If strawberry doughnuts are your thing, then this cake is absolutely your thing. A classic, old-fashioned buttermilk cake with bits of berries strewn throughout, it manages to taste just like your favorite fried treat (without the frying, of course). Be sure to bake the cake all the way through; strawberries have a high water content and tend to make for a soggy cake if not baked properly. The top should be crackly, deeply and perfectly golden brown, and the edges should pull away from the sides of the pan.

1/2 cup/115 grams unsalted butter (1 stick), softened, plus more for pan
2 cups/255 grams all-purpose flour
2 teaspoons baking powder
3/4 teaspoon kosher salt
1/3 cup/70 grams granulated sugar
1/3 cup/75 grams light brown sugar
1 teaspoon vanilla extract
2 large eggs
3/4 cup/180 milliliters buttermilk
10 ounces/190 grams strawberries, hulled and sliced 1/4-inch thick
3 tablespoons demerara sugar, for sprinkling (you can use granulated sugar in a pinch)

Steps:

  • Heat oven to 350 degrees. Smear or brush a bit of butter onto the bottom of a 9-inch cake pan and line with parchment paper (either cut to fit the bottom, or leaving some hanging over the edges for easy removal).
  • Whisk flour, baking powder and salt together in a medium bowl.
  • In a stand mixer (or using an electric hand mixer and a large bowl), beat butter, granulated sugar, brown sugar and vanilla together on medium-high, periodically scraping down the sides of the bowl to make sure everything incorporates, until the mixture is pale, light, fluffy and creamy, about 5 minutes.
  • Add eggs, one at a time, beating to blend between additions. (This is a good time to scrape down the sides again.)
  • Reduce the mixer speed to low and carefully add half the flour mixture, followed by half the buttermilk. Repeat with remaining flour mixture and buttermilk, beating just until no large lumps remain.
  • Using a spatula, gently fold in half the strawberries and transfer the batter to the prepared cake pan. Scatter with remaining strawberries and sprinkle with demerara sugar.
  • Bake until cake is puffed, deeply golden brown on the top and pulling away at the sides, 45 to 50 minutes. (It should spring back slightly when pressed in the center and appear fully baked where the strawberries meet the cake.)
  • Let cake cool completely before removing it from the pan (either by inverting or lifting with the parchment lining). The cake can be baked up to three days ahead and stored tightly wrapped at room temperature, or refrigerated.

1 quart strawberries, sliced
1 cup white sugar
2 cups all-purpose flour
2 tablespoons white sugar
1 tablespoon baking powder
1 teaspoon salt
⅓ cup vegetable shortening
1 ½ cups milk
2 tablespoons butter, softened
1 cup whipped cream

Steps:

  • Mix strawberries and 1 cup sugar in a bowl and allow to stand while you complete remaining steps. Stir occasionally to help juice form.
  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch round baking pan.
  • Combine flour, 2 tablespoons sugar, baking powder, and salt in a bowl; cut in shortening with a knife or pastry blender until the mixture resembles coarse crumbs. Stir milk into crumb mixture until just blended; pour into prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes; cool in the pans for 10 minutes before removing shortcake.
  • Split shortcake into two layers; spread bottom layer with 2 tablespoons softened butter and top with strawberries and juice. Place top layer over strawberries. Serve with whipped cream.

2 tablespoons butter, melted
7 (1 ounce) slices day-old bread, torn into small pieces
¾ cup chopped fresh strawberries
3 eggs
1 ¼ cups milk
¾ cup light cream
¼ cup strawberry preserves
¾ cup white sugar, or to taste
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter the bottom and sides of an 8 inch square baking dish with the melted butter.
  • Toss bread with the chopped strawberries, and place into the prepared pan. Beat the eggs, milk, cream, strawberry preserves, sugar, and vanilla in a medium bowl until frothy. Pour over the bread and lightly press down with a spatula until the bread has absorbed the milk mixture.
  • Bake in the preheated oven for 40 to 45 minutes, or until the top springs back when lightly tapped.

6 cups sliced fresh strawberries
1/2 cup sugar
1 teaspoon vanilla extract
SHORTCAKE:
3 cups all-purpose flour
5 tablespoons sugar, divided
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup cold butter, cubed
1-1/4 cups buttermilk
2 tablespoons heavy whipping cream
TOPPING:
1-1/2 cups heavy whipping cream
2 tablespoons sugar
1/2 teaspoon vanilla extract

Steps:

  • Combine strawberries with sugar and vanilla; mash slightly. Let stand at least 30 minutes, tossing occasionally., Preheat oven to 400°. For shortcakes, whisk together flour, 4 tablespoons sugar, baking powder, baking soda and salt. Cut in butter until crumbly. Add buttermilk; stir just until combined (do not overmix). Drop batter by 1/3 cupfuls 2 in. apart onto an ungreased baking sheet. Brush with 2 tablespoons heavy cream; sprinkle with remaining 1 tablespoon sugar. Bake until golden, 18-20 minutes. Remove to wire racks to cool completely., For topping, beat heavy whipping cream until it begins to thicken. Add sugar and vanilla; beat until soft peaks form. To serve, cut shortcakes in half; top with strawberries and whipped cream.

3 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon allspice
1/2 cup granulated sugar
1/2 teaspoon salt
1/2 cup milk
1/3 cup melted shortening
1 egg, beaten
2/3 cup mashed fresh strawberries
1/2 cup chopped walnuts
1/3 cup raisins, soaked & drained

Steps:

  • Sift dry ingredients together in a large bowl.
  • Mix the milk, melted shortening and egg together and add to dry mixture.
  • Mix in strawberries, walnuts and drained raisins.
  • Pour into a greased 9"x5"x3" loaf pan.
  • Bake in preheated 350 degree F oven for 45 minutes or until tested done.
  • Remove pan from oven and cool on a wire rack, for 1 hour before cutting.

1 ½ cups rolled oats
2 cups white sugar
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 ½ cups vegetable oil
4 eggs
1 ¼ pounds fresh strawberries, sliced
¼ cup rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 7x3 inch loaf pans.
  • Stir together the flour, 1 1/2 cups rolled oats, sugar, cinnamon, baking powder, and salt in a large mixing bowl. In another bowl, whisk together the vegetable oil and eggs; stir into flour mixture until just moistened. Fold in strawberries. Pour into the prepared loaf pans, and sprinkle the tops with the remaining 1/4 cup of rolled oats.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool the strawberry bread in the pans for 5 minutes before cooling completely on a wire rack.
