1 cup shortening (such as Crisco®)
5 tablespoons whole milk

  • Preheat oven to 325 degrees F (165 degrees C). Grease two 9x5-inch loaf pans.
  • Combine sugar, flour, eggs, shortening, whole milk, vanilla extract, lemon extract, and baking powder in a large bowl; pour into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 30 minutes.

1 ½ cups shortening
3 cups white sugar
6 eggs
1 cup milk
3 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon vanilla extract
2 tablespoons lemon extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together the flour and salt. Set aside.
  • In a large bowl, cream together the shortening and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Beat in the vanilla and lemon extract. Pour batter into prepared pan.
  • Bake in the preheated oven for 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

1 1/2 teaspoons salt
1/2 teaspoon cinnamon
2 cups butter
2 1/4 cups sugar
1 1/2 teaspoons vanilla (or brandy extract)
9 eggs, slightly beaten
1 1/2 cups whipping cream
1/4 cup sugar
2 (8 ounce) packages cream cheese, softened
2 teaspoons lemon juice
1 lemon, zest of, chopped
1/2 cup sugar
1 1/2 teaspoons vanilla extract (or lemon)
4 -8 cups fresh raspberries
3/4 cup sugar
1 cup water (optional)
4 teaspoons baking cocoa
fresh berries

Steps:

  • Line bottoms & sides of three 8x4 loaf pans with parchment paper--do NOT grease; preheat oven to 325; place oven rack in lower position.
  • In a large bowl, mix pound cake dry ingredients; set aside.
  • In a large mixing bowl, beat butter and sugar until creamy & fluffy, scraping bowl several times; add flavorings, then eggs three at a time--continue beating (a curdled appearance will be "beaten" out with thorough mixing).
  • Now begin adding the flour in about half-cup portions, mixing well after each.
  • Turn batter into prepped pans, quickly pushing it higher around edges than in center (this will keep the top level).
  • Bake for 20 minutes, then increase oven temp to 350, bake 40 minutes longer (crack on top will be slightly browned--showing no moistness).
  • Cool for 5 minutes on cooling rack, then remove from pans to finish cooling--DO NOT REMOVE PAPER!
  • When cooled, wrap waxed paper around two of the loaves, and then plastic wrap & freeze. Slice the remaining loaf into 12-15 slices, then cubes; set aside.
  • WHIPPED CREAM LAYER: In a mixing bowl, beat cream with sugar until stiff peaks form; set aside.
  • CREAM CHEESE LAYER: In another bowl, beat cream cheese, lemon juice, vanilla and sugar. Add about 2 cups of the whipped cream and the lemon zest--fold in; set aside.
  • BERRY LAYER: Set aside one cup of berries for garnish. Sprinkle remaining berries with sugar, then lightly mash/crush them. Let them sit for about 30 minutes to get juicy---if you're short of time, add the water and this makes a nice juice too.
  • JUST IN CASE: Check berries for bugs and inch-worms! They will float to the top of the juices. (Sorry to gross you out! But so much better you pick them out ahead than have them "appear" in the dessert!).
  • ASSEMBLE THE TRIFLE: Sprinkle a layer of pound cake cubes in the bottom of a 3-quart glass serving bowl.
  • Drizzle 3-4 tablespoons of berry juice over the cubes.
  • Spread one fourth of cream cheese mixture over the cake cubes.
  • Sprinkle one teaspoon of cocoa over this, then some crushed berries.
  • REPEAT this twice. Add about half of the reserved berries to the last layer.
  • Top with remaining cream cheese, whipped cream and sifted cocoa; remaining berries added as a garnish before serving.
  • Cover & refrigerate for about 3 hours, altho' this is ready-to-eat now (taste really does improve!).

