I love oatmeal raisin cookies so I was really excited when I found this recipe on the UKTV Food website! It makes really thick, crispy waffles which taste great with maple syrup. I've also made them with cinnamon instead of the lemon and they came out really well, and also made with flavoured oatmeal (I used Quakers maple and brown sugar).

1 cup plain flour
1/2 cup oatmeal
1 tablespoon sugar
1 teaspoon baking powder
1 pinch salt
2/3 cup raisins or 2/3 cup sultana
1 lemon, zest of, grated
1 egg
1/2-2/3 cup milk
1 1/2 tablespoons butter, melted

Steps:

  • In a large mixing bowl, combine the plain flour, oatmeal, sugar, baking powder and salt and stir briefly. Add the raisins and lemon zest and stir until evenly combined.
  • Make a well in the centre of the dry ingredients and break the egg into the centre. Stir to gradually incorporate the egg into the flour mixture, then add the milk a little at a time, stirring after each addition, to give a well-blended batter. Set aside for 20 minutes.
  • When ready to proceed, heat the waffle maker and grease with oil spray or butter as desired. Add the melted butter to the batter and stir to combine.
  • Ladle a quarter of the mixture onto the hotplates of the waffle maker (use less if you have a small stovetop waffle iron). Ensure the batter is evenly distributed then press the sides of the waffle maker together and clamp shut. Cook for 3-5 minutes, depending on whether you like your waffles slightly soft or crisp and honey-brown.
  • Serve immediately, dusted with a little sugar if desired, or keep the cooked waffle warm in a low oven while you toast the remainder.

1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons double-acting baking powder
1/4 teaspoon salt
1 large egg
2 tablespoons unsalted butter, melted, plus additional melted butter as an accompaniment
1/3 cup raisins
1 1/2 teaspoons cinnamon
vegetable oil for brushing the waffle iron
maple syrup as an accompaniment

Steps:

  • In a small bowl whisk together the flour, the sugar, the baking powder, and the salt. In a bowl whisk together the egg, 2 tablespoons of the butter, 1/2 cup water, the raisins, and the cinnamon, add the flour mixture, and stir the batter until it is just combined. Heat a waffle iron until it is hot, brush it with the oil, and pour half the batter onto it. Cook the waffle according to the manufacturer's instructions, transfer it to a baking sheet, and keep it warm, uncovered, in a warm oven. Make another waffle with the remaining batter in the same manner. Serve the waffles with the syrup and the additional butter.

1-1/2 cups all-purpose flour
1 cup quick-cooking oats
3 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 large eggs, lightly beaten, room temperature
1-1/2 cups whole milk
6 tablespoons butter, melted
2 tablespoons brown sugar
Assorted fresh fruit and yogurt of your choice

Steps:

  • In a large bowl, combine flour, oats, baking powder, cinnamon and salt; set aside. In a small bowl, whisk eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. , Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly. Bake according to manufacturer's directions; do not open during baking. Use fork to remove baked waffle. Top with fresh fruit and yogurt.
