Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets.
- Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

- Heat oven to 375. Lightly grease cookie sheets. In a large bowl combine sugar, shortening, butter, water, egg and vanilla. Beat medium speed. Add oats, flour, coconut, baking soda, cinnamon and salt, beat at low speed until soft dough forms. Stir in raisins and walnuts. Drop by heaping tablespoon 2 inches apart on prepared cookie sheet. Bake 8 to 10 minutes or until golden brown. Cool completely before storing. Can be frozen also.
- I stress Sun Maid Baking Raisins because they are especially moist if you can't find them then I soak golden raisins in warm water. The baking raisins make a difference in the moisture.

It's important to use plenty of raisins for this recipe, use more if you like. I really enjoy the texture of these cookies; their especially good with a glass of milk.

Steps:
- Preheat oven to 300°F.
- Place the butter, brown sugar, and granulated sugar in a work bowl; beat with an electric mixer on medium speed until the mixture is fluffy.
- Turn the speed to low and add the egg and almond extract, beat until well combined.
- In another bowl, sift together the flour, baking soda and salt; add it to the butter mixture and beat until mixed.
- Add the oatmeal and raisins and mix .
- Grease a cookie sheet, or use a non-stick spray.
- With a 2 tablespoon measure, drop the cookie dough onto the cookie sheet in dollops about 3 inches apart.
- Gently press down on the dough with the back of a spoon to spread out into 2-inch circles.
- Bake for about 20 minutes or until cookies are browned around the edges.

Steps:
- Preheat oven to 350°.
- Whisk dry ingredients; set aside.
- Combine wet ingredients with a hand mixer on low.
- To cream, increase speed to high and beat until fluffy and the color lightens.
- Stir the flour mixture into the creamed mixture until no flour is visible.
- (Over mixing develops the gluten, making a tough cookie.) Now add the oats and raisins; stir to incorporate.
- Fill a #40 cookie scoop and press against side of bowl, pulling up to level dough (to measure 2 tablespoons of dough).
- Drop 2-inches apart onto baking sheet sprayed with nonstick spray.
- Bake 11-13 minutes (on center rack), until golden, but still moist beneath cracks on top.
- Remove from oven; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.

- Mix unsweetened applesauce (or mashed avocado, mashed banana, olive oil), maple syrup, egg, and vanilla extract.
- Add in flour, cinnamon, and salt. Mix until combined.
- Fold in old-fashioned rolled oats and raisins until mixed.
- Scoop mix onto a oil sprayed baking tray.
- Bake for 12-15 minutes.