⅛ teaspoon salt
¼ teaspoon ground nutmeg
2 cups butter, room temperature
2 ¾ cups white sugar
6 eggs, room temperature
½ cup milk, room temperature

3 cups fresh raspberries
¼ cup white sugar
1 teaspoon creme de cassis liqueur

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch tube pan.
  • Sift together the flour, salt and nutmeg. Set aside.
  • Beat the butter at medium speed with an electric mixer for about 2 minutes or until soft and creamy. Gradually add 2 3/4 cups sugar, beating at medium speed for 5 to 7 minutes. The mixture should be noticeably lighter in color. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in the vanilla with the last egg. Pour in the flour mixture alternately with the milk, mixing until just incorporated.
  • Pour the batter into the prepared pan. Bake in the preheated oven until a wooden toothpick inserted in center comes out clean, about 1 hour and 15 minutes. Cool in pan on wire rack for 10 to 15 minutes; remove from pan and let cool completely on wire rack.
  • For the raspberry sauce: combine raspberries, 1/4 cup sugar, and 1 teaspoon creme de cassis in a medium bowl. Stir gently until sugar dissolves; cover and chill at least 3 hours. Serve over pound cake.

2 cups (4 sticks) unsalted butter, softened, plus more for greasing the pans
3 cups sugar
8 large eggs, room temperature
Zest and juice of 1 clementine
4 teaspoons pure vanilla extract
4 cups all-purpose flour, plus more for dusting the pans
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup whole milk, room temperature
1 cup confectioners' sugar
Juice of 2 clementines
Zest of 1 clementine

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Adjust the oven rack to the center of the oven. Grease two loaf pans with butter and dust with flour.
  • Add the butter and sugar to the bowl of a stand mixer. Using the paddle attachment, beat until light and fluffy, stopping once or twice to scrap down the sides of the bowl with a rubber spatula, about 5 minutes. Add the eggs, one at a time, beating well after each addition; then add the clementine juice and zest and the vanilla.
  • In a medium bowl, whisk together the flour, baking powder, salt and cinnamon to get rid of any lumps. Add the flour to the mixer in two additions, alternating with the milk, and mixing until combined.

Straight-to-it, no nonsense, Southern lemon poundcake! A variation from the Fish Family Cookbook, out of South Carolina. You can make this any old way you want, you can substitute some vanilla for the lemon zest, and add anything you want. Cherries, pineapple, coconut, chocolate chips, blueberries, orange zest, just about anything! I like to make a simple glaze for this with 1.5 cups icing sugar, 1 tsp lemon zest, and 1/4 cup lemonade, but you could also use milk or water.

2 c sugar
7 large eggs, room temperature
2 tsp vanilla extract
1/4 tsp salt
3 c all purpose flour, sifted

2 to 4 Tbsp cocoa, unsweetened
CHOCOLATE GLAZE
2 Tbsp butter, salted
2 to 4 Tbsp cocoa, unsweetened
3 to 4 drops vanilla extract
1 pinch salt
3 to 4 Tbsp whole milk or half and half
1 1/2 c confectioners' sugar

Steps:

  • 1. Preheat oven to 325 degrees. Grease and flour a tube or bundt cake pan, set aside.
  • 2. Cream softened butter and gradually add sugar. Cream until light and fluffy. Mix in vanilla and salt. Add eggs one at a time, beating after each addition.
  • 3. Sift flour, then measure for accuracy and then sift again. Add flour alternately with buttermilk, mixing after each addition (DO NOT OVER MIX)
  • 4. Remove about 1/3 of batter and put in a small mixing bowl. Add cocoa and mix with spoon or spatula. DO NOT USE MIXER. Note: If you like a darker chocolate, use 4 tablespoons, but if you prefer more of a milk chocolate, use only 2 tablespoons.
  • 5. Add half of the yellow cake batter into the tube pan, no need to smooth out yet. Spoon all of the chocolate mixture on top of the yellow. Spoon on the remaining yellow batter on top of the chocolate batter. Lightly swirl with a knife and then gently smooth out the top.
  • 6. Bake for 45 to 55 minutes (my oven took 55) or until cake tests done. Remove from oven and cool in pan for about 10 minutes. Remove from pan and wrap in plastic wrap and cool completely. Transfer to serving plate.
  • 7. CHOCOLATE GLAZE: Melt butter on medium heat in a heavy saucepan. When butter is melted, whisk in cocoa, vanilla and salt. Add confectioner's sugar and milk, mixing well. You may add more milk, if necessary. Pour glaze over cooled cake and allow to set for a few minutes. Enjoy!

