 lb block of velveeta cheese, cut into 1 in-2 in cubes

  • 1. Boil the pasta as directed on the package. Drain the water but keep ¼ cup or so in the bottom of the pot. Add 1 stick of butter, the can of evaporated milk and the Velveeta cheese. Sprinkle in some salt and pepper. Heat the pot on medium until the cheese is completely melted and blended in. Remove from heat and allow to sit for about 5 minutes. Stir and serve. It will get thicker the longer it sits, enjoy!!

2 c elbow macaroni
3 Tbsp real butter
2-2 1/2 Tbsp flour (i prefer unbleached all purpose)
1/2 tsp garlic powder
salt and pepper to taste
1 tsp frank's red hot (or hot sauce of your choice but this is what i use)
2 1/2 c whole milk
8 oz yellow american cheese (1/2 pound block) from the deli counter
8 oz cracker barrel sharp cheddar or aged reserve cheese

Steps:

  • 1. Set the macaroni to boil in salted water. You know you have enough salt when the water tastes like the sea. Make sure not to over cook. While this is cooking, grate your cheeses. It's essential you grate your own cheese and not buy pre-grated in the package. Packaged shredded cheese has powered cellulose (that white residue on the cheese) to make it not stick to itself and it hinders proper melting. *Cold cheese is easier to grate so you may grate is straight from the fridge or pop it in the freezer 10 minutes before you start.
  • 2. When the pasta is cooked and drained, we will make the bechamel sauce. In a medium saucepan on medium heat, melt the butter along with some salt, black pepper, and garlic powder. Once melted, add the flour stirring until you get a thin paste. This is a roux (the thickening agent for the sauce).
  • 3. Put the tsp of hot sauce in your milk measure and slowly whisk the liquid into the roux. Once incorporated, begin adding the grated cheese by the handful. Stir your whisk in a figure eight motion making sure to scrape the bottom and sides of your pan. This helps the cheese melt and not become stringy.
  • 4. Once all the cheese in incorporated, you should have a beautiful cheese sauce. Put the macaroni into a 9X13 baking dish and pour the sauce over. Stir to distribute the sauce.
  • 5. Bake at 350F for 30 minutes

28 oz diced tomatoes with juice
2 c spicy v-8 juice
1 Tbsp chili powder
2 tsp oregano, dried
1 can(s) kidney beans, drained
1/8 c brown sugar, firmly packed
2 lb lean ground beef, browned
10 oz light fluffy wide egg noodles
1 chopped onion
1 stalk(s) celery plus 2 inside stalks with leaves
1 large green pepper
heaping tablespoon of fresh garlic

Steps:

  • 1. Boil your egg noodles and set aside. Bring all ingredients to a boil then simmer for 45 minutes with lid on. If u like it hot then add jalapeños in this mixture. Keep checking on this cuz everyone's stove works differently. Stir every 15 mins.
  • 2. When u have reached 45 mins. then carefully fold in your noodles. Leave lid off and warm noodles up at least 12-15 mins or so.
  • 3. Some of my family like to melt mozzarella cheese or some like sharp cheddar on top, its your choice.

  • Place set aside cheese over top.

  • Spray bottom of 9x13 pan with non-stick cooking spray. Cook macaroni per directions on box, drain.

  • Cook macaroni according to package directions; drain and set aside.
  • Melt butter in a medium saucepan over medium heat; blend in the flour, salt and pepper. Add milk gradually, stirring constantly until thickened and bubbly. Turn off heat.
  • Add onion (optional) and 1-1/2 cups of the cheese. Stir until cheese is melted.
  • Mix the cheese sauce with the drained macaroni in a separate large bowl until macaroni is completely coated with sauce. Turn mixture into a 2-qt. casserole dish which has been sprayed with cooking spray. Sprinkle remaining cheddar cheese over the top and bake in a preheated 350-degree oven, uncovered, for 45 minutes or until golden brown and bubbly.
  • NOTE: For a creamier dish, use half-and-half instead of milk.