  • Mix cooking oil (Crisco works best), sugar, margarine(Can't believe it's not butter works best), eggs, vanilla and lemon flavoring together in a large mixing bowl with mixer on medium speed. Tip: when adding eggs, add two then mix, add two more then mix, add last one and mix.
  • In separate bowl, mix flour and baking powder together and set aside (can use whisk to mix).
  • Slowly add flour/baking powder mixture in with the wet mixture. Tip: Add a little flour mixture and a little milk, repeat until all milk and flour mix has been added. This helps to keep batter texture thick and smooth.
  • Spray (Baker's Joy works best) or batter bunt/tube pan thoroughly.
  • Pour batter mixture in bunt/tube pan. Place in preheated oven and bake for 1 hour and 15 minutes.
  • Cake is done when cake tester comes out clean.

I know there are a ton of pound cake recipes out there but this one is truly special to me. Not only was it the first one I ever made, but it's the richest moistest "plain" poundcake I've ever made.. I have made it as a dessert for holiday get togethers and even people who claimed they didn't like pound cake had second helpings...

3 stick butter
2 c granulated sugar
2 3/4 c all purpose flour
8 eggs
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla or lemon extract

Steps:

  • 1. Preheat oven to 350*F grease and flour a tube, bundt, or loaf pan * I prefer bundt - it lets me know where to make the slices LOL
  • 2. cream butter, then add sugar gradually and beat together till light and fluffy. Then add eggs one at a time, making sure to beat well after each egg
  • 3. sift flour, measure again, then add salt and baking powder and sift again. Add the dry ingredients to the wet ingredients and then add the flavoring.
  • 4. Beat mixture well. * It's ready when you can drop a little of the batter into a bowl of water and it floats * then pour into your cake pan and bake for 1 hour.
  • 5. * note * if you prefer to use cake flour, just sub 3 cups of cake flour for the 2 3/4 cup of all purpose.

1 cup butter
6 eggs
3 cups white sugar
3 cups white flour
1 pint heavy whipping cream
2 tablespoons vanilla

Steps:

  • Preheat your oven to 350 degrees. Grease and flour a loaf pan (9"X3"). With an electric mixer, cream butter, sugar and eggs until fluffy. Add the flour one half cup at a time along with a little cream and keep on mixing until you have incorporated all of the flour. Now add the vanilla. Mix. Pour into your prepared loaf pan. Bake for 50 minutes or until the cake has risen, has a golden crust and when you check it with a toothpick, the pick comes out clean. If you have moist batter stuck to the toothpick you need to bake it a bit longer. Add 5 minutes and check again.
  • Let the cake cool standing upright in the pan for 15 minutes. Then turn the pan on its side and gently tip it to coax the cake out. Then stand the cake back upright and let it cool completely.

1 c butter, softened
1/2 c shortening
3 c all purpose flour
5 eggs
3 c sugar
1 tsp baking powder
1 c buttermilk
1 tsp vanilla extract
1 tsp lemon extract

Steps:

  • 1. Cream butter and shortening until smooth. Add sugar and mix. Add eggs one at a time and beat well.
  • 2. Add flour and baking powder alternately with buttermilk. Mix well. Add extracts, and mix well.
  • 3. Pour into greased and floured large (10 inch) tube pan. Bake at 350F for approximately 1 hour and 15 minutes or until done. Cool in pan for 30 minutes before removing from pan to cool completely. Dust wit powdered sugar, if desired.

2 cups butter softened
2 cups sugar
10 whole eggs
2 tbsp cognac or brandy
4 cups flour sifted
¼ teasp salt
1 teasp baking powder
1 teasp mace

Steps:

  • Beat butter until light. Add sugar and beat again until very light and fluffy. Beat eggs until light and add slowly to the butter, beating thoroughly and as lightly as you can after each addition. Add flavorings. Mix salt, mace, baking powder with the flour. Fold, a cup at a time, into the butter mixture. Do this thoroughly, but lightly, so that flour is well incorporated. Pour mixture into a well-buttered and lightly floured bundt pan or Turk's head mold. Put into a cold oven, then bring to 325. Bake for 1 1/2 hours or until the cake is golden brown and has shrunk slightly from the side of the pan. It should test done when a knife blade comes out clean. It will have a cracked top surface. Let cake stand to cool for ten minutes, then remove from pan to cake rack. When serving, dust lightly all over with powdered sugar. Cut into thin slices. This cake may be wrapped in a cloth lightly moistened with brandy. It keeps for weeks in the refrigerator.
